LYCHEE LIME SPARKLER
From the 'New Idea: ultimate barbecue cookbook'. I haven't made this yet but it sounds SO delicious and what a nifty way of getting juice and zest into the drink without having to grate the limes! Sounds also like a great Christmas Day - or any other festive occasion - drink and particularly a welcome cooling drink on a hot day, whether it's served at a BBQ or indoors!

Steps:
- Drain the lychees and reserve the syrup; set aside six lychees for decoration.
- Place the remaining lychees, limes and sugar into a large ziplock bag; crush with a meat mallet or rolling pin until the fruit turns pulpy; strain the juices into a large jug; add the reserved syrup; cover and refrigerate.
- Just before serving, add the sparkling wine; pour into champagne glasses; decorate with the extra lime slices and a lychee, and serve.

CHERRY-LIME SPARKLER

Steps:
- Place the pitted cherries in a large mixing bowl. Add the sugar, lime juice and salt. Stir until the cherries are evenly coated. Set aside at room temperature for 1 hour to macerate the cherries.
- Drain the cherry mixture, collecting and reserving all the juice. Thread the macerated cherries amongst 8 cocktail skewers and set aside for garnish.
- Stir together the reserved cherry juice and seltzer in a small pitcher.
- Fill 8 highball glasses with ice cubes. Pour the cherry sparkler over the ice and garnish each glass with a skewer of cherries and a sprig of mint. Serve immediately.
LEMON-LIME SPARKLER

- Pick the grapes from the stems and place them in a single layer on a rimmed cookie sheet. Put the grapes into the freezer and freeze for at least 3 hours or overnight. Once frozen, the grapes can be put into a plastic freezer bag.
- When ready to serve, in a large pitcher stir together the lemon-lime soda, gin, and lime and lemon juice. Fill a glass with frozen grapes and pour over the cocktail mix. Garnish with slices of lemon and lime if desired.
LIME CUSTARDS WITH LYCHEES
Making these sweet-tart wonders might be easier than remembering to buy ice cream.

Steps:
- Bring wide strips of lime zest, salt, 1/2 cup sugar, and 2 cups cream to a boil in a medium saucepan over medium-high heat. Reduce heat and simmer, swirling pan occasionally and being careful not to let mixture boil over, until cream is slightly thickened, about 5 minutes. Remove from heat and stir in lime juice. Strain mixture through a fine-mesh sieve into a large measuring glass; divide among 4 small glasses, bowls, or 8-oz. ramekins. Chill until custards are no longer warm, about 30 minutes, then cover with plastic wrap and continue to chill until set, at least 2 hours.
- Just before serving, whisk remaining 1/2 cup cream in a small bowl to soft peaks; whisk in remaining 1 Tbsp. sugar.
- Top each custard with dollops of cream, a few lychees (you may have a few left over), and some finely grated lime zest.
- Custards can be made 2 days ahead. Keep chilled.
REFRESHING LYCHEE & LIME SORBET

- Drain the syrup from two cans of lychees into a small pan. Add the sugar and dissolve over a gentle heat. Bring to the boil for 1 min.
- Blitz the drained lychees in a food processor until very finely chopped. Pour in the lime juice and syrup with the blade still whirring - don't worry if the mix isn't perfectly smooth at this point. Tip into a 1-litre container and freeze for at least 6 hrs until solid.
- Break up the frozen mix, then return to the bowl of the processor. Tip in the egg white and whizz until thick, pale and smooth. Add zest from 1 lime. Return to the container and freeze again, ideally overnight. Serve in scoops with remaining lychees scattered with a remaining zest.

- *citric acid (also known as sour salt) is what gives the cookies their sour bite-if you want less tang, use just a pinch.
- In a medium-sized bowl, beat together the butter, sugar, salt, and baking powder till well blended.
- Beat in the lime juice, lime oil, sour salt (citric acid), and the egg.
- Blend in the flour thoroughly.
- Roll the dough into 1" balls, and place them on lightly greased or parchment-lined baking sheets.
- Bake the cookies in the top third of a preheated 350°F oven for 14 to 16 minutes, until the cookies are browned on the bottom.
- Remove them from the oven, and cool on the pan for about 10 minutes before transferring to a rack.
- Mix together the sugar coating ingredients in a pan or bag.
- Gently shake and roll the still slightly warm cookies in the sugar till coated. Allow the cookies to cool completely, then repeat, coating again with the sugar.
- (If you're freezing the cookies, you may choose to recoat the cookies in sugar once they've been removed from the freezer, before serving.).

- Slice 1 lime in half, then slice 2 wedges from 1 half and reserve for garnish. Juice remaining 1 1/2 limes to yield 2 Tbsp. juice. Combine lime juice, sugar, and 2 Tbsp. mint leaves in a measuring cup or cocktail shaker. Muddle mint with the back of a spoon. Let sit 5 minutes.
- Meanwhile, pour 1/2 cup water into a small bowl. Sift matcha through a fine-mesh sieve into water and whisk until smooth. Whisk matcha into mint mixture, then divide between 2 glasses filled with ice. Top with sparkling water. Garnish with lime wedges and remaining 1 Tbsp. mint.
