CONTEST-WINNING HOT CHICKEN SALAD
After I tasted this hot chicken salad at a women's luncheon, I left with the recipe in hand. I was our city clerk for several years, and on election days I brought this to serve our poll workers for lunch. It got everyone's vote of approval! - Preheat oven to 350°. Place chicken in a Dutch oven and cover with water; add bay leaves. Bring to a boil. Cook, uncovered, until chicken juices run clear. Remove chicken and cut into 1/2-in. cubes; place in a large bowl. Stir in the next 11 ingredients. , Transfer to a 13x9-in. baking dish (dish will be full). Sprinkle with cheese and french-fried onions. Bake, uncovered, until heated through, about 30 minutes. Garnish with green onions, if desired.

This recipe was given to me by a coworker. I'm not sure where she got it but I can't get enough of it! It tastes great by itself or on a croissant.

- Preheat oven to 350 degrees.
- In a large bowl, add chicken, water chestnuts, celery, almonds, pimentos and onion.
- In a small bowl, mix mayonnaise, lemon juice, salt and pepper.
- Combine chicken and vegetables with the mayonnaise mixture and pour into a 2qt. baking dish.
- Sprinkle cheese and onion rings on top.
- Bake uncovered for 30 minutes.
- Serve hot.

She got it from Alma Worthington who was the food services director at Second Presbyterian for nearly 15 years. Dave's Mom, Dorothy had worked at that Church. This is a casserole made with cooked (leftover chicken) and is different from the other hot chicken salad recipes posted. I haven't tried this yet but it is one of Dave's Mom's favorites. MISS DAISY'S HOT BAKED CHICKEN SALAD
There are probably a thousand different ways to make a hot chicken salad casserole, but this is, in my opinion, one of the tastiest and simplest. This recipe comes from "Miss Daisy" King, a Nashville cooking legend who made this recipe and many others famous at her "Miss Daisy's Tearoom" in Franklin, Tennessee. I like to serve this for supper with fresh fruit, hot rolls and lemon icebox pie for dessert.

- Boil 3 large boneless chicken breasts for about one hour, slowly. Remove chicken from the broth and tear up into the size that you wish, while it is still hot. Put in a bowl, add all ingredience except fried onions and mix. Place in a large pyrex (shallow) baking dish and place in the refrigerator overnight. When ready to cook, take out and let stand at room temperature for 30 minutes. Bake at 350 degrees for about 45 minutes. Remove from oven and sprinkle one can of fried onions over the top and put back in the oven about 3 minutes, until golden brown. Serve Hot!
