1 (8 ounce) can hunt tomato sauce
1 teaspoon prepared yellow mustard
2 tablespoons pourable Splenda sugar substitute or 2 tablespoons Sugar Twin
1 teaspoon Worcestershire sauce
3 (16 ounce) cans great northern beans, rinsed and drained
1 cup finely chopped onion
6 tablespoons hormel bacon bits

Steps:

  • Spray a slow cooker container with butter-flavored cooking spray.
  • In prepared container, combine tomato sauce, mustard, Splenda and Worcestershire sauce.
  • Stir in great northern beans.
  • Add onion and bacon bits.
  • Mix well to combine.
  • Cover and cook on low for 6 to 8 hours.
  • Mix well before serving.
  • HE: 2-1/2 protein, 1 vegetable, 1/4 slider, 5 optional calories Diabetic: 2 meat, 1 vegetable, 1 starch.

Baked beans are one of my favorite things. I'm from the South & most baked beans here use canned pork & beans. One of the main ingredients in pork & beans is high fructose corn syrup (HFCS). 1 large onion, chopped
5-7 slice bacon, chopped
2 can(s) pinto beans (16 oz) or navy beans
3 Tbsp yellow mustard
1/4 c ketchup (no hfcs, i use hunts)
1 tsp lea & perrin's worcestershire sauce (no hfcs)
1/4 c honey
1/4 c coconut sugar

Steps:

  • 1. Saute bacon and onion in a skillet with a little olive oil until onion is tender.
  • 2. Drain the liquid from one can of beans, but use the liquid in the other can. In a large bowl, mix all ingredients together including bacon and onion.
  • 3. Place in square casserole dish and bake at 350 degrees or until hot and bubbly.
  • 4. NOTE: Before putting in casserole dish, taste to see if any of the ingredients need to be adjusted. If you like it sweeter add more honey or sugar. If you like it spicier, add a little cayenne pepper or hot sauce. I know that bacon is not considered "clean", but it does not create inflammation & pain in my body like HFCS does.

  • Place beans in a large bowl, so that the beans take only half of available space. Fill the bowl with water right to the top and leave to sit for 12h or overnight. The beans will absorb a lot of water and increase in volume significantly.
  • When beans are nice, plumped up and soaked, drain the soaking water and rinse your beans well under the running, cold water. Drain the water and place the beans in your slow cooker.
  • In a large pan, cook onions and garlic together on a medium-low heat for about 15 minutes, until onions begin to brown. Stir in celery, sausage or bacon and cook it all together for further 15-20 min. Stir cumin in and cook for another 3 minutes, so it becomes aromatic.
  • Transfer everything to a slow cooker, top up with the remaining baked beans ingredients and give it all a good mix. Cover with a lid and cook for: 7h on High setting or 10h on Low setting, ideally without removing the lid off throughout the cooking process.
