MAMMY'S CHICKEN OR TURKEY BARBECUE

This is a Pennsylvania Dutch-type recipe from my Mammy and my mother. I think I may have to tweak this a little bit but I hope this works for you! Note: This Barbecue does not have any "sauce" but has more of a broth surrounding tender chicken.

1 boneless skinless chicken breasts or 1 turkey breast
water, to cover
salt, to taste
chicken bouillon (optional)
pepper (optional)

Steps:

  • Place your chicken (or turkey) in a pot and just cover with water.
  • If you wish to add chicken bullion, do so at this point, otherwise, save any salt until the end or less your chicken may not be as tender.
  • Bring to the boil over high heat, lower heat and simmer until the chicken is fully cooked, tender and falling apart, much like a pulled pork sandwich.
  • Pull chicken apart into"strings", using two forks and return to broth.
  • Add salt to taste.
  • Serve, using a slotted spoon, on white rolls, as a hot sandwich.
  • I believe this could be made with leftover turkey, white and dark meat chicken or turkey or any other number of ways.
  • This is traditionally a very very plain dish/sandwich so I guess it's good for children if you leave out a lot of the salt.

Use this recipe with leftover roast turkey or rotisserie-style chicken, pulled from the bone.

2 tablespoons olive or vegetable oil
3 tablespoons butter
2 tablespoons fresh thyme leaves, finely chopped
3 to 4 ribs celery, chopped
3 to 4 cloves garlic, finely chopped
1 large bay leaf
1 large or 2 medium onions, chopped
1 large green bell pepper, chopped
Salt and freshly ground black pepper
3 tablespoons flour
2 shots bourbon
2 cups chicken stock
3 to 4 tablespoons Louisiana-style hot sauce, such as Frank's Red Hot
3 to 4 tablespoons Worcestershire
2 tablespoons light brown sugar
2 tablespoons cider vinegar
One 14-ounce can tomato sauce
1 to 1 1/2 pounds white and dark meat cooked turkey or chicken, chopped or pulled
1 box chopped frozen okra, optional
Cooked white or brown rice or oyster crackers, to serve
Thinly sliced scallions, to serve

Steps:

  • Heat the oil in a large pot or Dutch oven over medium to medium-high heat, add the butter and melt into the oil. Add the thyme, celery, garlic, bay leaf, onions, bell peppers and some salt and pepper. Cook partially covered until tender, 15 minutes. Sprinkle the flour over the vegetables and stir a couple of minutes. Add the bourbon, and then the stock. Reduce the heat a bit to thicken. Stir in the hot sauce, Worcestershire, sugar, vinegar and tomato sauce. Add the turkey and okra, simmer to thicken and combine. Then serve or cool and store for a make-ahead meal. Reheat over medium heat.
  • Serve in shallow bowls topped with scoops of rice or crackers and scallions.

1/4 cup chili powder
1/4 cup paprika
1/2 teaspoon cayenne pepper
2 tablespoons ground celery seed
2 tablespoons smoked hickory salt
1/4 cup meat tenderizer
1/4 cup salt
2 tablespoons onion powder
2 tablespoons garlic powder
2 tablespoons paprika
2 tablespoons chili powder
2 tablespoons canola oil
10 pieces fresh chicken, desired bone-in parts
1 cup buttermilk
1 teaspoon lemon-pepper
1 teaspoon no-salt seasoning
2 cups self-rising flour
Canola oil, for frying

Steps:

  • For Big Mama's Rub:
  • Place all ingredients into a resealable container and mix until thoroughly combined.
  • For the oven fried chicken:
  • Preheat oven to 350 degrees F.
  • Cover each piece of chicken in buttermilk, then lemon-pepper, no-salt seasoning and Big Mama's Rub, to taste. Place in a bowl, cover with plastic wrap and place into the refrigerator overnight so that the meat can absorb some of the liquid.
  • Remove the chicken from the refrigerator and dredge in self-rising flour.
  • Fry the chicken in a 1/2-inch of canola oil in the bottom of a roasting pan in the preheated oven. Fry the chicken for 15 minutes per side.

1 cup chicken stock
1 bottle Mexican beer
4 pieces, 6 ounces each boneless, skinless chicken breast
2 tablespoons extra-virgin olive oil, 2 turns of the pan
2 cloves garlic, chopped
1 medium onion, peeled and finely chopped
2 tablespoons Worcestershire sauce, eyeball it
1 tablespoon hot sauce (recommended: Tabasco)
2 tablespoons grill seasoning blend (recommended: Montreal Steak Seasoning, by McCormick)
3 tablespoons dark brown sugar
4 tablespoons tomato paste
1 large sour deli pickle, chopped
6 to 8 slices sweet bread and butter pickles, chopped
6 to 8 slices sweet bread and butter pickles, chopped
6 soft sammy buns, such as soft burger rolls, split

Steps:

  • Bring liquids to a simmer in a small to medium skillet and slide in the chicken breast meat. Gently poach the chicken 10 minutes, turning once about after 5 minutes.
  • While chicken poaches, heat a second medium skillet over medium low heat. To hot skillet, add extra-virgin olive oil and garlic and onion and gently saute until chicken is ready to come out of poaching liquids. Combine the next 5 ingredients in a medium bowl and reserve.
  • When the chicken has cooked through, add 2 ladles of the cooking liquid to the bowl, combining with the sauces, spices, brown sugar and tomato paste. Once the liquids and seasonings are combined, remove chicken, slice it, and transfer to the medium bowl. Using 2 forks, shred the chicken and combine with the liquids. Add the shredded chicken to the onions and garlic and combine well. Simmer together 5 to 10 minutes, using extra cooking liquids to make your chicken as saucy as you like.
  • Combine sour and sweet pickles in a small bowl. Split rolls and fill with scoops of shredded chicken. Top with pickle relish and serve.

2 tablespoons Worcestershire sauce
2 tablespoons steak sauce

2 to 3 teaspoons cayenne pepper
1/4 teaspoon salt
1 cup chicken broth
12 sandwich rolls, split

Steps:

  • Place turkey, breast side up, on a rack in a roasting pan. Combine the butter, Worcestershire sauce, steak sauce and seasonings; rub 3 tablespoons over turkey. Cover and refrigerate remaining butter mixture. Bake turkey, uncovered, at 325° for 3 to 3-1/2 hours or until a thermometer reads 180°, basting occasionally with pan drippings., Remove turkey; pour drippings into a saucepan. When turkey is cool enough to handle, remove meat from the bones. Shred turkey and return to the roasting pan. Add broth and remaining butter mixture to the drippings; bring to a rolling boil. Pour over shredded turkey., Cover and bake at 325° for 25-30 minutes or until heated through. Serve on rolls with lettuce and tomato if desired.

I don't remember where my sister found this BBQ turkey recipe, but it quickly became a family favorite. From the zesty, flavorful sauce and crispy skin to the juicy and tender meat, it's the best Thanksgiving turkey I've ever tried. -Valerie Delano, Cascade, Montana

2 large onions, chopped
2 garlic cloves, minced
1/4 cup plus 2 tablespoons canola oil, divided
2 cups ketchup
1/2 cup water
1/2 cup maple syrup
1/4 cup cider vinegar
1/4 cup molasses
1/4 cup Dijon mustard
1/4 cup Worcestershire sauce
1 teaspoon celery seed
1 teaspoon crushed red pepper flakes
4 teaspoons pepper, divided
1/2 teaspoon ground ginger
1 turkey (12 to 14 pounds)
1 tablespoon salt

Steps:

  • In a large saucepan, saute onions and garlic in 1/4 cup oil until tender. Stir in the ketchup, water, syrup, vinegar, molasses, mustard, Worcestershire sauce, celery seed, pepper flakes, 1 teaspoon pepper and ginger. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes or until slightly thickened. Set aside 1-1/2 cups for serving., Remove giblets from turkey (discard or save for another use). Lightly oil the grill rack. Prepare grill for indirect heat, using a drip pan. Skewer turkey openings; tie drumsticks together. Rub remaining oil over skin of turkey.
