GRANDMA'S CRANBERRY SALAD
This is a favorite recipe that my Grandma makes for us. She freezes it, but my family prefers it just chilled in the refrigerator.

Steps:
- Put cranberries in a food processor and blend until well chopped. Transfer cranberries to a large bowl, and mix in pineapple, pecans, marshmallows and sugar.
- In a medium bowl, beat cream with an electric mixer until stiff peaks form. Fold whipped cream into cranberry mixture. Chill until ready to serve. (Or, freeze for 2 hours before serving.)

Steps:
- Process cranberries in blender or food processor; pour sugar over cranberries and stir to dissolve.
- Bring 3/4 cup of water to a boil; stir in gelatin and let cool. Stir cooled gelatin into cranberries, and add pineapple, orange juice, apple and pecans. Mix well, cover and refrigerate overnight.
- Whip cream and beat in cream cheese.
- In a glass serving dish, layer half of the cranberry mixture, then the whipped cream mixture, then the remaining cranberry mixture.

THE BEST CRANBERRY SALAD!
This is just FABULOUS! Mainly for holidays, or special occasions. I got the recipe from my sister-in-law. She has a couple of recipes that she makes every year at holidays, and this is one of them. She gave it to me, and now, I make it for the other side of the family, and for friends. It's Great!

- Mince cranberries with a hand-blender, food-processor, or some kind of chopper.
- I use my Braun hand-blender, and the little cup it came with, which is used to chop things really small (rather than pureeing them, which the blender would probably do, if I used it without the cup).
- But you only fill it a 1/4 to a 1/2 full each time, or they won't be minced properly.
- (cranberries may be prepared up to 3 days in advance) In a bowl, mix the first four ingredients, and refrigerate for at least one hour, best if overnight.
- In the morning, or shortly before serving, whip the whipping cream until it peaks.
- Set aside.
- Add the marshmallows to the cranberry mixture, until thoroughly incorporated into the mix.
- Then slowly fold in the whipped cream, until it's completely mixed.
- Refrigerate until serving.

- Place the cranberries in a food processor. Process until coarsely chopped. Transfer the cranberries to a large bowl, and stir in the pineapple, apple, celery, and sugar. Combine the gelatin and boiling water in a separate bowl, stirring until gelatin dissolves. Pour gelatin mixture into the pineapple mixture; stir to combine. Cover and refrigerate until gelatin sets, about 2 hours.

MAMERE'S CRANBERRY SALAD
This was always served as a side dish at the Holidays, or when I made the special request to MaMere, as it is a favorite of mine.

Steps:
- Drain pineapple, reserving liquid and set aside. Add water to reserved syrup to make 1 cup, in saucepan.
- Heat until mixture boils, dissolve jello in hot liquid and cool.
- Gently stir in gingerale and chill until partially set.
- Meanwhile, blend drained pineapple and cranberry sauce into pineapple mixture and fold into 9x12x2 dish.
- Chill until firm.
- Prepare dessert topping according to directions, fold in cream cheese.
- Spread over gelatin.
- Toast pecans in 1T butter in moderate oven 350 for 10 minutes.
- Spread over salad and chill.
- *prep time does not include refrigeration time needed.
- *** You can also use SF gingerale for this recipe, as well as No sugar added crushed pineapple and SF lemon jello.I save calories by this method.

CRANBERRY SALAD AND LA MAE'S NO-FAIL PIE CRUST
Steps:
- Prepare gelatin with 2 cups boiling water. Dissolve completely. Add cranberry sauce and ginger. In the refrigerator let gelatin reach a soft set (about 1 hour). Fold in grapes, nuts, celery, apples, and liquid from oranges. Spray mold with vegetable spray to prevent sticking. Place drained oranges in bottom of mold. Pour gelatin mixture over oranges and refrigerate until firm. Un-mold after firmly set. Serve with sauce on side. A layer of cream cheese may be added on top of the oranges. Mini marshmallows mixed in are a treat for the kiddies.
- Mix flour and salt in a bowl. Remove 1/3 cup of the mixture and set aside. Add the chilled shortening and, using a pastry cutter, incorporate until shortening and flour become pea-sized (be patient), set aside. Use reserved 1/3 cup of flour/salt mixture and 1/4 cup of water, mix to make a paste. Using hands, add paste to flour/shortening mixture and work it just enough for paste to cover everything - don't work it too much. Roll out dough, and then roll onto pin to transfer to pie tin. Fill with preferred pumpkin pie or other pie filling.
CRANBERRY SALAD
This pretty-in-pink salad becomes light and mousse-like when refrigerated overnight. Delicious as a refreshing side for a potluck picnic or served with roasted ham or turkey during the holidays, this easy recipe can easily be doubled to serve a large crowd.

- Combine cranberries, orange, mint, 1/2 cup sugar, and 1/4 teaspoon salt in a food processor. Pulse just until chopped but not watery, 12 to 15 times.
- Whisk cream with remaining 1/4 cup sugar in a large bowl to stiff peaks. Add yogurt and continue whisking until stiff peaks form again. Gently fold in cranberry mixture and pecans, just until combined and no streaks of white remain.

CRANBERRY SALAD WITH MARSHMALLOWS
I'll bet this recipe is over 75 years old! My husband's Grandma made this every year for the holidays. Now his Aunt does, she even grinds her own cranberries in her mother's old fashion grinder. I think that is too much work but knock your socks off if you have one! Call me lazy, but I use a food processor. You will need to begin the prep process the 2 nights before. This is very sweet, personally, I am not crazy about the marshmallows, but they are pretty.

Steps:
- Grind frozen cranberries with orange. Mix with sugar. Cover and store overnight. If using a food processor, leave chunky. If you over process the cranberries in the food processor, and the cranberries are too wet, remove some of the liquid.
- The following day:.
- Mix gelatin with hot water, stir until gelatin is dissolved. Refrigerate and chill until gelatin is moderately set.
- In the mean time, in a large bowl: Snip marshmallows in half. If using large marshmallows snip into several smaller pieces. NOTE: if you do not snip them they will float to the top of the mold and not be incorporated into the mold.
- Add drained pineapple to cranberry - orange mixture; add marshmallows. Toss to combine.
- Prepare celery, apples, pecans. Add to above mixture.
- Once gelatin is moderately jelled, add to all the other ingredients and combine well.
- Pour into your favorite serving bowl.
- Refrigerate, preferably all day or overnight. The relish will be thick like a cranberry relish, it will not set up in the bowl.
- Best if prepared 2 days in advance.
CRANBERRY AND MARSHMALLOW SALAD
This is not only yummy, but it is very pretty to the eye. The red of the cranberries and the white tiny marshmallows are a wonderful contrast. The other ingredients give it some crunch. Pretty for the holidays.

- In a medium bowl, whisk together the gelatin mix and boiling water until gelatin is dissolved. Stir in the cold water. Transfer to a gelatin mold, or keep in a bowl; cover and refrigerate.
- Place the oranges, lemon, apples, and cranberries into a bowl. Sprinkle the sugar over the top. Set aside so the fruit has time to bleed.
