MANDARIN PASTA SPINACH SALAD WITH TERIYAKI DRESSING
This salad is easy, quick, healthy, and tossed in the most addictive teriyaki vinaigrette dressing!

- Cook pasta according to package instructions, drain and rinse with cold water. Set aside.
- While pasta is boiling, prepare the dressing. In a jar combine all dressing ingredients. Cover and shake to combine. Chill until ready to use.
- In a large bowl toss together pasta, spinach, raisins, nuts, mandarin oranges, and cilantro. Just before serving pour dressing over salad, toss, and serve.

- In a jar with a tight-fitting lid, combine the first five ingredients; shake well. Set aside. In a skillet, cook and stir the almonds and sugar over medium heat until sugar is melted and almonds are coated, 5-7 minutes. Spread on foil to cool completely., In a large salad bowl, combine the romaine, spinach, celery and onions. Add oranges and sugared almonds; toss gently. Shake dressing; drizzle over salad and toss to coat.

- Prepare the dressing by mixing together all of the ingredients in a jar or container with a tight lid. Mix thoroughly and refrigerate until ready to serve. Put the cooked and cooled pasta in a large bowl. Add the cleaned spinach, raisins, nuts, oranges and cilantro. Just before serving, add dressing, toss and serve.

This is my original recipe and is featured in Taste of Home's Holiday & Celebrations Cookbook (2002). It's light, colorful and fresh-tasting. I hope you'll try it sometime.

Steps:
- Cook pasta according to package directions. Drain pasta, rinsing with cold water; set aside.
- In large skillet, saute chicken and garlic in butter until chicken juices run clear; sprinkle with seasoned salt. Remove chicken with a slotted spoon; set aside.
- In same skillet, saute water chestnuts for 2-3 minutes. Meanwhile, drain oranges, reserving 1/2 cup juice. In a large serving bowl, combine oranges, pasta, chicken, water chestnuts, peas, mushrooms, carrots and onions.
- In a quart-sized jar or similar container with tight-fitting lid, combine the oil, vinegar, soy sauce, garlic, sugar, honey, ginger and reserved mandarin orange juice; shake well. Pour over pasta mixture and toss. Sprinkle with sesame seeds.
- Refrigerate until serving.
