Russian Macaroni and Cheese Recipe - (4/5) image

1/2 pound macaroni or other small pasta (I used whole-wheat Penne)
2 Tbs butter
2 cups chopped onion
2 cloves garlic, minced
1/2 lb sliced mushrooms
4 cups shredded cabbage
1 tsp salt
1 tsp caraway seeds
1 10 oz bag fresh baby spinach
2 cups cottage cheese
1/2 cup buttermilk
2 Tbs fresh dill, finely minced
2 cups packed, grated cheddar
Handful of sunflower seeds

Steps:

  • Preheat oven to 350 and grease a 9x13 baking pan. Cook the pasta until tender and drain. Melt butter in a deep skillet (this is going to need to be deeper than you think it is. AT LEAST 2 or 3 inches deep), and saute onions for 5 minutes. Add garlic, mushrooms, cabbage, salt, and caraway seeds. Cover and cook 10 minutes, or until cabbage is tender. Stir in spinach, remove from heat, and add to pasta. Mix in cottage cheese, buttermilk, dill, black pepper and half the cheddar. Spread in prepared pan, sprinkle with remaining cheddar and sunflower seeds. Bake uncovered for 20-30 minutes.

18 pieces extra-large shell pasta
2 tablespoons extra-virgin olive oil
1 cup tasso ham or bacon
5 large shallots, minced
1 clove garlic, mined
1 1/2 tablespoons all-purpose flour
1 cup white wine
2 cups cream
1 cup grated fontina
1/2 cup grated sharp Cheddar
2 tablespoons grated Parmesan
18 medium to large shrimp, peeled and deveined
2 cups gently packed spinach
Kosher salt and ground white pepper
Hot pepper sauce, to taste (recommended: Tabasco)
1/2 cup bread crumbs
1/4 cup chopped Italian parsley leaves

Steps:

  • Preheat broiler.
  • Bring a large post of water to a rolling boil, add pasta shells and cook al dente, according to package instructions.
  • Meanwhile, in a large skillet, add the olive oil and tasso or bacon, cook until just crisp,
  • then add shallots and garlic. Cook and stir over moderate heat just until shallots are translucent. Add the flour, cook stirring constantly to blend and toast the flour, about 5 minutes. Add the white wine, reduce until almost dry. Add the cream, bring to a simmer until the sauce coats the back of a spoon, about 5 to 10 minutes. Remove from the heat and stir in the cheeses, shrimp and spinach. Gently stir until cheese is melted, spinach is wilted and shrimp is beginning to turn pink. Season with salt and white pepper, to taste. Season with hot sauce, to taste.
  • Drain the pasta, making sure to shake all of the water off and out of the shells.
  • In a large flameproof baking dish, place drained shells. Add the cheese and shrimp mixture and gently fold into the pasta. Sprinkle with the bread crumbs and chopped parsley. Place under the broiler until the breadcrumbs are toasted about 2 to 3 minutes.

2 cups chopped onions
1 teaspoon minced garlic
1/2 lb mushroom, sliced
2 cups shredded green cabbage
1 teaspoon salt
1/4 teaspoon caraway seed
1 bunch fresh spinach or 1 (10 ounce) bag fresh spinach, coarsely chopped and tough stems removed
1 (16 ounce) container cottage cheese
2 tablespoons chopped fresh dill or 2 teaspoons dried dill
1/2 teaspoon fresh ground pepper
1 1/3 cups shredded cheddar cheese, divided

Steps:

  • Heat oven to 350 degrees.
  • Grease a 13x9-inch baking dish.
  • Cook macaroni according to package directions until barely tender.
  • Rinse under cold water; drain and transfer to large bowl.
  • Mel butter in large skillet over medium-high heat.
  • Add onions and cook stirring occasionally for 5 minutes.
  • Stir in garlic, mushrooms, cabbage, salt and caraway seeds.
  • Reduce heat to medium, cover and cook until cabbage is tender about 7-10 minutes.
  • Combine vegetable mixture and spinach with cooked pasta in bowl.
  • Stir in cottage cheese, dill, pepper and 1 cup Cheddar cheese.
  • Spread evenly in prepared baking dish and sprinkle with remaining 1/3-cup Cheddar cheese.
  • Bake 20-25 minutes, until heated through.
