MOM'S NAVY BEANS RECIPE + VIDEO
My mom's navy beans recipe makes a simple comfort food classic. Tender, seasoned white beans and veggies in a flavorful broth; a must-make!

Steps:
- Add dried white beans to large pot, then enough water to cover beans by 1 inch. Allow beans to soak for 8 hours. To save time, feel free to quick soak beans.
- Heat olive oil in large soup or stock pot over medium-high heat. When oil is hot, add chopped onion, carrot, and celery. Sauté for 6-8 minutes, stirring occasionally.
- Use a colander to drain and rinse soaked beans. Add beans to the stock pot of sautéed vegetables and stir to incorporate. Add bundle of thyme sprigs (or dried thyme), garlic and fresh water to cover beans by 1 inch. Bring to a boil, cover pot and lower heat to simmer; Cook for 4 hours or until beans are soft, but not mushy (See Note 1). To make this navy beans recipe in a slow cooker or Instant Pot, see Note 2.
- Season to taste and serve with crusty bread.

MOM'S HAM AND BEAN SOUP
I could not find the perfect recipe so this is my recipe that I came up with after comparing three different ones. I combined the ingredients that I liked and mom's ham and bean soup was invented. Enjoy!

Steps:
- Place Great Northern beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain water and transfer beans to a large stockpot.
- Mix ham hocks, water, celery, onion, carrot, garlic, thyme, black pepper, and bay leaf with beans in the stockpot; bring to a boil. Reduce heat to medium low and simmer until ham is coming off the bones, about 2 hours.
- Remove ham hocks from soup. Cut meat from bones, discarding fat and bones. Return meat to the pot. Continue cooking until beans reach desired softness.

MAMA'S BLACK-EYED PEA CASSEROLE
Steps:
- Brown the ground beef in large skillet. Drain the excess grease and the add onion, garlic, jalapeno and Essence. Cook the mixture for 3 to 5 minutes or until the onion has softened. Add the peas, tomatoes, mushroom soup, chicken soup and enchilada sauce. Add a few dashes of hot sauce. Simmer until warm, about 10 minutes.
- Preheat oven to 350 degrees F.
- Tear the tortillas into large pieces. Grease the bottom of a large casserole dish with butter and then line the bottom with the torn tortilla pieces. Spoon on the ground beef mixture into a thin layer and then add a layer of cheese. Add another layer of tortillas and repeat with the beef mixture, finishing with a layer of cheese on top. Cover the casserole dish with foil to prevent the cheese from burning and place in the oven. Cook for 35 to 45 minutes. Remove from the oven, cut slices approximately 2 by 2 inches and serve. Garnish with chopped green onion.
- Combine all ingredients thoroughly.
RED BEAN SOUP
This came from a Cajun Cookbook that my friend had loaned to me. The prep. time does not include soaking the beans overnight.

Steps:
- Put the beans in a saucepan, cover with fresh water and bring to a boil.
- Boil for 10 minutes and drain.
- Set aside.
- Melt the butter in a dutch oven or very large saucepan and cook the onion, garlic, celery and carrot, covered, until softened.
- Add the beans, ham, ham bone, water, worcestershire sauce, parsley, thyme, bay leaves, lemon juice, pepper flakes, and salt and pepper to taste.
- Bring to a boil and simmer 2 hours or until beans are very soft.
- Discard the ham bone.
- Scoop out the chunks of ham and reserve.
- Press the soup through a fine sieve and return it to the saucepan.
- Discard the solids in the sieve.
- Cut the chunks of ham into small dice and add to the soup.
- Reheat, and taste and adjust the seasonings.
- Serve hot, sprinkled with a little parsley.
NACHO MAMAS BEAN DIP
This is a great way to get your kids to eat beans and you will love it as well! You can add extra onions and canned or fresh jalapeno peppers to taste, but my kids love it this way!

Steps:
- Put rinsed beans in pan and cover up to 2 inches past beans in large pot -- let sit overnight.
- Drain, put beans back in pot, add water and the rest of ingredients.
- Bring to boil, turn to simmer and cover.
- Simmer for at least 3 hours or until beans are soft.
- Take out bones and dice up any meat on bones and put back into pot -- You can add more ham if you want.
- Discard fat and bones.
- Season to taste with pepper and salt and parsley.

BEAN SOUP

Steps:
- Place rinsed beans into a large stock pot. Add water and bring to a boil. Boil gently for 2 minutes; remove from heat, cover and let stand for 1 hour.
- Add ham bone, cubed ham, onion, salt, pepper and bay leaves. Bring to a boil; reduce heat, cover and simmer for 1 hour and 15 minutes or until beans are soft. Occasionally skim surface of soup while it is cooking.
- Add carrots and celery, cook until tender. Remove ham bone, scrape any meat from bone and place back into soup and serve.

MOMS OLD FASHION BEAN SOUP
This is one of my mothers recipes that we all still use. Mother taught all her daughters to make this we still make it every Christmas Eve when we all get together. Mother doesn't cook anymore at 93 so we make it and it better be done right, Ha Ha.

Steps:
- 1. Go though navy beans and wash .soak beans over night.
- 2. In a large kettle, add drained beans, pork hocks, onion, and celery.
- 3. Cover with water and chicken broth.
- 4. Bring to a boil uncovered then turn down and simmer for about an hour.
- 5. Remove hocks from kettle let cool till you can take meat from bone.
- 6. Add meat back in kettle.
- 7. Add carrots and potatoes continue to simmer uncovered for another hour.
- 8. Add water to small sauce pan and bring to boil.
- 9. Whisk eggs slightly add 1 teaspoon of water.
- 10. Add flour to eggs a little at a time till you have a sticky dough.
- 11. Using a kitchen knife slide a little dough at a time into boiling water.
- 12. The little dumplings will rise to the top when done.Drain.
- 13. Add to soup simmer another 5 minutes and serve.
