Lebanese Mujadara Recipe combines lentils with rice for a perfectly balanced protein dish. Seasoned with Middle Eastern flavors and topped with crispy fried onions, makes this a truly irresistible meal.

1 cup lentils (brown, red or green)
1 cup rice (long grain)
4 onions (2 sliced, 2 chopped)
2 tablespoon olive oil (extra virgin)
1/2 teaspoon cumin
1/2 teaspoon coriander
1 teaspoon cinnamon
3 tablespoon oil (cooking )
1 tablespoon parsley (Italian, chopped)
salt and freshly ground black pepper

Steps:

  • Rinse the lentils and add to the boiling water for about 15 minutes until they are tender; drain;
  • In a heavy pan heat up olive oil, add chopped onions and cook until translucent, 3-4 minutes;
  • Add cumin and coriander, mix well;
  • Add rice and lentils and coat with onion & spice mixture;
  • Add cold water to cover the grains, season with salt and pepper;
  • Cook for about 15 minutes until the water is absorbed and rice and lentils are soft;
  • In the meantime heat up cooking oil, add sliced onion and fry until golden brown and crispy; take out of the pan and dry on paper towel;
  • Once rice and lentils are cooked, turn off the heat, add cinnamon, cover and let stand for 10 minutes;
  • Place the rice and lentils on a serving dish, top with fried onions and parsley; serve immediately.

1 cup brown or green lentils (not lentils du Puy), sorted for debris and rinsed
1/2 cup extra-virgin olive oil
1 teaspoon cumin seeds
1/2 teaspoon cracked black peppercorns
3 medium red onions, thinly sliced
Kosher salt
3/4 cup basmati rice
1/2 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1 (1-inch) cinnamon stick
2 tablespoons pine nuts, optional
Squeeze of fresh lemon juice
Greek yogurt, for serving, optional

Steps:

  • Throw the lentils into a medium saucepan. Fill with enough cold water to cover the lentils by about an inch. Bring it to a boil over medium-high heat, then turn down to a simmer and cook until the lentils are tender but not mushy, about 20 minutes. Drain and set aside.
  • Meanwhile, as the lentils cook, grab a large skillet. Pop it over medium-high heat and add the oil. Allow the oil to warm for a minute, then drop in the cumin seeds and cracked peppercorns and cook, shaking the pan once in a while until the cumin seeds darken a touch, about 1 minute.
  • Add the onions, sprinkle with a dash of salt and cook until they turn dark caramel brown, stirring often. This will take about 15 minutes. Splash the onions with a little water if they stick to the bottom of the pan. You'll know they're done both by their deep chestnut color and by the slight crispiness developing on some of the onions.
  • Using a slotted spoon or spatula, remove about half of the onions to a paper towel-lined plate; these are for garnish later. Sprinkle in the ground cumin, cayenne and then add the cinnamon stick; saute about 1 minute.
  • Add the rice and cook, stirring often (but gently so you don't break the rice!) until some rice grains start to brown. Quickly, add the cooked lentils, 3 cups of water and 1 1/2 teaspoons of salt; bring to a boil. Turn the heat down to low so that the pan is at a simmer, cover and cook 30 minutes. The water should be completely evaporated and rice should be tender. (If there's still too much water in the bottom, put the lid back on and cook for another 5 minutes.)
  • Turn off the heat, keep the lid on, and allow the rice to steam undisturbed for about 5 minutes.
  • Meanwhile, toast the pine nuts, if using, in a small skillet over medium-low heat, shaking often, about 5 minutes.
  • Taste the rice for seasoning. Serve with the reserved caramelized onions, toasted pine nuts, if using, and a little squeeze of lemon juice. I also like to serve this with some dollops of Greek yogurt.

His mother made this once a week at her deli and after trying it once I had a standing order to save me a plate every week. This is so healthy and delicious, and it's so simple to make. After she retired and closed her deli I had to search through several recipes and make my adjustments to get it to my liking. It has become a staple in my home.

14 ounces dry brown lentils
2 carrots, grated
3 tablespoons olive oil
2 onions, thinly sliced
3 cloves garlic, crushed, or more to taste
2 tablespoons water, or more as needed
1 ½ teaspoons ground cumin
¼ teaspoon ground cayenne pepper
¼ teaspoon yellow curry powder
4 cups cooked brown rice, or as needed

Steps:

  • Fill a large pot with lightly salted water; add lentils and bring to a rolling boil. Cook until slightly tender, about 10 minutes. Add grated carrots; cook until slightly softened, about 10 minutes. Drain lentils and carrots.
  • Heat olive oil in the same pot over medium heat; add onions and garlic. Cook and stir until onions wilt and become transparent, 5 to 7 minutes. Stir in lentils and carrots and reduce heat to medium-low. Add enough water to the pot to keep the lentil mixture from drying out.
  • Sprinkle cumin, cayenne, curry powder, salt, and pepper over lentils; stir until heated through and fragrant, about 5 minutes. Serve over rice.

3 cups uncooked basmati rice
1 cup brown lentils (pick the stones out first)
1 large onion, minced
1 tablespoon allspice, or more to taste
oil
6 -8 tomatoes, finely chopped (any kind)
1 English cucumber, peeled and finely chopped
4 -6 cloves garlic, minced
salt
3 tablespoons vegetable oil

Steps:

  • Rinse the rice and lentils in a large pot with cold water.
  • After rinsing, fill with water and cook until rice and lentils are tender.
  • Drain in colander and rinse with cold water.
  • In the meantime, cook onions in oil (a few tablespoons) until soft.
  • Remove from heat and add allspice and rice.
  • Mix and fluff thoroughly and don't forget the salt.
  • Cover with dishtowel on underside of lid.
  • Leave on warm on burner for at least 1/2 hour.
  • Side: mix all ingredients and add salt to taste.

A 'dish of the poor' from my Lebanese cookbook. Good eaten with fried fish or served cold the next day with fried steak or leftover fish. You can also make it into a salad by adding olive oil and lemon juice.

400 g long-grain rice
100 g large brown lentils
500 ml water
1/2 teaspoon salt
1 tablespoon oil
3 -4 large onions, thinly sliced into rings

Steps:

  • Soak the rice in boiling water for 20-30 minutes, then wash 3-4 times by rubbing the rice together between your palms.
  • Drain or squeeze dry with your hands.
  • Also sift through the lentils and remove any stones or foreign matter.
  • Wash, put in a pot with the water and bring to a boil.
  • Add the salt, cover and simmer for about 35 minutes until partly cooked.
  • Add the rice, re-cover and simmer for another 15 minutes.
  • Meanwhile, heat the oil in a pan and brown the onion rings.
  • Stir into the rice andlentils.
  • The dish should not be dry but the rice shouldn't be mushy either.
  • It's better a little underdone than overcooked.

  • While the lentils are cooking, dice the first onion and sauté in a small pan with 1 tablespoon of olive oil until translucent. Add the cumin and sauté for 1 more minute, set aside. Slice the remaining onion into thin slices and sauté in the same pan with a tablespoon of oil on medium-low heat until deep golden brown and caramelized. Stir often to prevent the onions from burning.
  • Wash the rice thoroughly and add to the lentils along with the sautéed onion. Season with salt and pepper and lower the heat all the way down to low. Cook for 10-15 minutes covered until all the water has been absorbed.
