This is from the Magic Bullet Cookbook. Posted in response to a request on the forum. The quantity is an estimate. The book doesn't give the servings but measuring with water, the small cup holds about 1-1/4 cups.

Yield 1 1/4 cup

Number Of Ingredients 8

2 avocados
2 -3 garlic cloves
1 dash fresh lemon juice (1 squeeze) (optional) or 1 dash fresh lime juice (1 squeeze) (optional)
1/4 cup onion
4 -6 cherry tomatoes (1/4 cup)
1 -2 sprig fresh cilantro
1/4 of a jalapeno pepper (optional)
salt and pepper

Steps:

  • Scoop out avocado meat, discarding the pit. Place in the short cup.
  • Place the remaining ingredients, in the order they are listed, into the short cup. Your may need to cut up the tomatoes to make them fit.
  • Twist on the cross blade and place the cup onto the power base.
  • Give it 3-4 quick pulses until all the ingredients are chopped and blended.
  • Make sure to apply a bit of counter-clockwise pressure to the cup to keep it from locking on. And you may need to use the tap technique to make sure everything gets completely chopped.
  • Tastes best chilled.

  • Guacamole. Blend avocado, lime juice, garlic cloves, onion, cilantro, tomato, and jalapeno peppers (definitely optional). The serving size should probably just be for one person, you won't want to share it.
  • Raspberry Sorbet. This one is so simple. Literally just raspberries, water, and honey or maple syrup. This may sound boring, but it's actually delicious.
  • Pesto. Mixture of basil leaves, pine nuts, olive oil (extra virgin), salt, garlic, and parmesan cheese. Delicious to eat with veggies, on toast, in a sandwich, as salad dressing, on bruschetta (see recipe below), etc.
  • Coconut Smoothie. Feel like you're in paradise while you actually sit in your dorm room while drinking a smoothie made of coconut water, mango, banana, and ice.
  • Frozen Margarita. Yet another touch of paradise... the margarita! If you're like me, waking up to 10 degree weather you'll definitely want to drink a margarita to ignore the cold.
  • Hummus. If you love hummus, you were definitely devastated by the tragic recall of Sabra hummus products. Obviously, an alternative is necessary. Making your own hummus is simple.
  • Salsa. Blend of onions, jalapenos, cherry tomatoes, garlic, lime or lemon juice, and cilantro. And some salt and pepper as well. Perfect to eat with chips and way better than salsa out of the jar.
  • Bruschetta. Tomatoes, basil, garlic, olive oil, vinegar, salt, and pepper served on toast. With optional pesto (seen above) added. Perfect.
  • Tomato Soup. Who doesn't love grilled cheese and tomato soup? No one. This recipe includes tomato, cream, and garlic. And obviously everyone knows how to make a grilled cheese to go along with it.

Throw all ingredients in the bullet (or blender if you don't have one). Blend until you reach the consisitency you desire. That's it. It's done. Enjoy!!! Note: Depending on how juicy your tomatoes are you may need to add a little water to loosen the guacomole up and get it to run through the processer.
