Canola oil, for frying
1 pound okra
Salt
10 fresh sage leaves

Steps:

  • Fill a large pot with enough oil to reach 2 inches up the sides of the pot. Heat oil to 360 degrees F.
  • Thinly slice okra lengthwise. In batches, fry okra in the hot oil until edges turn golden brown and crisp, about 2 minutes. Transfer to paper towel-lined plate and sprinkle with salt. Place okra on a serving platter. Fry sage leaves in a single batch until crisp and nearly translucent, about 1 minute. Transfer to a paper towel-lined plate and sprinkle with salt. When cool enough to handle, crumble sage leaves over okra and serve warm or at room temperature.

1 ½ pounds fresh okra
3 dried red chile peppers
3 teaspoons dried dill
2 cups water
1 cup vinegar
2 tablespoons salt

Steps:

  • Divide the fresh okra evenly between 3 sterile (1 pint) jars. Place one dried chile, and one teaspoon of dill into each jar.
  • In a small saucepan, combine the water, vinegar and salt. Bring to a rolling boil. Pour over the ingredients in the jars, and seal in a hot water bath for 10 minutes. Refrigerate jars after opening.

GRANNY'S OKRA SOUP



Granny's Okra Soup image

A delicious beef and vegetable soup that is a variation on the okra and tomato-based soup my great-grandmother used to make on the farm in Alabama. It's great with fresh or canned veggies, works with just about any alterations - I use fresh, locally-grown ingredients and it's always amazing. All ingredient measurements are approximate. The important thing about Granny's okra soup is that the tomato is the main ingredient, but okra, lima beans and potatoes are important too. Adding or subtracting other vegetables to taste or based on availability is perfectly acceptable.

4 cups chopped tomatoes
2 cups lima beans
2 cups chopped okra
2 cups chopped red potatoes
1 cup corn
1 cup green beans
½ cup chopped carrots
1 (6 ounce) can tomato paste
4 cups chicken stock
1 pound ground beef
½ tablespoon garlic powder
½ tablespoon celery salt
½ tablespoon onion powder
1 small onion, chopped
2 cloves garlic, crushed, or more to taste
3 tablespoons butter

Steps:

  • Combine tomatoes, lima beans, okra, potatoes, corn, green beans, carrots, and tomato paste in a large soup pot. Pour chicken stock over mixture and bring to a boil over medium heat. Reduce heat and simmer until vegetables begin to soften, about 15 minutes.
  • Season ground beef with garlic powder, celery salt, and onion powder. Set aside.
  • Heat butter in a skillet over medium-high heat. Add onion and garlic when butter stops bubbling; cook and stir for 1 minute. Spread ground beef evenly in the pan. Cook until it has a nice brown sear, stirring minimally to end up with mostly medium-sized chunks, 5 to 7 minutes. Drain skillet and add beef, onions, and garlic to the soup pot.
  • Bring soup mixture to a boil; reduce heat to simmer, cover, and cook until vegetables and beef have cooked down, 1 to 2 hours.

2 pounds fresh okra
3 large eggs
1 cup self-rising flour
Salt and pepper to taste
Approximately 1 quart vegetable oil, for frying

Steps:

  • Cut the okra into 1/2-inch rounds. In a medium bowl, lightly beat the eggs. Place the flour, salt and pepper in a plastic bag large enough to hold the okra. Dip the okra in the eggs, then drop into the bag. Shake well, making sure that just enough flour adheres to cover and that the okra pieces do not stick together.
  • Pour enough oil into a deep saucepan to come up to approximately 3 inches in the pan. Heat the oil but watch that it doesn't get too hot. Lower heat. Add okra one handful at a time. Fry, watching carefully, for 3 to 5 minutes until golden. Remove with a slotted spoon and drain on paper towels.

3 tablespoons buttermilk
2 tablespoons all-purpose flour
2 tablespoons cornmeal

1/4 teaspoon garlic herb seasoning blend

Oil for deep-fat frying
Additional salt and pepper, optional

Steps:

  • Pat okra dry with paper towels. Place buttermilk in a shallow bowl. In another shallow bowl, combine the flour, cornmeal, salt, seasoning blend and pepper. Dip okra in buttermilk, then roll in cornmeal mixture., In an electric skillet or deep-fat fryer, heat 1 in. of oil to 375°. Fry okra, a few pieces at a time, for 1-1/2 to 2-1/2 minutes on each side or until golden brown. Drain on paper towels. Season with additional salt and pepper if desired.

1 1/2 cups oil

Steps:

  • Wash and cut okra into 1/4-inch pieces. Mix cornmeal, flour and seasoning. Add okra. Pour oil into a deep frying pan and heat to about 400 degrees F. Fry until golden.

1 lb fresh okra
2 large potatoes
1 medium onion, finely chopped
1/2 cup cornmeal
1 teaspoon salt
1/4 teaspoon ground pepper
1/4-1/2 cup bacon drippings (or you can use vegetable oil, but it won't taste as good!)

Steps:

  • Wash okra and cut off stem ends. Cut in about ½-inch pieces. Peel potatoes and chop into ½-inch dice. Put okra and potatoes in large bowl. Add chopped onion to mixture. Sprinkle cornmeal, salt and pepper over mixture. Stir until cornmeal is evenly distributed throughout mixture.
  • Heat drippings or oil in large skillet over medium heat (oil should be hot, but not smoking hot). Carefully spoon okra/potato mixture into hot oil. Fry, turning mixture occasionally, until potatoes are done and mixture is nicely browned, about 10 to 12 minutes. Drain on paper towels. Makes enough for 4 or 5 hungry people.

I've been meaning to post this one for a while. My husbands grandmother who everyone calls Granny makes the BEST fried okra. Couple of years ago I told her I wanted to watch her make some fried okra so I could learn. She of course didn't measure any ingredients so I've had a hard time trying to figure out how to post this. So the last time I made it I did my best to try and measure out ingredients. So this is what I came up with! I hope y'all enjoy it! I love mine with a little banana pepper vinegar sprinkled on top! YUM!

- a bunch of fresh okra (not frozen)
- 2 parts self rising cornmeal ( not the yellow stuff)
- 1 part all purpose flour
- a pinch of cayenne pepper
- salt and pepper to taste
- vegetable oil
NOTE: I USUALLY START OFF USING 1 CUP OF CORNMEAL AND 1/2 CUP OF FLOUR. I ADD MORE WHEN NEEDED.

Steps:

  • Rinse the okra off in a strainer.
  • Chop up okra into bite size pieces removing the head and the tip of the tail. Just throw those 2 pieces away.
  • If you like a thicker breading like in the picture then place the okra in a bowl with water in it. This helps to bring out the slime and the breading sticks to it better. (yes I said slime, you will see what I'm talking about in a minute) After you soak the okra for about 2 minutes or so, drain them and set aside.
  • Dredge the okra in the flour mixture and throw those bad boys in the fryer.
  • *If you don't like your breading too thick then do not put your okra back into the water after it is cut. Just dredge into the flour mixture and throw them into the fryer without crowding too much.
  • Fry the okra in oil at 375 degrees for 5-7 minutes or until golden brown. If you don't have a fryer then place them in oil in a deep frying pan and cook over med- medium high heat till golden brown, turning when necessary.
  • Drain on a paper towel and sprinkle with salt.
  • *TIP: you don't want your whole okras much more than 3 inches long. The bigger okras tend to be too hard and do not fry up very well. You can also squeeze them and see how hard they are.
