Mandarin Orange Jam image

A fruity mandarin jam, not marmalade! It's like spreading mandarin oranges on toast! Lightly sweetened so you get the full flavor of the oranges.

Number Of Ingredients 4

2 lb mandarin oranges (10-12)
1 lemon
1 cup sugar*
1 pack No Sugar Needed Pectin

Steps:

  • Peel mandarins and remove as much of the white pith as possible from the outside and center of the oranges. Remove any seeds that may be lurking in your "seedless" oranges.
  • You do not need to remove the membranes separating the segments, however, if any are very loose, remove them.
  • Chop mandarin segments into small pieces. If using a food processor or immersion blender, do so briefly to avoid completely pureeing the oranges.
  • Zest and juice the lemon, add to oranges.
  • You should have 4 cups of prepared oranges. Add orange juice or more orange segments as necessary.
  • Wash jars and lids and keep hot. (No need to sterilize).
  • In large saucepan, combine 4 cups prepared oranges and No Sugar Needed powdered pectin. Stir until pectin is fully dissolved.
  • Over high heat, bring mixture to a full rolling boil, stirring frequently.
  • Add sugar. Stir constantly and return mixture to a full rolling boil for 3 minutes.
  • Remove from heat.
  • Pour into hot jars leaving a 1/4 inch headspace.
  • Wipe rim of jars and apply 2 piece lids tightening ring finger tight.
  • Place jars in hot water bath and boil for 10 minutes (begin timing when water starts boiling).
  • Allow jars to rest in canner for 5 minutes, then remove and allow to cool.
  • These jars will last on a shelf for one year.
  • Makes: 4-5 half pint (250 mL) jars

This fresh and fruity dessert is a great way to end your holiday meal. They are easy to make and fun to eat!

5 leaves of gelatin (platinum grade)
600 millilitres Mandarin orange juice (from about 20 Mandarin oranges)
Caster sugar (to taste)
1 small piece of fresh ginger (peeled and grated)
blueberries (optional)
whipped cream (optional)
chocolate shavings (optional)

Steps:

  • Set a small saucepan over low heat.
  • Place the gelatin leaves in a bowl and cover with 500ml cold water, soak for a few minutes until softened.
  • Pour the Mandarin orange juice into the pan to warm up, this will only take a few minutes.
  • Then add the softened gelatine and let it dissolve, stirring occasionally.
  • Add a very small amount of sugar to sweeten the juice, you don't want to loose the tangy flavour.
  • Squeeze the ginger in your hand over the pot, so a few drops of ginger juice are added.
  • Arrange 6 small serving glasses on a tray and strain the orange mixture into each glass.
  • Put the tray with the glasses in the fridge for at least 2 hours, or until the gelatin has set. The jelly should be wobbly.
  • To serve, top with blueberries and whipped cream. Chocolate shavings are also a nice addition.

This is an old Chinese favorite for dessert. Unsweetened soy milk can be substituted for milk.

⅔ cup white sugar
1 ½ cups milk
2 (.25 ounce) packages unflavored gelatin (such as Knox ®)
2 cups boiling water
2 teaspoons almond extract
1 (11 ounce) can mandarin orange segments, undrained

Steps:

  • Whisk the sugar into the milk in a mixing bowl until dissolved. Sprinkle the gelatin over top, and let stand for 1 minute to soften. Whisk the boiling water and almond extract into the gelatin mixture until the gelatin has dissolved. Pour into a 7-inch square pan. Refrigerate until firm, about 4 hours.
  • Once firm, cut the gelatin into 1-inch squares, and place into a mixing bowl. Gently stir in the mandarin oranges and their juice to serve.

4 cups water
6 oz Orange Jello Mix
3 ounce instant vanilla pudding
11 ounce can Mandarin oranges, drained
1/2 of a 20 ounce can of Pineapple chunks, drained
One 8 ounce container cool whip

Steps:

  • Mix together 4 cups of water, orange jello mix, and vanilla pudding mix in a sauce pan. Bring to a boil, stirring the whole time to keep clumps from forming. Once it starts to boil, remove from heat. Pour into a heat-resistant container (I usually use a glass baking dish), cover with plastic wrap and place in the fridge for about four hours. Remove from fridge and break up the jello into chunks. Place in a large bowl. Add in the pineapple, mandarin oranges, and whipped cream and mix around until everything is combined. Keep refrigerated until you are ready to serve.
