HOW TO MAKE PERFECT SCONES
Use this basic scone dough for any sweet scone variety. See blog post for a couple savory scone options. Feel free to increase the vanilla extract and/or add other flavor extracts such as lemon extract or coconut extract. Read through the recipe before beginning. You can skip the chilling for 15 minutes prior to baking, but I highly recommend it to prevent the scones from over-spreading.

Steps:
- Whisk flour, sugar, salt, and baking powder together in a large bowl. Grate the frozen butter using a box grater. Add it to the flour mixture and combine with a pastry cutter, two forks, or your fingers until the mixture comes together in pea-sized crumbs. See video above for a closer look at the texture. Place in the refrigerator or freezer as you mix the wet ingredients together.
- Whisk 1/2 cup heavy cream, the egg, and vanilla extract together in a small bowl. Drizzle over the flour mixture, add the add-ins, then mix together until everything appears moistened.
- Pour onto the counter and, with floured hands, work dough into a ball as best you can. Dough will be sticky. If it's too sticky, add a little more flour. If it seems too dry, add 1-2 more Tablespoons heavy cream. Press into an 8-inch disc and, with a sharp knife or bench scraper, cut into 8 wedges. For smaller scones, press dough into two 5-inch discs and cut each into 8 wedges. To make 10-12 drop scones: Keep mixing dough in the bowl until it comes together. Drop scones, about 1/4 cup of dough each, 3 inches apart on a lined baking sheet. To make mini (petite) scones, see recipe note.
- Brush scones with remaining heavy cream and for extra crunch, sprinkle with coarse sugar. (You can do this before or after refrigerating in the next step.)
- Place scones on a plate or lined baking sheet (if your fridge has space!) and refrigerate for at least 15 minutes.
- Meanwhile, preheat oven to 400°F (204°C).
- Line a large baking sheet with parchment paper or silicone baking mat(s). If making mini or drop scones, use 2 baking sheets. After refrigerating, arrange scones 2-3 inches apart on the prepared baking sheet(s).
- Bake for 18-26 minutes or until golden brown around the edges and lightly browned on top. Larger scones take closer to 25 minutes. Remove from the oven and cool for a few minutes. Feel free to top with any of the toppings listed in the recipe Note below.
- Leftover scones keep well at room temperature for 2 days or in the refrigerator for 5 days.
MOCHA CHIP SCONES
Steps:
- Preheat oven to 350 degrees F.
- In a small bowl, combine coffee, cream, 1 egg, and vanilla extract; set aside.
- In a large mixing bowl, combine baking mix, sugar, white baking, and chocolate chips.
- Add wet ingredients to dry ingredients and work into a crumbly dough. On a lightly floured surface, form dough into a 9-inch disk (approximately 1/2-inch thick). Cut into 12 wedges and place on ungreased cookie sheet. Set aside.
- In a small bowl, combine 1 tablespoon cream and remaining beaten egg. Brush tops of scones with egg mixture and sprinkle with sanding sugar.
- Bake for 18 to 20 minutes or until golden brown. Serve warm with butter!
MATCHA-HERB SCONES
The herbaceous flavors of chives and tarragon enhance the floral notes of matcha tea, itself derived from a potent, aromatic green leaf. Parsley, cilantro, rosemary or thyme would make a great substitute for the tarragon, if you like, but chives are essential, as their flavor helps balance the bitter matcha with the rich dairy in these savory scones.

- Line a baking sheet with parchment paper and set aside. Combine the flour, sugar, matcha, baking powder and 1 teaspoon salt in a large bowl and whisk until evenly combined. Add the chilled butter and rub it into the flour with your fingers until it resembles a coarse meal. Combine the chives and tarragon in a small bowl, then scoop out and reserve 1 tablespoon of the herbs in another bowl. Sprinkle the remaining herbs in the flour mixture and toss until evenly incorporated.
- Form a well in the center of the flour mixture, then pour in the cream. Using a fork, stir until the dough just comes together (it will be wet and sticky). Transfer the dough to well-floured work surface and, using well-floured hands, pat into a 9-by-6-inch rectangle, about 3/4-inch thick. Using a large knife, halve the rectangle lengthwise, then cut crosswise into thirds, creating six 3-by-3-inch squares. Halve each square diagonally to create 12 triangles, then transfer all the triangles to the prepared baking sheet and space apart evenly. Freeze for 1 hour to firm up.
- Meanwhile, in a small bowl, add the room temperature butter, pepper and the remaining 1/4 teaspoon salt. Add the reserved herbs and stir to combine. Set aside.
- Preheat the oven to 400 degrees F.
- Using a pastry brush, dust off any excess flour attached to the scones, then brush the tops of the scones with cream. Bake the scones until puffed and golden brown on top, 20 to 25 minutes. Transfer the scones to a wire rack and let cool for 10 minutes, then serve warm with the herb butter on the side.
CANADIAN MAPLE SCONES
These are best served warm with a dollop of whipped cream and drizzled with a little extra maple syrup.

- Preheat oven to 350 degrees F (175 degrees C). Spread walnuts onto a baking sheet.
- Toast walnuts in the preheated oven until nuts turn golden brown and become fragrant, about 5 minutes. Watch carefully; nuts can burn quickly. Set aside to cool to room temperature.
- Increase oven temperature to 375 degrees F (190 degrees C).
- Place 3 tablespoons flour, 3 tablespoons brown sugar, and 1/2 cup cooled walnuts in a small bowl. Cut in 2 tablespoons butter using two knives or a pastry blender until mixture resembles coarse crumbs.
- Whisk together 2 cups flour, 2 tablespoons brown sugar, baking powder, and salt. Cut in 1/2 cup butter using two knives or a pastry blender until mixture resembles fine crumbs. Stir in remaining 1/2 cup walnuts.
- Whisk together 1/3 cup maple syrup and egg in a small bowl; stir into flour mixture. Gradually stir in just enough milk for the dough to leave the sides of the bowl and form a ball.
- Place dough on a lightly floured surface. Roll gently in flour to coat; knead lightly about 10 times. Pat into an 8-inch circle on an ungreased baking sheet. Brush with milk; sprinkle evenly with topping. Score dough circle into 8 wedges with a knife, but do not separate wedges.
- Bake in the preheated oven until golden brown, about 15 minutes. Remove immediately from the baking sheet, and separate the scones. Serve warm with whipped cream and maple syrup.

MACHUS SCONES

- Cream butter and sugar till white and fluffy. (4-5 Min?).
- Add eggs and mix till incorporated.
- Add salt, rum and cream, and mix till incorporated.
- Mix baking powder into flour, and add to batter. Mix till incorporated.
- Add currants and mix in.
- Grease cookie sheets, and scoop batter onto them. Somewhere between 2 Tbsp and 1/4 cup per scone?
- Bake at 375 for 20 min or until they're light golden on the top, and a bit darker on the bottom.
- Cool on wire rack.
