MAMA'S FRIED CREAM CORN



Mama's Fried Cream Corn image

A classic from mama's kitchen, make creamed corn today.

Number Of Ingredients 6

1/2 stick butter
12 ears fresh corn
4 slices thick slab bacon
freshly ground freshly ground black pepper
optional milk
optional water

Steps:

  • Remove corn from cobs by using a corn grater or knife, and mash the whole kernels a little. Slice bacon into 1-inch pieces. Cook bacon until brown in a large skillet. Remove bacon from skillet and add 1/2 stick butter to bacon grease. Over medium-high heat, pour in the corn. Fry in the grease and butter mixture. Lower the temperature and cook for 5 minutes, then put on simmer until corn is done, 10 to 15 minutes. Add black pepper, to taste. If corn seems too dry, add a little milk or water.
  • Serve as a side dish with favorite meal.

Mama used to make this as soon as the fresh corn came in. It is similar to creamed corn in sweetness but the kernels are left whole. A great summertime dish. When my boys whine enough in the winter I will make this with frozen corn.

3 cups corn, cut fresh from cob
1/2 teaspoon salt
pepper
1 tablespoon sugar
1/4 cup butter
1/2 cup water
1 tablespoon flour
1/4 cup milk

Steps:

  • Combine corn, salt, pepper, sugar, butter and water in a 10-inch skillet.
  • Cover and simmer 15 minutes on medium heat, stirring occasionally.
  • Combine flour with milk, blending until smooth.
  • Stir into corn.
  • Cook five more minutes, stirring constantly.

Southern Skillet Corn image

A sweet and savory skillet style corn made from fresh corn, cut off the cob and sauteed in a cast iron skillet with bacon grease, butter and seasoning.

3 - 4 cups fresh corn off the cob (about 6 - 8 ears of corn)
2 - tablespoons bacon grease
3 tablespoons butter
salt and pepper to taste
all purpose Greek Seasoning or Tony Chachere Seasoning, to taste

Steps:

  • Remove the husks and silk from the corn. Wash and cut corn off the cob using a knife.
  • I use my Bundt cake pan. The cob fits perfectly in the middle holw and the kernels just come right off and fall into the pan.
  • In a large cast iron skillet, melt the butter and bacon grease together.
  • Add the corn, salt, pepper and seasoning, stir to combine.
  • Cook the corn over medium-high heat until the corn is done (about 15-20 min). Continue to gently stir the corn every so often as the corn cooks.
  • Add additional salt, butter and seasoning if needed before serving.

Mom's Best Skillet Cornbread image

I actually called my mother on the other side of the world and woke her up in the middle of the night because I HAD to have this with dinner that day, and I couldn't find a recipe like this here.

1 1/3 cups cornmeal
1 1/2 cups buttermilk
2/3 cup flour
1/4 cup corn syrup
1 teaspoon baking powder
2 tablespoons skim milk
1 teaspoon baking soda
5 tablespoons nonfat yogurt
1 teaspoon salt
2 egg whites, only

Steps:

  • Preheat oven to 400 degrees F.
  • Oil a cast ironskillet and heat in the oven while you make the batter.
  • Sift dry ingredients into a large bowl.
  • Whisk together buttermilk and corn syrup until well blended, add skim milk, whisk again. Whisk in yogurt until just dissolved.
  • Beat egg whites until stiff.
  • Pour milk mixture into flour mixture and stir well.
  • Fold in the egg whites.
  • Remove skillet from oven, spray with Pam (or melt a bit of butter in it). Pour in batter and bake about 15 minutes till lightly golden. Serve warm.
  • NOTE: It is important to use a pre-heated cast-iron skillet. I've tried other dishes but it won't seem to cook properly in anything else.

This is one of the most popular corn dishes during Thanksgiving and Christmas. It is not your traditional boring old corn. This recipe includes butter, cream and shallots. I always get rave reviews when I make this.

3 tablespoons butter
¼ cup shallots, minced
1 pinch sugar
2 cups frozen corn kernels
2 tablespoons water
½ cup whipping cream
1 pinch ground nutmeg
salt to taste

Steps:

  • Melt butter in a large skillet over medium heat. Add shallots and sugar, and saute for 2 to 3 minutes. Stir in corn and water, and cook until tender, about 5 minutes. Gradually stir in cream, and cook until cream is reduced and sauce thickens, about 8 minutes. Season with nutmeg, salt, and pepper.

This fast to prepare side dish takes on the flavors of elote, a popular Mexican favorite!

2 tablespoons olive oil
2 (16 ounce) packages frozen corn
¼ cup crumbled cotija cheese
¼ cup minced red onion
2 tablespoons finely chopped cilantro
3 tablespoons mayonnaise
2 tablespoons sour cream
2 tablespoons lime juice
½ teaspoon ground cumin
½ teaspoon smoked sweet paprika
¼ teaspoon chili powder
¼ teaspoon salt
1 pinch ground coriander

Steps:

  • Heat a 14-inch skillet over medium-high heat. Add olive oil and swirl to coat the bottom of the skillet. Spread frozen corn evenly across the skillet; do not stir. Cook corn for approximately 8 minutes.
  • Meanwhile, combine mayonnaise, sour cream, lime juice, cumin, paprika, chili powder, salt, and coriander in a large bowl. Set aside.
  • Check the corn; it should be slightly charred. If not, allow to continue cooking for 4 more minutes (stirring is fine at this point.)
  • Once corn is sufficiently browned/charred, transfer to the bowl with dressing and toss to coat. Add cotija cheese, red onion, and cilantro and mix until well combined. Serve immediately.

  • With your corn shucked and cleaned, place it standing up in a large bowl or pan in your sink. (Cutting corn off the cob is quite a task and a messy one at that. I think it’s best to do it in the sink. You’ll thank me later when it’s time to clean up.) Run a sharp knife down the cob cutting the kernels off.
  • Next, we’re going to scrape all the starch and “goody” out of the remaining kernels. This is what gives fried corn it’s unique texture and flavor. Simply turn the back of your knife nearly perpendicular to the cob and scrape down the sides.
  • Heat a skillet (preferably cast iron – I always use my great-grandmother’s – it’s one of my most prized possessions – it’s second to be grabbed in case of a fire after my kid) over medium heat and add bacon grease and two tablespoons of butter (or 4 tablespoons of butter if you’re not using the bacon grease – but you should use the bacon grease). Once melted, add corn. Salt and pepper to taste.
  • Reduce the heat to medium low and stir frequently, cooking for 20 to 30 minutes - or until it's cooked to your liking. Immediately before removing from heat, add remaining butter and stir until melted.

  • Cut the corn kernels from the cobs. Reserve the corn cobs. Measure out 1 cup corn kernels and set aside. Add the remaining kernels to a food processor and pulse 6-7 times or until creamy. Using a dull knife, scrape the pulp and milk from the reserved corn cobs and add to the creamed kernels.
  • Melt butter over medium heat in a large skillet. Add the whole corn kernels, processed corn, corn pulp, salt, pepper and sugar. Sauté for 2-3 minutes. Add the milk and cornstarch mixture. Bring the corn to a boil, then reduce the heat to low and simmer until the corn is thick and creamy. Add more milk or cornstarch if needed for desired consistency. Serve with extra butter and more ground black pepper if desired.
