CLASSIC TORTILLA SOUP

- For the soup: Heat a heavy saute pan over medium-high heat. Cook the garlic, tomatoes, onion and New Mexico chile in the pan. Using tongs, turn the vegetables occasionally during cooking to ensure charring on all sides. Remove the vegetables once slightly blackened on all sides, about 10 minutes. Remove the peel from the garlic. Add the charred vegetables to the blender with the tortilla pieces and 2 cups chicken broth. Blend until smooth. Pour the mixture into a large saucepan and add the remaining 4 cups chicken broth. Bring the mixture to a boil; reduce the heat and simmer, about 20 minutes. Sprinkle with salt and pepper.
- For the tortilla strips: In a medium, heavy skillet, pour enough oil to reach a depth of 1/2 inch. Heat over medium-high heat until very hot but not smoking. Add the tortilla strips in batches and fry until golden and crisp, about 2 minutes. Remove with a slotted spoon and drain on paper towels. Set aside.
- To serve: Ladle the soup into 6 individual serving bowls. Serve with sour cream, avocados, cheese, tortilla strips, cilantro and lime wedges on the side.

- Heat vegetable oil in a large stock pot over medium heat. Add onion and garlic; cook and stir until brown and tender, about 5 minutes. Stir in 2 cans of chicken broth and canned tomatoes. Add fresh tomatoes.
- Mix Anaheim chile peppers, jalapeno pepper, cumin, chili powder, and pepper into the pot. Stir in chicken. Bring to a boil; reduce heat to medium and simmer soup until flavors combine, about 20 minutes.
- Ladle soup into serving bowls; twist 1 lime wedge into each bowl. Top with corn chips, sour cream, Cheddar cheese, avocado slices, and cilantro.

TORTILLA SOUP
Steps:
- Heat a large pot over medium-high heat, add oil, the onions and ground turkey. Saute until turkey is just cooked; stirring frequently to break up clumps.
- Add the chicken stock to the pan and stir in garlic, chiles, tomato puree and enchilada sauce mix. Bring to a boil then reduce heat and simmer for 10 minutes. Put some of the chopped avocado in the bottom of each bowl and ladle the soup on top; stir to combine. Top with cheese, crushed chips and sour cream. Garnish with cilantro.
AUNT KATHY'S TORTILLA SOUP
This is now a favorite in my husband's family in Canada after my aunt sent it with me when I moved up from California. We make this with whatever broth is abundant. Garnish with Mexican cheese blend, sour cream, salsa, and sliced avocado. This soup is an especially tasty way to use up the turkey after holidays! It freezes well, too!

- Place 2 tablespoons of the olive oil, the onion, and garlic in a large heavy-bottomed soup pot over medium heat. Cook slowly, stirring occasionally, until the onion is translucent, about 3 minutes. Add the zucchini and the celery and keep cooking, stirring occasionally, for 2 minutes more. Add another tablespoon of the olive oil and the cauliflower and cook 5 minutes, stirring occasionally, as the vegetables slowly begin to soften. Stir in the green beans, cabbage, and remaining olive oil and cook, stirring occasionally, for another 2 minutes. Stir in the tomatoes and 2 cups water and simmer until all of the vegetables are softened, 5 to 8 minutes more.
- Add the salt, pepper, and Parmesan cheese rind and stir. Add more water if needed for the desired consistency -- it should be very thick. Cover and simmer 30 minutes. Add the chickpeas and basil sprigs and cook until chickpeas are heated through, 5 to 6 minutes. Serve in bowls with the Parmesan cheese grated over top and freshly ground pepper, and drizzle with olive oil.
LEMON CHICKEN TORTILLA SOUP
Whenever I go out to restaurants, there's always one thing I look for first: chicken tortilla soup. So one day I decided to save myself the trouble of going out and tried making my own from a recipe online (and there are a lot!). I couldn't exactly decide which one would yield the best results so I just took a shot at it from reviewing the basic ingredients (all recipes for this dish are basically the same, with some minor differences). After about four months of making chicken tortilla soup for myself, I've gotten to the point where I'm comfortable making it the same way twice from my own recipe.

- Start off by chopping up the raw chicken into small strips or roughly chop it into small, uneven pieces. In large pot, heat about 2 tablespoons of olive oil on medium-high. Throw chicken into the pot stirring occasionally.
- As the chicken cooks, finely chop the onion and garlic and throw into the pot once chicken is mostly white.
- Add oregano, cumin, and chili powder.
- Stir in to mix the ingredients.
- At this point what I do is add lemon juice so it's properly incorporated into the dish.
- Let chicken cook until finished (about 5 minutes at this point with frequent stirring).
- Roughly chop the cilantro and tomato and add to chicken.
- Let cook for about 5 minutes.
- You should start to notice a good amount of liquid in the pot from the oil, lemon, and tomato.
- This is when I add the tomato sauce and stir.
- Again, I let sit for about 5 minutes.
- Once it's all nicely incorporated, add the chicken broth.
- Bring to a boil, then reduce to a simmer.
- Add black beans.
- Simmer for about 15 minutes.
- The soup should be an deep red color when finished.
- Ladle into a bowl, add more fresh cilantro, cheese, and crushed tortilla chips. Enjoy!

- Bring broth to a boil in a large pot.
- Crush tomatoes by hand and add with juice to broth.
- Add cumin, garlic, salt, pepper, corn, and American cheese.
- Bring to a boil again.
- Dissolve cornstarch in cup of cool water in small bowl.
- Add to boiling soup slowly while stirring constantly.
- Let simmer 10 minutes.
- While soup simmers, sauté ground beef in skillet with chopped onion.
- Drain off any grease.
- Turn soup off, and add cooked beef mixture.
- Serve with sour cream, shredded Cheddar cheese and tortilla chips.
