MAMA'S SUMMER SQUASH CASSEROLE

This is a wonderful, cheese-enhanced squash casserole that my husband makes from memory of his mother's recipe.

8 yellow summer squash, thinly sliced
1 small yellow onion, thinly sliced
1 egg, lightly beaten
1 cup low-fat sour cream
1 sleeve buttery round crackers (such as Ritz®), crushed, divided
2 cups shredded sharp Cheddar cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 1-quart casserole dish.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add squash and onion, cover, and steam until squash is tender and easily mashed with a fork, 10 to 15 minutes.
  • Whisk egg and sour cream together in the prepared casserole dish; add squash, onions, 2/3 the crackers, and 2/3 the Cheddar cheese. Stir with a fork. Cover the squash mixture with remaining Cheddar cheese and crackers.
  • Bake in the preheated oven until cheese is melted and crackers are lightly browned, about 30 minutes.

Looking at this casserole is a bit deceiving. The buttery crushed cracker topping is beautiful, but the real surprise is the yummy squash filling underneath. This squash casserole is cheesy and super creamy. Yellow squash is naturally a tad sweet. Mixed with the savory cheese and soup it's the perfect combination. Covering the casserole for part of the baking time browns the buttery crackers perfectly.

Number Of Ingredients 11

3 pound(s) yellow squash, sliced or diced
1/2 cup(s) diced Vidalia onion, optional
1 can(s) cream of mushroom or chicken soup, 10.5 oz.
1 cup(s) mayonaise
1 - egg
8 ounce(s) shredded cheddar cheese (sharp is my favorite)
1 teaspoon(s) salt
1/2 teaspoon(s) fresh ground black pepper
TOPPING
2 - sleeves of Ritz crackers, crushed
1 stick(s) melted butter

Steps:

  • Preheat oven to 350.
  • Wash and slice squash into small medallions or dice into smaller pieces if the squash is large. I prefer smaller sized squash since it is tender. Put squash into a large bowl for mixing with the filling.
  • In a separate bowl, mix together the soup, mayo, eggs, cheese, onions, salt, and pepper.
  • Pour over squash.
  • Stir until well mixed.
  • Then pour into a casserole dish for baking.
  • Crush crackers while in "tubes" (I usually wrap them in a dish towel to avoid a mess, and use a rolling pin or meat tenderizer) or place in a resealable plastic bag.
  • Pour crushed crackers into a bowl. Melt butter in the microwave and stir into crackers until moist.
  • Drizzle on top of casserole. (You can make more or less of the topping. More topping = more yummy!)
  • Bake at 350 degrees until bubbly and brown on top (usually 45-50 minutes). Bake for 30 minutes covered. with foil to help prevent crackers from burning.
  • Then uncover and bake an additional 20 minutes until golden brown on top.
  • ***If you want, you can add a cup of chopped cooked chicken into casserole. Also, adding 2 cups of cooked rice into it makes a delish meal.

nonstick cooking spray
10 medium yellow squash, sliced, or more to taste
1 medium onion, thinly sliced
2 large eggs
2 cups shredded sharp Cheddar cheese, or more to taste
1 (6 ounce) package stuffing mix (such as Kraft® Stove Top®)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
  • Bring a large pot of lightly salted water to a boil. Add squash and onion, reduce heat to medium, and cook until tender, 8 to 10 minutes. Drain all but 1 inch of the liquid and set the pot aside to cool for 20 minutes.
  • Add eggs to the squash-onion mixture and beat with an electric mixer until well combined. Stir in 1/2 of the Cheddar cheese and all but 1/4 cup of the stuffing mix. Transfer mixture to the prepared casserole. Top with remaining cheese and stuffing.
  • Bake in the preheated oven until bubbly, 30 to 45 minutes.

1 quart cooked squash
1 medium onion
4 tablespoons margarine
1/2 lb grated cheese
2 -3 eggs
12 saltines, mashed

Steps:

  • Place about 6-7 cups of water in a medium pot (make sure it more then covers the squash). Add squash after chopping into 1/2-inch circles. Add chopped onions to same pot. Add 1 1/2 tablespoons of margarine. Boil until completely cooked "really well".
  • Drain squash after done cooking.
  • Add squash and onions to casserole dish.
  • Add remaining margarine. Mix well until margarine is melted.
  • Add beaten eggs and mix well into squash.
  • Add 1/2 of the cheese into squash and mix well.
  • Add 1/3 of saltines into squash mix well.
  • Sprinkle on top the remaining cheese and saltines.
  • Bake at 350°F for 35-45 minutes until cheese melts completely.

Squash casserole is about as Southern as it gets. You can serve it piping hot or warm, the day you make it or the next. It's up to you-but I think it's best if you just grab a spoon and dig in.

2 leeks, whites only, washed and free of grit
2 teaspoons unsalted butter, room temperature
2 tablespoons Water
Pinch of kosher salt
2 cups heavy cream
1 tablespoon unsalted butter, room temperature
3 pounds summer squash
2 cups leek crema
1/4 teaspoon kosher salt
1 teaspoon freshly ground pepper
1 teaspoon thyme, chopped
1/2 cup fresh breadcrumbs
1/2 cup Parmigiano-Reggiano, grated

Steps:

  • For the leek crema: Using only the lower third of the leek, remove the root, cut lengthwise down, then dice. Melt the butter in a small saucepan over medium heat. Add the leeks and 2 tablespoons of water. Cover and cook, steaming the leeks until very tender, about 5 minutes.
  • While the leeks are steaming, slice the squash lengthwise to ¼-inch thick slices on a mandoline or with a knife, and set aside. Finish the leek crema by adding salt, then cream, and warm through.
  • For the squash casserole: Preheat the oven to 400 degrees F. Coat a 9" x 9" or 8" x 10" casserole dish with the butter by rubbing it as if you were waxing a car. Arrange the squash in a single layer in the dish. It's all right if you shingle and overlap edges minimally. This is a six-layer casserole, so allocate the ingredients accordingly. Evenly coat the first level of squash with a ladle of crema, a pinch of salt, a pinch of pepper, a bit of thyme, a sixth of the breadcrumbs, and a sixth of the Parmigiano. Repeat these steps 5 more times, then cover the casserole with a fitted lid or foil. Bake covered for 35 minutes, then uncovered for 10 more minutes or until the top becomes nice and golden brown.
  • Remove casserole from the oven and allow to cool for 10 minutes before serving.

4 -6 medium yellow squash
1/2 lb breakfast sausage
1 small onion
1/2 cup sour cream
1/3 cup monterey jack cheese
1/3 cup Velveeta cheese
1/3 cup cheddar cheese
1/3 cup butter
1 egg, beaten
pepper
paprika
Ritz cracker

Steps:

  • Brown sausage, drain and set aside.
  • Cut and stem squash and onion. Butter a 9 X 13 baking pan and set aside.
  • Melt butter, sour cream and all cheeses. Add pepper and paprika to taste. Add everything to baking pan and blend together.
  • Cover with crumbles crackers and dot top with little pats of butter. Bake uncovered at 350 until golden brown, about 30 to 35 minutes.
