GRANDMA T'S PINEAPPLE CREAM PIE
My Dad's mom would make this for him every time we visited Illinois. As a child, I could hardly wait for the filling to cool enough to eat. The secret is to stir constantly for a rich, velvety smooth pudding-like melt-in-your-mouth experience. These instructions are per my grandmother, written down by my mother not too long before Grandma passed away. Grandma wouldn't give the recipe away until her last years. It's a family treasure now! Top the pie with meringue, whipped cream, or whipped topping.

Steps:
- Whisk sugar, flour, and salt together in a saucepan over medium heat. Add milk and cook, whisking constantly, until mixture thickens and begins to bubble, 3 to 5 minutes. Remove from heat.
- Stir pineapple, egg yolks, and butter into milk mixture. Return to heat and cook over medium heat until mixture begins to bubble, 3 to 5 minutes. Continue cooking, stirring constantly, until hot and thick, about 2 minutes more. Pour mixture into prepared pie crust. Refrigerate until chilled, at least 3 hours.

- Line a 9-in. deep-dish pie plate with pastry; trim and flute edges. Line unpricked pastry with a double thickness of heavy-duty foil. Bake at 450° for 8 minutes. Remove foil; bake 5-7 minutes longer or until lightly browned. Cool on a wire rack., In a small saucepan, combine the sugar, cornstarch and salt. Stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Remove from the heat. Stir a small amount of hot mixture into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes. Remove from the heat; stir in butter and vanilla. Transfer to prepared pastry., For pineapple layer, in a small saucepan, combine sugar and cornstarch. Stir in water until smooth. Add pineapple. Bring to a boil over medium-high heat; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in butter. Gently spread over cream mixture., For meringue, in a large bowl, beat the egg whites, vanilla and cream of tartar on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff peaks form. Spread over hot filling, sealing edges to crust., Bake at 350° for 15 minutes or until golden brown. Cool on a wire rack for 1 hour; refrigerate for 1-2 hours before serving.

This was recently given to me by a friend who is also diabetic. I really enjoyed this more than I thought I would so I thought I would share it with you. It does have to be chilled overnight before serving.

Steps:
- In a large bowl, mix whipped topping mix, milk and 1/2 teaspoon vanilla extract.
- Add Splenda and beat with an electric mixer on low speed until blended.
- Beat on high speed for 4 minutes or until topping thickens and forms peaks.
- Set aside.
- In a separate bowl, mix crushed pineapple (including juice) with pudding mix, sour cream, 1 teaspoon vanilla and 1 teaspoon rum extract.
- Gradually add whipped topping mixture into pineapple mixture, folding gently to incorporate.
- Spoon pie filling into prepared reduced-fat graham cracker crust.
- Cover and chill overnight before serving.
- Note: Using whipped topping mix rather than prepared, fat-free, non-dairy whipped topping will ensure a better texture and will allow the pie to better maintain its shape.

I am honoring Cafeteria's today..they fed us all well for many years. Now most alllll are gone. I miss them. Here is another pie recipe from the cafeteria recipes..from Furr's this time. I HAVE REVAMPED THIS RECIPE SO THAT "THOSE OF US WITH DIABETES" CAN ALSO HAVE SOME. I ADDED A RECIPE TO MAKE 'HOMEMADE POWDERED SUGAR' FOR US WHO HAVE DIABETES CAN USE IT TO DUST ON DESSERTS OR MAKE FROSTINGS (there is also a frosting recipe at the bottom).

- Cream 2 cups powdered sugar and butter with electric mixer until fluffy (be SURE to do this step first).
- Add eggs, salt and vanilla. Beat until light and fluffy.
- Spread mixture evenly into baked pie crusts, then chill.
- Whip heavy cream until stiff. Blend in powdered sugar. Then fold in pineapple and pecans.
- Spread mixture on top of chilled filling; and chill thoroughly before serving.
- NOTE: This pie is sweet and not for diabetics. But if you make your own powdered sugar by grinding Splenda into a powder, you can eat some too.
- TIP For Diabetics: *To make your homemade powdered sugar from Splenda...take 1 cup Splenda and 2 tablespoons cornstarch, using a clean coffee grinder (or a blender) place both ingredients in the cup, placeing the lid on and pulse into a powder form. This can be used for dusting cakes, cupcakes...etc. You can also make a frosting with it.
- Frosting made with Homemade Powdered Sugar: 8 ounces low-fat cream cheese 1 teaspoon vanilla 1/4 cup light butter Beat 8 oz of cream cheese with the butter. Mix in vanilla and 1/2 cup of the home made powdered sugar (taste it as you go).
LOW-FAT VEGAN PINEAPPLE PIE
Really, really delicious pie filled with pineapple cream. Low in sugars and vegan. Cream can be made days ahead and kept in refrigerator.

- First make the cream. In the food processor or with the immersion mixer bled chopped pineapple, yogurt and cornstarch. I dont add sugar because the pineapple is sweet enough to my taste, but if you like pies to be sweeter, you can add 150 gr superfine white sugar.
- Once it's creamy, transfer into a deep saucepan and heat over medium heat. Cook stirring constantly until it's well thickened, about 5 minutes. Set aside.
- Turn on the oven to 180°C.
- In a large mixing bowl combine flour with the baking powder and sugar. Stir. Make a well in the center and add juice and oil. Quickly knead with your hands to form soft dough.
- Cut 1/3 piece from the dough and set aside.
- Place the bigger part of dough onto a baking paper and roll into 1/2 inch thin crust. Place it into a round baking pan and cover evenly the sides of the pan.
- Pit the bottom of the pie crust with a fork.
- Fill with the thick pineapple cream.
- Roll the remaining 1/3 part of dough into a 1/2 inch thin crust, then place it onto the cream to close the pie.
- Close evenly the edges of the pie crust.
- With a knife cut four long lines on the top of the pie.
- Brush lightly with 1 tbsp of soy yogurt.
- Bake in the preheated oven about 40-45 minutes, or until well browned on top.
- Allow to cool comleteley, then slice in triangles and serve.
- Usually, I make these pies the evening before and serve the next morning for breakfast.
QUICK SUGAR FREE PINEAPPLE PIE
Steps:
- Empty pineapple, juice and all, into medium sized bowl. Mix with vanilla pudding. Fold in sour cream and Cool Whip.
- Pour in graham crust.
- Chill in fridge if desired.
