SPICY AGRODOLCE WING SAUCE



Spicy Agrodolce Wing Sauce image

Yield 1 1/2 cups

Number Of Ingredients 6

1 cup white balsamic vinegar
1/2 cup sugar
1 tablespoon crushed red pepper
1 teaspoon kosher salt
2 garlic cloves, minced
2 tablespoons unsalted butter

Steps:

  • Combine the vinegar, sugar, crushed red pepper, salt and garlic in a medium saucepan over medium-high heat and bring to a boil. Reduce the heat and simmer until the sauce thickens and can coat the back of a spoon, 12 to 15 minutes. Remove from the heat, then add the butter and whisk to combine. Adjust the seasoning if necessary. Use on wings cooked to your preference.

Number Of Ingredients 5

1/4 cup table salt
1/4 cup sugar
12 medium chicken wings (drumettes attached)
Freshly ground black pepper
1 small jar store-bought barbecue rub

Steps:

  • In a large bowl, stir the salt and sugar into 8 cups water until dissolved. Add the chicken wings and let sit at room temperature, 1 hour. Dry off the wings with a paper towel and season with pepper and a bit of the barbecue rub.
  • Place the wood chunks directly on the burner of a grill, under the grate. Close the lid and turn all the burners to high until the chunks start to smoke, about 15 minutes.
  • Turn off all the other burners except the primary burner with the wood chunks. Using a rib rack, suspend the wings on the cooler side of the grill. Close and smoke the wings, maintaining a temperature of 250 to 275 degrees F, until the meat registers 165 to 170 degrees F, about 1 hour. Serve immediately.

This wing sauce comes from the kitchen of my brother-in-law. He made it up and it has a bit of heat to it. Awesome for wings, or for whatever you like to dip!

6 ounces hot sauce
4 tablespoons butter
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
1 tablespoon lemon juice
1 tablespoon white vinegar
2 tablespoons granulated sugar
2 teaspoons Dijon mustard
1/2 teaspoon salt
2 tablespoons bleu cheese salad dressing
1 fresh garlic clove, chopped (to taste)

Steps:

  • Mix all ingredients in sauce pan over medium heat.
  • Bring to boiling stage.
  • Remove from heat and it is ready to serve. Very simple!

If you know someone from Buffalo, they know someone who told them the secret ingredients to the Anchor Bar's famous Buffalo chicken wings. I know people from Buffalo. This is my version of Buffalo sauce, as described to me many years ago, over almost as many beers.

⅔ cup hot pepper sauce (such as Frank's RedHot®)
½ cup cold unsalted butter
1 ½ tablespoons white vinegar
¼ teaspoon Worcestershire sauce
¼ teaspoon cayenne pepper
⅛ teaspoon garlic powder
salt to taste

Steps:

  • Combine hot sauce, butter, vinegar, Worcestershire sauce, cayenne, garlic powder, and salt in a pot over medium heat. Bring to a simmer while stirring with a whisk. As soon as the liquid begins to bubble on the sides of the pot, remove from heat, stir with the whisk, and set aside for use.

1 cup butter (not margarine)
1 (23 ounce) bottle frank's original red hot sauce
2 finely minced garlic cloves
1 tablespoon onion powder
2 teaspoons thyme
1 teaspoon celery seed
1 tablespoon Worcestershire sauce
1/4 cup water
1 tablespoon cornstarch
2 teaspoons cayenne powder, if you like really hot sauce, This sauce recipe isn't really about the Heat, it's more about

Steps:

  • Heat butter, garlic and thyme over medium heat until water has dissipated from the butter (stops bubbling), stirring constantly.
  • Add onion powder, Frank's Original, Worcestershire sauce and celery seed; bring to a slight boil.
  • While waiting to boil, whisk cornstarch with water.
  • Add cornstarch mixture once sauce comes to a boil.
  • (This step is to keep the butter suspended in the sauce and from separating into an oily mess. It can be skipped if you want a thinner consistency) It also helps the sauce adhere to the wings.
  • Funnel sauce back into the Frank's Original bottle for easy storage and dispensing.
  • Pour about 5oz into a large bowl; throw in 5-6 wings and toss to coat.
