1/4 cup butter, softened
3/4 cup sugar
1/3 cup sugar blend
2 large eggs, lightly beaten
1/2 cup unsweetened applesauce
1/4 cup canola oil
1-1/2 teaspoons vanilla extract
1/4 teaspoon butter flavoring
2 cups cake flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup reduced-fat sour cream
FILLING:
1/2 cup chopped walnuts
1/4 cup packed brown sugar
2 tablespoons sugar
1 teaspoon ground cinnamon
TOPPING:
3 tablespoons plus 1-1/2 teaspoons all-purpose flour
2 tablespoons brown sugar
4-1/2 teaspoons sugar
1 teaspoon ground cinnamon
2 tablespoons plus 1-1/2 teaspoons cold butter
1/2 cup chopped walnuts
ICING:
1/4 cup confectioners' sugar
1-1/2 teaspoons 2% milk
1/4 teaspoon vanilla extract

Steps:

  • In a large bowl, beat butter, sugar and sugar blend on medium speed for 2 minutes or until crumbly. Beat in the eggs, applesauce, oil, vanilla and butter flavoring. Combine flour, baking powder, baking soda and salt; add to butter mixture alternately with sour cream. Pour half of the batter into a 13x9-in. baking pan coated with cooking spray. , Combine filling ingredients; sprinkle over batter. Carefully top with remaining batter. For topping, combine the flour, sugars and cinnamon in a bowl; cut in butter until crumbly. Stir in walnuts. Sprinkle over batter. , Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Combine icing ingredients until smooth; drizzle over coffee cake.

1 box chocolate cake mix, (plus ingredients to make cake)
1 tsp vanilla
⅔ cup granulated sugar
⅔ cup packed brown sugar
½ tsp salt
1½ tsp cinnamon
1½ cups unsalted butter, (melted and cooled slightly (three sticks))
¼ cup unsweetened cocoa powder
3¼ cups all-purpose flour

Steps:

  • Preheat oven to 350ºF.
  • Prepare cake mix according to package directions and add vanilla. Pour into lightly greased and floured 9x13-inch pan.
  • In the bowl of an electric mixer, combine granulated sugar, brown sugar, salt, cinnamon, melted butter, cocoa powder, and all-purpose flour. Mix until combined and crumbly.
  • Sprinkle crumb mixture over cake, covering completely. Start at the edges and work your way towards the center for best results.
  • Bake for 30 to 35 minutes.

1 ½ cups all-purpose flour
½ cup butter, cut into pieces
1 teaspoon ground cinnamon
½ teaspoon ground cloves
1 teaspoon baking soda
1 pinch salt
1 cup buttermilk
1 egg, lightly beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch baking pan or casserole dish.
  • Combine sugar, flour and butter. Use a fork to cut butter in until mixture resembles coarse crumbs. Set aside 1/2 cup of this mixture to use as topping.
  • To the remaining flour mixture, add cinnamon, cloves, baking soda and salt. Lightly stir in the buttermilk and egg. Pour batter into prepared pan. Sprinkle cake with reserved topping.
  • Bake in preheated oven for 25 minutes, until a toothpick inserted into center of the cake comes out clean.

2 teaspoons each ground cinnamon, nutmeg and cloves
1 teaspoon salt
1 cup shortening
2 eggs
2 cups buttermilk
2 tablespoons molasses

Steps:

  • In a bowl, combine the flour, brown sugar, baking soda, spices and salt; cut in shortening until mixture resembles coarse crumbs. Remove and set aside 1 cup for topping. In another bowl, beat the eggs, buttermilk and molasses. Add to the remaining flour mixture; mix well. , Pour into a greased 13x9-in. baking pan. Sprinkle with reserved topping. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

•1/3 cup semisweet chocolate chips
•2 cups reduced-fat whipped topping
Directionsened, divided
1 cup sugar
2 eggs
1/4 cup unsweetened applesauce
1 teaspoon vanilla extract
1 cup all-purpose flour
1 cup cake flour
1/3 cup baking cocoa
1 teaspoon baking soda
1 teaspoon salt
1-1/4 cups buttermilk
1/2 cup graham cracker crumbs
1/3 cup chopped walnuts
1/3 cup semisweet chocolate chips
2 cups reduced-fat whipped topping

Steps:

  • In a large bowl, beat 1/4 cup butter and sugar until crumbly, about 2 minutes. Add eggs, one at a time, beating well after each addition. Beat in applesauce and vanilla. Combine the flours, cocoa, baking soda and salt; add to butter mixture alternately with buttermilk, beating well after each addition. Transfer to two 9-in. round baking pans coated with cooking spray.
  • Combine the graham cracker crumbs, walnuts, chocolate chips and remaining butter. Break into small pieces; sprinkle evenly over batter.
  • Bake at 375° for 18-22 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
  • Spread whipped topping between layers and over sides of cake, leaving the crumb top exposed. Refrigerate leftovers. Yield: 16 servings.
