1 (5 ounce) can tuna, drained
1 egg
½ cup Italian seasoned bread crumbs
⅓ cup minced onion
¼ cup minced celery
¼ cup minced red bell pepper
¼ cup mayonnaise
2 tablespoons chili sauce
½ teaspoon dried dill weed
¼ teaspoon salt
⅛ teaspoon ground black pepper
1 dash hot pepper sauce
1 dash Worcestershire sauce
4 hamburger buns
1 tomato, sliced
4 leaves of lettuce

Steps:

  • Combine tuna, egg, bread crumbs, onion, celery, red bell pepper, mayonnaise, hot chili sauce, chili sauce, dill, salt, pepper, hot pepper sauce and Worcestershire sauce. Mix well. Shape into 4 patties (mixture will be very soft and delicate). Refrigerate for 30 minutes to make the patties easier to handle, if desired.
  • Coat a non-stick skillet with cooking spray; fry tuna patties for about 3 to 4 minutes per side, or until cooked through. These are fragile, so be careful when turning them.
  • Serve on buns with tomato slices and lettuce leaves, if desired.

1 1/2 pounds ahi or blue fin tuna
2 teaspoons lime zest plus 1/4 cup freshly squeezed lime juice
3 tablespoons chipotle adobo sauce
1 tablespoon chopped chives
1 clove garlic, minced
Kosher salt and freshly ground black pepper
Olive oil, for cooking
6 brioche buns, split
1/2 cup sour cream
1/2 cup mayonnaise
3 tablespoons chipotle adobo sauce
3 tablespoons apple cider vinegar
2 tablespoons agave nectar
2 tablespoons freshly squeezed lime juice
2 teaspoons Dijon mustard
Kosher salt and freshly ground black pepper
3 cups shredded green and red cabbage
1/2 cup shredded carrots
1/4 cup shredded kale

Steps:

  • For the burgers: Mince the tuna in a food processor.
  • In a large bowl, add the lime zest and juice, chipotle adobo, chives, garlic and minced tuna and mix until combined. Season with salt and pepper. Shape the tuna mix into 1/2-inch-thick patties and refrigerate for about an hour. This will help the patties stay intact and not crumble when cooking.
  • For the chipotle slaw: In a medium bowl, add the sour cream, mayonnaise, chipotle adobo, vinegar, agave, lime juice and mustard and mix until combined. Season with salt and pepper. Add the green and red cabbage, carrots and kale and toss together. Refrigerate for later.
  • Heat a heavy nonstick skillet or griddle over medium-high heat. Drizzle the skillet with olive oil. Place 3 patties in the skillet and sear for 2 to 3 minutes on each side. Repeat with the remaining patties.
  • To serve, place each patty on a bottom bun half and top with some chipotle slaw and a bun top.

1 1/2 pounds yellowfin tuna, cut into 1-inch pieces, chilled
1 1/2 teaspoons minced garlic
1 1/2 teaspoons minced ginger

3 tablespoons Dijon mustard
1 teaspoon coarse salt
1/2 teaspoon freshly ground pepper
1 tablespoon vegetable oil
2 tablespoons rice-wine vinegar

1/2 cup grated carrot (from 1 carrot)
1/2 cup grated radish (from 3 to 4 radishes)

Steps:

  • Make the burgers: Fit a food grinder with a grinding plate with about 1/4-inch holes. Grind tuna into a bowl. Add garlic, ginger, lemon zest, mustard, salt, and pepper. Mix gently, and shape into four 1-inch-thick patties. Cover, and refrigerate until cold and firm, about 30 minutes.
  • Make the coleslaw: Whisk vinegar, sugar, and salt in a small bowl. Mix carrot, radish, cabbage, scallion, and sesame seeds in a medium bowl. Toss slaw with vinegar mixture, and refrigerate up to 1 hour.
  • Heat oil in a large nonstick skillet over medium heat. Cook patties to medium-rare, about 2 minutes per side. Wipe skillet clean, and return to heat. Spread mayonnaise on cut sides of roll halves, and heat, mayonnaise side down, until golden, about 1 minute. Divide burgers and slaw among bottom halves of buns. Sandwich with top halves.

1/4 pound Brie, sliced
Sliced kosher pickles

  • In a small saucepan saute the onion and garlic in oil until tender (without burning the garlic) and set aside to cool.
  • Combine tuna, eggs, bread crumbs, onion mixture, and hot sauce, in a medium bowl and mix well. Shape into 4 patties (mixture will be very soft and delicate). 2 pounds fresh center-cut tuna
1 large garlic clove, minced
2 tablespoons extra-virgin olive oil
1 tablespoon toasted sesame oil, plus more for buns
1 anchovy fillet, minced
2 tablespoons finely chopped fresh basil
2 celery stalks, peeled to remove strings and minced
1 1/2 teaspoons grated fresh ginger
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 cup mizuna
6 buns
6 tablespoons pickled ginger
Wasabi Mayo

Steps:

  • Cut tuna into 1/4-inch chunks with a very sharp knife, trimming away any dark, bloody parts. Coarsely chop tuna by hand until it begins to hold together. Transfer to a bowl over a bowl of ice. Add garlic, olive oil, sesame oil, anchovy, basil, celery, ginger, salt, and pepper; combine well.
  • Heat grill to medium high. Form tuna into 6 patties, and place on hot grill, or chill for up to 6 hours until ready to cook. Grill from about 3 or 4 minutes per side for rare to 7 or 8 for well done. Alternatively, cook in a nonstick skillet or grill pan over medium-high heat for about 2 to 3 minutes per side for rare to 5 or 6 for well done.
  • Serve with mizuna on buns brushed with sesame oil and toasted, if desired. Serve with pickled ginger and wasabi mayonnaise.

1 egg
1 cup of shredded cheese (whatever your preference)
1/2 cup ranch dressing
1 medium onion, dices small
1/3 cup seasoned dry bread crumb, for the mix
1/2 cup breadcrumbs, on the side for coating
Pam cooking spray, for coating the pan

Steps:

  • In a medium bowl mix all ingredients together thoroughly. I noticed it is a better consistency if you mix with your hands.
  • Place the extra breadcrumbs for coating on a shallow dish.
  • Preheat pan on medium with Pam.
  • Form a patty with your hands and coat both sides of it with breadcrumbs.
  • Place the patty in a preheated fry pan.
  • Repeat steps until mix is finished, usually around 6 patties.
  • Cook until each side has browned and has a slight crispiness.
  • I like to serve them on toasted bread with mayo, lettuce, and tomato if you like.

These are some of the world's best tuna burgers. I came up with the idea when I had some tuna in my pantry and needed to use it up. I just threw the ingriedents into a big bowl, mixed it up, made some patties, and sauteed them in butter. And what came out was one of the best recipes I had yet to make. ENJOY!

2 (7 1/16 ounce) packages of starkist flavor fresh tuna in water
1 1/2 tablespoons mayonnaise
1 teaspoon mustard
1/4 teaspoon turmeric
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon Equal sugar substitute or 1/2 teaspoon Splenda sugar substitute
4 atkin friendly hamburger buns, plus
1 extra atkin friendly hamburger bun
1 cup unseasoned breadcrumbs (see note below)
4 tablespoons butter
iceberg lettuce
mayonnaise
mustard
onion
pickle
hard-boiled egg

Steps:

  • Place the first 7 ingriedents in a medium bowl and stir to comebined; flake the tuna as you stir.
  • Take the extra hamburger bun and toast it in the toaster until browned.
  • Using a bow cheese grater, grate the bun into the tuna mixture and then stir to comebined.
  • Form the mixture into 4 patties and place on a plate, cover with foil or plastic wrap, and place in the refrigerator for atleast 2 hours and up to 2 days.
  • When you are ready to use them, remove them from the refrigerator, pat them in the bread crumbs, and saute them in the butter in a preheated (medium-high) skillet until golden brown on both sides (this won't take long so don't leave them).
  • Place on hamburger buns with your choice of toppings.
  • Note: If you do not want to use bread crunbs you can take 2 more Atkin's friendly buns, toast them, and chop them in your food processpr for low carb bread crumbs.

At the time of publication, Mr. Richard's Washington, D.C., restaurant, Citronelle, was considered one of the best in the country. Basil, soy, anchovies and garlic add layers of flavor to this simple-to-assemble tuna burger.

1 1/2 pounds fresh tuna fillet (do not use dark oily flesh)
4 cloves garlic, minced
5 tablespoons extra virgin olive oil
2 anchovies, minced
1/2 cup minced basil
2 1/2 teaspoons soy sauce
Salt and freshly ground black pepper
4 tablespoons good-quality mayonnaise
1 teaspoon grated fresh ginger
2 cups mesclun
1 tablespoon red wine vinegar
4 hamburger buns, split
1 tablespoon canola or grapeseed oil
1 large ripe tomato, trimmed and cut into 4 slices

Steps:

  • Chop tuna until it is the texture of hamburger and presses into a compact ball, and place it in a large mixing bowl.
  • Add garlic, 4 tablespoons olive oil, anchovies, basil, 2 teaspoons soy sauce and salt and pepper to taste. Mix well, shape into four patties 1 inch thick, and set aside. (Patties may be placed on a wax-paper-lined baking sheet and covered and refrigerated for 1 to 8 hours. Remove from refrigerator 30 minutes before sautéing.)
  • In a small bowl, combine mayonnaise with remaining soy sauce and ginger. In a mixing bowl, combine mesclun with remaining tablespoon olive oil and the vinegar. Toast buns on one side.
  • Place a large sauté pan over medium-high heat and add oil. Add burgers and sauté for 1 1/2 minutes a side for rare. Set burgers aside in a warm place for 2 minutes. To serve, spread mayonnaise mixture on bottom bun, add burger, tomato and a portion of mesclun. Top with other bun. Repeat with other burgers and serve immediately.

1 (7 ounce) can tuna (drained and flaked)
1 tablespoon minced green pepper

  • Combine cream of mushroom soup with tuna.
