Who says you can't have your favorite comfort food. You just have to learn to use the low fat ingredients and you can enjoy just about anything!!This is such a delicious comfort meal!! I usually serve it over some brown rice.

2 cans 98% fat free cream of chicken soup
1-8 oz reduced fat sour cream
1.5ish lb of chicken breast
1 sleeve of whole wheat ritz crackers
3 T of margarine like spread 40% fat melted
2 T poppy seeds

Steps:

  • Boil your chicken w/ a bit of salt and pepper and poultry seasoning for 15-20 minutes.
  • Cut chicken into bite size pieces or shred.
  • In a baggie crush the crackers and pour the melted margarine and shake up to mix it.
  • Combine chicken, sour cream, and soups. Pour into greased 9x13 casserole dish.
  • Sprinkle the crushed crackers all over the top.
  • Sprinkle poppy seeds on top of crackers.
  • Bake 350 for approx. 20-30 minutes or until bubbly.
  • Makes approx. 6 1 cup servings.

3 cups cubed cooked chicken breast
2 cans (10-3/4 ounces each) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
1 cup reduced-fat sour cream
2 teaspoons poppy seeds
1 cup crushed reduced-fat butter-flavored crackers (about 25 crackers)
3 tablespoons reduced-fat butter, melted
1/3 cup grated Parmesan cheese

Steps:

  • Preheat oven to 350°. In a large bowl, combine chicken, soup, sour cream and poppy seeds. In a small bowl, combine cracker crumbs and butter; set aside 1/2 cup for topping. Stir remaining crumbs into chicken mixture., Transfer to an 11x7-in. baking dish coated with cooking spray. Top with reserved crumbs; sprinkle with cheese. Bake, uncovered, 30-35 minutes or until bubbly.

A yummy, creamy chicken casserole which can turn into an elegant dish when the chicken breasts are left whole. For a variation, use boneless chicken breasts, but do not dice them. Pour the soup mixture over all, but sprinkle the cracker and seed combination over the breasts only and bake as usual.

6 skinless, boneless chicken breast halves - diced
1 (10.75 ounce) can condensed cream of chicken soup
1 (8 ounce) container sour cream
2 tablespoons dry sherry
salt and pepper to taste
8 ounces buttery round crackers, crushed
1 ½ tablespoons poppy seeds
½ cup butter, melted

Steps:

  • Preheat to 350 degrees F (175 degrees C).
  • Place the diced chicken breasts on the bottom of a 9x13 inch baking dish sprayed with a nonstick cooking spray. In a bowl combine the soup, sour cream and sherry. Pour or spoon mixture over the chicken. Sprinkle salt and pepper on top.
  • Mix the poppy seeds and crushed crackers and sprinkle mixture over the chicken, salt and pepper. Drizzle the melted butter or margarine over the cracker/poppyseed layer and bake covered in the preheated oven for 30 to 45 minutes (take cover off for the last 5 minutes). Let stand a few minutes before servings.

4 skinless, boneless chicken breast halves
½ cup butter, melted
1 sleeve buttery round crackers (such as Ritz®), crushed
1 teaspoon poppy seeds, or more if desired
1 (8 ounce) container sour cream
1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded Cheddar cheese

Steps:

  • Place the chicken breasts into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium, cover, and simmer until the chicken breasts are no longer pink in the center, about 20 minutes. Drain the water, then shred the chicken.
  • Preheat an oven to 350 degrees F (175 degrees C). Combine the butter, crackers, and poppy seeds in a bowl; set aside.
  • Blend the sour cream and cream of chicken soup in a bowl; pour half of the soup mixture into a 9x9-inch baking dish. Add the shredded chicken, then pour the remaining half of the soup mixture on top. Sprinkle with Cheddar cheese, then top with the cracker mixture.
  • Bake in the preheated oven until cheese has melted and the sauce is bubbly, 25 to 30 minutes.
