This shortbread cookie is a traditional Scottish recipe. These are round cookies sandwiched with jam and topped off with a delicious icing and a cherry.

2 cups butter, softened
1 cup white sugar
4 cups sifted all-purpose flour
1 cup raspberry preserves
24 maraschino cherries
8 cups confectioners' sugar
½ cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the butter and sugar until smooth. Gradually stir in the flour until well blended. On a lightly floured surface, roll the dough out to 1/4 inch thickness. Cut into rounds using a cookie cutter.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Sandwich one teaspoon of jam between two cookies. Repeat with remaining cookies. In a medium bowl, gradually stir the milk into the confectioners' sugar until the icing is of a spreadable consistency. Spread on top of the sandwiched cookies. Top each cookie with half of a cherry while the icing is still wet.

This is the recipe my mom always made. I like to use the butter flavored shortening, but you can use regular. Amount of biscuits you get depends on how big around you make them and the thickness. My daughter likes me to make smaller ones.

2 cups all-purpose flour
2 ½ teaspoons baking powder
¾ teaspoon salt
5 tablespoons shortening
¾ cup milk

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • In a bowl mix the flour, baking powder and salt. Add the shortening and mix until in little pieces. Add milk a little at a time and mix until it forms a ball.
  • Roll out on floured board to 1/4 inch to 1/2 inch thick. Cut out in desired size and dip in melted shortening. Place biscuits on an ungreased baking sheet.
  • Bake at 450 degrees F (230 degrees C) for 12 to 15 minutes.
  • Variation: For shortcakes add 2 tablespoons for sugar to the dough and roll dough out to 1/2 inch thick.

Haven't made these yet, but they look irresistable and so tempting. If you get to bake them before me let me know what you think. Perfect afternoon tea fare. This recipe comes from Family Circle's Biscuit and Slices book.

125 g unsalted butter
1/2 cup caster sugar
2 egg yolks
2 teaspoons vanilla essence
1/3 cup custard powder
3/4 cup plain flour
3/4 cup self-rising flour
40 g unsalted butter, softened
2/3 cup icing sugar, sifted
1 teaspoon vanilla essence
1 tablespoon milk

Steps:

  • Preheat oven to 180°C Brush two 32 x 28cm biscuit trays with melted butter. Line base with paper; grease paper.
  • Using electric beaters, beat butter and sugar in a small mixing bowl until mixture is light and creamy. Add th egg yolks one at a time, beating thoroughly after each addition. Add vanilla essence; beat until combined.
  • Transfer mixture to a large mixing bowl. Using a metal spoon, fold in sifted custard powder and flours. Stir until ingredients are just combined and the mixture is almost smooth. Press mixture together with fingertips to form a smooth dough.
  • Roll 1 level teaspoon of mixture at a time into bowls. Arrange on prepared trays about 5cm apart. Flatten lightly with base of glass to 2.5cm rounds. Bake 12 minutes or until biscuits are golden.
  • TO MAKE VANILLA CREAM:.
  • Beat butter and essence in a small bowl with a wooden spoon until smooth. Add sugar and milk gradually, stir until well combined and mixture is smooth.
  • Stand biscuits on trays for 5 mins, transfer to a wire rack to cool. Spread half the biscuits with filling and sandwich together with remaining biscuits. If you like you can dust biscuits with icing sugar as well.
  • Keeps for up to 2 days in an airtight container.

In Australia we call cookies biscuits. This recipe is from Super Food Ideas and the recipe states that it makes 28 cookies. I actually got 48 cookies from the mix but I do make my cookies smaller as I have two small girls that like one for each hand ;) These make quite a sweet biscuit.

1 cup caster sugar
1 egg, at room temperature
1/2 teaspoon vanilla essence
1 1/2 cups self-raising flour
1/2 cup custard powder
80 g white chocolate, roughly chopped

Steps:

  • Preheat oven to 180C and line 2 baking trays with baking paper.
  • Using an electric mixer, cream butter and sugar until light and fluffy. Add egg and vanilla and beat until well combined.
  • Sift flour and custard powder together over butter mixture. Add white chocolate and stir until mixture forms a soft dough.
  • Roll tablespoonfuls of mixture into balls and place on prepared trays, allowing room for spreading. Using a fork, press dough to flatten slightly.
  • Bake for 10 to 12 minutes or until golden. Stand on trays for 5 minutes then transfer to a wire rack to cool.
