AMISH NEVER FAIL PIE CRUST

Amish Never Fail Pie Crust image

I've had this recipe for a long time. It's the only crust my wife asks for whether I'm making pot pies, fruit pies or turnovers. It makes awesome homemade Hot Pockets too. You can substitute whole wheat flour for all or some of the AP flour. This is enough for a 9 inch 2 crust pie, two 9 inch single crust pies or 10-12 hot pockets. You can double the recipe if you have a really big mixing bowl for OAMC.

MAMA'S OLD FASHIONED PIE CRUST

Mama's old fashioned pie crust image

My mama was the family baker till she died in 1977 then I stepped up into the spot. My mama made only 1 kind of pie crust, this one, I make several but this was her go to recipe. You will notice there are no directions for a food processor. well that is because the food processor was not invented yet. So when I make this pie...

Provided by Cathy Smith

Categories     Pies

Number Of Ingredients 6

1 3/4 c all purpose flour ( in weight 7.8 ounces)
2 tsp granulated sugar
3/4 tsp table salt
6 Tbsp cold butter in pats
1/4 c cold lard (can use shortening)
6-8 Tbsp ice water

Steps:

  • 1. In a large bowl, mix together flour, salt, and sugar until well combined. Using clean hands or pastry cutter, add butter and toss until just coated. Cut butter into flour mixture until butter is in butterbean sized pieces and comes together in 1 inch clumps when squeezed, about 2 minutes. Add shortening, toss until just coated in flour, then rub into flour mixture until mixture forms pea-size pieces (some big chunks should remain) and comes together in fist-sized clumps when squeezed, about 1 minute.
  • 2. Drizzle in half ice water and rake through mixture with fingers until just moistened. Drizzle in remaining water 1 tablespoon at a time and comb through mixture with fingers to moisten. It will go from being grizzly sticky mess to coming together. Dough is moist enough when it is moistened through but is not wet when pressed.
  • 3. Lord don't mash the dough to death or it will be tougher than an ex con. Gather into a ball. Turn dough onto a piece of plastic wrap, press it into a flat disk, then close in wrap. Place in coldest part of refrigerator (usually back bottom shelf) at least 30 minutes before rolling out and forming into a crust.
  • 4. If it seems to be a bit warmer than it should when rolling, stop, put everything in the fridge for about 15 minutes. Then start again.

NO-FAIL PIE CRUST

No-Fail Pie Crust image

I found this recipe in a woman's magazine back in the seventies and have used it ever since. It has never failed ME, at any rate. No matter how much this dough is handled it is always flaky and tender even if scraps need to be re-rolled. Be sure to use exact measures, levelling off with a knife. Dough can be left in the refrigerator for up to 3 days. It remains soft and can be taken out and rolled at once, or it can be frozen until ready to use (thaw until soft enough to roll). For a filled pie, bake at temperature indicated in recipe you are using. For unfilled pie, bake at 450 degrees Fahrenheit as directed below. Note that it is suggested you bake a filled pie versus a pie shell on different racks of the oven. The recipe makes five 9-inch pie shells or one shell plus two 2-crust pies. Preparation time includes minimum chilling time of 1/2 hour. Cooking time is for unfilled pie crust only.

Time 1h5m

Yield 5 crusts

Number Of Ingredients 7

4 cups flour
1 tablespoon sugar
2 teaspoons salt
1 3/4 cups shortening (NOT refrigerated, don't use oil, lard, margarine or butter)
1/2 cup water
1 tablespoon white vinegar or 1 tablespoon cider vinegar
1 large egg

Steps:

  • In a large bowl, stir together the flour, sugar and salt with a fork.
  • Cut in the shortening with a fork until crumbly.
  • In a small bowl, beat together the water, vinegar and egg; add to the flour mixture.
  • Stir until all ingredients are moistened.
  • Divide dough into 5 portions and, with hands, shape each into a flat round patty ready for rolling.
  • Wrap each patty in plastic or waxed paper and chill at least 1/2 hour.
  • When you are ready to use the pie crust, lightly flour both sides of the patty and roll out on a lightly floured board or pastry cloth.
  • Keeping the pastry round, roll, from the center, to a 1/8-inch thickness into a circle 2 inches larger than the top of the pie pan.
  • Fold in halves or quarters, transfer to the pie pan, unfold and fit in loosely.
  • Press with fingers to remove air pockets.
  • Fill the crust.
  • Place the other crust on top; flute edges with a fork and place decorative slits in top of crust to allow steam to escape.
  • Bake as directed in the pie recipe you are following.
  • Bake pie on the LOWEST rack in oven to prevent bottom crust becoming soggy.
  • FOR A PRE-BAKED UNFILLED PIE SHELL:.
  • Prick the bottom and sides of a pastry lined pie pan with a fork.
  • Bake on the CENTER rack in a preheated 450 degree Fahrenheit oven 12 to 15 minutes, or until golden brown (a metal pan will take longer than glass).
  • Cool on a wire rack (the shell will shrink and edges pull away from pan).
  • Fill as desired.

1 cup unsalted butter, chilled
3 cups all-purpose flour
3 tablespoons white sugar
⅓ cup ice water

  • In a large mixing bowl, cut shortening, butter, and flour together (add salt if you're using). A pastry blender is preferred, but as a newlywed without a well stocked kitchen, I have used a fork with success.
  • Then add cold water and stir with a fork until it forms a ball. If there's still flour at the end, add water, a teaspoon at a time. You want the dough to be stiff, not sticky, so be careful not to add too much water.
  • Divide in half, and form into discs. (If you're only using half, you can freeze the other half now.) Cover in plastic wrap. Let the dough chill in the refrigerator for at least 30 minutes before rolling out.
  • If you need a baked pie shell, bake in a 400°F oven for 14-15 minutes, or until the crust is cooked through and no longer translucent.
