- Gather the ingredients.
- In a large saucepan, mix the sugar, cornstarch, and salt. Gradually blend in the soy milk, stirring constantly to avoid lumps.
- Cook the mixture over low heat, stirring constantly until thickened.
- Cook for an additional 2 to 3 minutes, stirring occasionally.
- Remove the pudding from the heat and add the vanilla. Let cool for 10 minutes, stirring now and then.
- Pour the pudding into one large serving dish or individual serving dishes and chill until firm, about 2 to 3 hours.

I love the way vanilla beans add so much flavor and this is the case with this vegan pudding. The little black seeds scraped from a vanilla bean add not only taste but a nice visual appeal.

Steps:
- Combine 1/4 cup almond milk and cornstarch in a small bowl and stir until completely blended.
- Heat remaining 1 cup almond milk and agave nectar in a saucepan over medium-low heat until mixture barely starts to boil. Stir in cornstarch mixture. Continue cooking and stirring at a slow boil until thickened, 7 to 9 minutes. Remove from heat and stir in vanilla seeds and coconut oil.
- Pour into two pudding dishes and refrigerate, 8 hours to overnight. Serve topped with vegan whipped cream.

- Combine first 3 ingredients in a saucepan.
- Combine milk and egg in a bowl.
- Gradually add milk mixture to sugar mixture, stirring constantly.
- Cook over medium heat until thick and bubbly, stirring constantly. Cook for one additional minute after bubbling starts, stirring constantly.
- Remove pan from heat; stir in vanilla.
- Serve warm, or place plastic wrap on surface; cool to room temperature.
- Chill thoroughly.
