BEEF AND MUSHROOMS WITH SMASHED POTATOES
I was inspired to make this recipe after I couldn't stop thinking of a similar dish served in my elementary school cafeteria more than 50 years ago! I like that it's quick to make, and my husband and grandchildren love it. -Ronna Farley, Rockville, Maryland

Steps:
- Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat to medium; cook, uncovered, until tender, 10-15 minutes., Meanwhile, in a large skillet, cook and crumble beef with mushrooms and onion over medium-high heat until no longer pink, 6-8 minutes; drain. Stir in flour, 1/2 teaspoon pepper and 1/4 teaspoon salt until blended. Gradually stir in broth; bring to a boil. Reduce heat; simmer, uncovered, until thickened, about 5 minutes, stirring occasionally., Drain potatoes; return to pan. Mash potatoes to desired consistency, adding butter, cream and the remaining salt and pepper. Spoon into bowls; top with beef mixture. Sprinkle with fried onions.

OLD-FASHIONED BEEF STEW WITH MUSHROOMS

Steps:
- Heat 2 tablespoons oil in a Dutch oven over medium-high heat. Season the beef with 2 teaspoons salt and 1 teaspoon pepper. Add to the pot in batches and cook, turning and adding more oil as needed, until browned all over, about 5 minutes. Transfer to a bowl with a slotted spoon.
- Add 2 more tablespoons oil to the pot and reduce the heat to medium. Add the roughly chopped carrot, celery and onion and cook, occasionally stirring with a wooden spoon and scraping up the browned bits on the bottom of the pot, until the vegetables soften, about 5 minutes. Move the vegetables to one side and add the tomato paste to the empty side. Cook until it darkens around the edge, about 2 minutes; stir into the vegetables. Add the wine and bring to a boil.
- Return the beef and any juices to the pot; add the stock. Bring to a boil, skimming any foam off the top. Add the thyme. Reduce the heat to low, cover and simmer until the beef is tender, about 2 hours.
- Strain the beef and vegetables in a colander set over a large bowl, reserving the cooking liquid. Tent the beef mixture with foil. Let the cooking liquid stand for 5 minutes and then skim off the fat on the surface. Return the liquid to the pot. Add the remaining carrots and celery and the potatoes and bring to a simmer over high heat. Reduce the heat to medium and simmer until the vegetables are just tender, about 20 minutes.
- Meanwhile, heat the remaining 2 tablespoons oil in a large skillet over medium-high heat. Add the mushrooms; cook, stirring occasionally, until they release their juices and brown, 10 minutes. (Pour off any extra liquid, if necessary.) Season with salt and pepper. Remove from the heat and set aside.
- Melt the butter in a saucepan over medium-low heat. Whisk in the flour to make a roux, then let it bubble (do not brown), 2 minutes. Whisk in 2 cups of the reserved cooking liquid. Stir this sauce into the pot with the vegetables; bring to a simmer. Reduce the heat to medium low and simmer, stirring often, until thickened, 5 minutes.
- Return the beef to the pot, discarding the roughly chopped carrot, celery, onion and thyme. Add the mushrooms and simmer until heated through, 5 minutes. Season with salt and pepper; sprinkle with parsley.
MAKE-AHEAD BEEF STEW WITH MUSHROOMS AND POTATOES
A delicious, heart-warming winter stew that you can make ahead of time

- Heat the olive oil in a large Dutch oven or large pot then add the onions, carrots and celery, season with salt and pepper. Cook for a few minutes until the vegetables are fragrant and lightly browned. Toss in the garlic and cook for another minute or so. Stir in the thyme and the tomato paste, which will add a bit of sweetness and a lovely color to the stew. After everything is well incorporated, turn off the heat and transfer the contents of the pot to a bowl and set it aside.
- Pat dry the beef cubes with paper towels and then season them generously with salt and pepper. Working in batches, dust the beef cubes with the flour and shake them to get rid of the excess flour. Sear the meat on all sides and in the same pot, without crowding them, for about 3-5 minutes. Remove the seared cubes to a bowl and continue with the next batches until all beef is nicely browned. Add some more oil, as needed, before searing additional batches. Remove to a bowl and set aside.
- Add the wine and scrape the bottom of the pot to deglaze it. Return the seared meat to the pot along with its juices. Add the bay leaves and the beef stock, so the meat is almost covered.
- On your stovetop, bring the pot to a boil, reduce to a simmer, add the vegetables, cover and simmer for about 1½ hours or until the meat and vegetables are tender when pierced with a fork.
- Cut the potatoes into small cubes and add them to the pot as well. Continue cooking for 10 minutes.
- Meanwhile, dry-roast the sliced mushrooms in a hot skillet for a few minutes, then add 2 or 3 tablespoons of butter to the skillet. Season the mushrooms with salt and pepper and cook over medium heat for about 8 minutes, stirring frequently. When they are soft and caramelized, add them to the pot as well. Check the stew to make sure there is enough liquid (if needed add some hot water). Simmer for another 15-20 minutes or so, uncovered, until the potatoes are tender and the liquid has thickened. Taste and adjust the seasoning if needed. Turn off the heat, remove the bay leaves, and let the stew sit uncovered on the stove for 10 minutes. A stew appreciates a little time to rest before serving.
- Serve with some crusty bread, or let it cool, refrigerate and serve later. The stew will taste even better the next day!
MAKE-AHEAD SLOW COOKER BEEF STEW
Served with fresh bread and a salad, this hearty beef stew is a family favorite. It can be made fresh, browning the meat then tossing all the ingredients together in the slow cooker, or it can be prepared ahead of time for freezing and quick assembly for a quick crock pot meal when you need it! I like to make fresh stew, but double the ingredients and freeze the second portion for a quick dose of comfort food mid-week.

- Combine the flour, 1 teaspoon smoked paprika, seasoned salt, and 1/2 teaspoon black pepper in a large, resealable plastic bag. Add the beef, and seal the bag. Shake the bag thoroughly to coat the beef with seasoned flour.
- Heat the olive oil in a large skillet over medium-high heat. Shake the excess seasoning off the beef, then stir the beef into the hot skillet with the onion and mushrooms. Cook and stir until the beef is evenly browned and no longer pink. Drain and discard any excess grease.
- Place the beef mixture into a slow cooker. Place the potatoes, carrots, celery, garlic, Marsala wine, and Worcestershire sauce into the cooker with the beef mixture. Pour the beef broth and tomatoes into the cooker, and stir in the onion soup mix and 1 more teaspoon of smoked paprika. Cook on High for 4 to 6 hours, or on Low for 10 to 12 hours. Season to taste with salt and black pepper.
- For a thicker stew, combine cornstarch and water in a small bowl. Gradually stir the mixture into the stew until thickened.

Steps:
- Combine beef, beef stock, and porcini mushrooms into a large saucepan and bring to a simmering boil. Leave on a low simmer until meat is tender, about 1 hour.
- Heat butter in a large stockpot over medium-high heat and add white, bella, porcini, and canned mushrooms, onion, carrots, celery, and garlic. Saute until mushrooms shrink and onions are translucent, 5 to 7 minutes.
- Transfer beef mixture to the stockpot. Continue to simmer for 1 hour more. Remove pieces of beef and shred with 2 forks. Return shredded beef to the stew and serve immediately.

- Pat the cubed meat dry with paper towels; season with salt and pepper. Toss the meat in flour.
- Heat a large Dutch oven over medium-high heat. Add 2 tablespoons oil. Add half the meat in a single layer without crowding, and brown on all sides, 5 to 6 minutes. Remove meat from pot, and transfer to a bowl. Add 1/3 cup of wine, and stir with a wooden spoon, scraping any browned bits on the bottom of the pan (if wine evaporates too quickly to scrape up browned bits, add some stock). Transfer cooking liquid to bowl with meat. Wipe pot clean, and repeat process with remaining meat.
- Heat remaining 2 tablespoons oil in Dutch oven, and add onions. Cook, stirring occasionally, until golden all over, about 3 minutes.
- Deglaze pan with remaining 1/3 cup wine, and return reserved beef and cooking liquid to pot. Add stock and tomatoes; season with salt and pepper. Bring to a boil. Reduce to a simmer, and cook, covered, for 1 hour and 15 minutes. Add carrots and mushrooms. Cook, covered, until meat and vegetables are tender, 45 to 50 minutes.

- Heat olive oil in heavy large pot over high heat.
- Sprinkle beef with salt and pepper.
- Working in batches, add to pot and saute until browned on all side, about 6 minutes.
- Transfer beef to bowl.
- Add 2 cups onions to same pot; saute 2 minutes.
- Add garlic; saute 1 minute.
- Add wine; boil until reduced by half, about 3 minutes.
- Return beef and any accumulated juices to pot.

- Add taro, daikon, and shiitake mushrooms; saute 4 minutes.

- Mix remaining 1 tablespoon butter and flour in small bowl until well combined.
- Whisk into stew.
- Simmer until beef is very tender and juices thicken, about 10 minutes longer.
- Season stew to taste with salt and pepper. (Can be made 1 day ahead. Refrigerate uncovered until cold, then cover and keep refrigerated. Bring to simmer before continuing).
- Sprinkle stew with parsley and serve.

- Cut up all the Vegetables and Mushrooms ahead of time and soak and store Potato's in very cold water until ready to use.
- In large pot over medium heat add oil and butter spread,then add onions and mushroom and cook until soft(about 5 minutes)then add meat and cook another 5 minutes.
- Add wine, beef broth, A-1 sauce, Worcestershire sauce, salt and pepper; cook for 10 minutes.
