Number Of Ingredients 3

1 (10 count) can refrigerated biscuits
1/3 cup sugar
oil, to deep fry in

Steps:

  • Use either a deep fryer, or a large deep skillet.
  • Be sure to add enough of oil to line the bottom of the pan a couple of inches deep.
  • Heat oil to 350 degrees.
  • Remove biscuits from can and fry a few at a time in the fryer.
  • When browned on one side, turn over.
  • When golden brown on both sides remove from oil, and drain on paper towels.
  • Pour sugar into a small container, and once the doughnuts have cooled slightly toss the doughnut into the sugar, and coat on both sides.
  • Be sure to fry only a couple at a time.

Whilst I was staying in Yemen I became acquainted with a wonderful Thailandese lady who lived in Saudi. She used to make these treats often for an evening snack, served along some strong cardamom tea...a classic arab treat. If done correctly, the 'donuts' should not absorb too much of the sugar and have a lovely sticky coating on the outside. Best eaten immediately!

Number Of Ingredients 8

2 1/2 cups flour
1 tablespoon yeast
2 -2 1/4 cups warm milk
3 tablespoons yogurt
3 tablespoons cornflour
1 teaspoon salt
1 cup sugar
1/2 cup water

Steps:

  • For batter :.
  • Sift dry ingredients into bowl.
  • Add in yoghurt and milk and mix until combined.
  • Mixture should be of middling texture, not watery and not too thick. Just somewhat thicker than a pancake batter consistency.
  • Leave to rise in a warm place for 1/2 an hour.
  • Heat oil, when hot drop batter in by teaspoonfuls and cook until just golden brown.
  • Drain and then place immediately into syrup and toss to coat.
  • When coated completely remove and place on serving dish. Serve warm.
  • For Syrup :.
  • Boil water and sugar together on low heat without stirring (so that it'll stay clear) until it reaches the point that when it cools on the spoon, it is of a thick sticky consistency.

  • Slowly add water while gently mixing with your hand to get a sticky batter. The batter will be more like a dough than batter. More like a thick medu vada batter.
  • Cover with a muslin cloth and allow to rest for a couple of hours in a warm place till it has doubled in size
  • Heat oil and drop the batter by spoonful. (Dipping the spoon in water in between prevents the batter from sticking to the spoon and makes it easier to drop. Alternatively you can drop the batter in a zip lock bag. Cut out the corner of the bag and push to get a small ball of the batter in your hand. Drop this ball immediately in oil. You can dip your hand in water to avoid sticking.)
