LOW SODIUM MINI-MEATBALLS AND SAUCE FOR KIDS



Low Sodium Mini-Meatballs and Sauce for Kids image

My son's going through a meatball phase, but I don't like all the salt and corn syrup in the canned kind. This sauce is no-salt-added, and has a touch of cane sugar to help the taste. I boil the meatballs in salt-free homemade chicken stock, but you can use plain water, too. Tasty for adults, too! Just edit spices as needed, too. I put minimum amounts for small children.

1 lb ground turkey
2 eggs
1 cup quick oats
1 -2 tablespoon dried onion flakes
1/2-1 teaspoon dried oregano
1/2 teaspoon basil
1/2 teaspoon garlic powder
1 quart no-salt-added chicken broth
water
1 (6 ounce) can no-added-salt tomato paste
1 cup water
1 tablespoon evaporated cane juice
1 -2 tablespoon grated parmesan cheese
1 teaspoon oregano
1 teaspoon onion powder
1/2 teaspoon garlic powder
1 pinch dried parsley
1 teaspoon dried basil

Steps:

  • Process oatmeal until coarse powder (like dried breadcrumbs).
  • Remove from processor.
  • Place turkey, eggs, onion, spices and ground oatmeal into processor, and with metal blade, process until blended.
  • Mixture should be firm enough to roll into balls.
  • In a large saucepan, bring broth to simmer. Add water as needed to accommodate all meatballs.
  • Roll meat into small balls (1 inch in diameter) and drop into broth, and cook for 10 minutes or until done.
  • For sauce, mix tomato paste and water with a whisk until blended.
  • Add all other ingredients and mix.
  • Heat through, and serve with meatballs and pasta.

This is a low fat and low sodium recipe great for kids. I use this at the local canteen and it is very well received!

500 g vanilla cake mix
3/4 cup low-fat milk
1 egg
50 g icing sugar
2 tablespoons cocoa (optional)
5 drops food coloring
2 tablespoons low-fat milk

Steps:

  • Mix together the vanilla cake mix, 3/4 cup low fat milk and 1 egg -- use a beater for at least 2 minutes until very well combined.
  • Grease a mini muffin pan (12) and bake for 10 minutes at 170°C fan forced, or until when touched, they spring back!
  • Turn out onto a cooking rack.
  • Mix together icing with 1-2 table spoons of low fat milk.
  • Add a few drops of food colouring to the icing if you would loke a particular colour on the cakes.
  • Ice each one with 1/2 teaspoon of icing and sprinkle a couple of decorative hundreds and thousands on top.
  • The kids will love them!
