WILD RICE MANDARIN SALAD



Wild Rice Mandarin Salad image

I adapted this off of recipe #430432 to make something similar to a rice salad I had on a flight home from Mexico this spring. It turned out great posting it here for safe keeping.

1 cup wild rice
1/2 cup unsalted shelled pistachio, chopped
1 (10 ounce) can mandarin orange segments, drained
1/4 cup dried cranberries
2 tablespoons celery, diced
2 tablespoons red onions, diced
1/4 cup green onion, chopped
2 tablespoons red wine vinegar
1 tablespoon lemon juice
1 garlic clove, chopped
1 teaspoon Dijon mustard
1 teaspoon sugar
1/8 cup vegetable oil
1/8 cup olive oil
salt and pepper

Steps:

  • 1. Cook rice according to package directions (omit butter and salt) and chill
  • 2. Mix together all dressing ingredients except oil.
  • 3. Add oil to dressing mixture refrigerate until ready to use.
  • 4. Add remaining salad ingredients to chilled rice and toss to mix
  • 5. Add dressing to salad and refrigerate until ready to serve
  • I made this the day ahead and it tasted great the second day.

1 cup long-grain wild rice (6 ounces)
Kosher salt
2 navel oranges
2 tablespoons good olive oil
2 tablespoons freshly squeezed orange juice
2 tablespoons raspberry vinegar
1/2 cup seedless green grapes, cut in half
1/2 cup pecans, toasted
1/4 cup dried cranberries
2 tablespoons scallions, white and green parts, chopped
1/2 teaspoon freshly ground black pepper

Steps:

  • Place the wild rice in a medium pot with 4 cups of water and 2 teaspoons of salt and bring to a boil. Simmer uncovered for 50 to 60 minutes, until the rice is very tender. Drain well and place the rice back in the pot. Cover and allow to steam for 10 minutes.
  • While the rice is still warm, place it in a mixing bowl. Peel the oranges with a sharp knife, removing all the white pith. Cut between the membranes and add the orange sections to the bowl with the rice. Add the olive oil, orange juice, raspberry vinegar, grapes, pecans, cranberries, scallions, 1/2 teaspoon of salt, and the pepper. Allow to sit for 30 minutes for the flavors to blend. Taste for seasonings and serve at room temperature.

Salad:
3 cups cooked wild and long-grain rice
2 cups chunked cooked chicken
1 cup fresh snow pea pods, cut in thirds
1 (11-ounce) can Mandarin orange, drained

Sesame Dressing:
1/4 cup oil
3 tablespoons cider vinegar
3 tablespoons soy sauce
2 tablespoons sugar
1 tablespoon parsley flakes
2 tablespoons toasted sesame seeds
1/2 teaspoon ginger
1/4 teaspoon pepper

Steps:

  • Salad: While rice is cooking, mix chicken, pea pods, and oranges together. Refrigerate. When rice is cooled, toss with salad. Add sesame dressing and toss again. Cover and refrigerate till ready to serve. Sesame Dressing: Combine all in a jar with a tight-fitting lid. Shake well; refrigerate.

I learned how to make this salad while visiting England with a friend. When I made it for a family reunion, everyone asked for the recipe.

2 cups cooked rice
2 cups chopped green onions
1 can (15 ounces) mandarin oranges, drained
1 cup salted peanuts
1 cup mayonnaise
Salt and pepper to taste
Leaf lettuce

Steps:

  • In a bowl, combine the rice, onions, oranges, peanuts, mayonnaise, salt and pepper; mix well. Cover and refrigerate for at least 1 hour. Serve in a lettuce-lined bowl if desired.

Wild Rice, Farro, and Tangerine Salad image

Both the wild rice and the farro can be cooked a day in advance; let them cool separately on baking sheets, then cover and chill. Bring to room temperature before dressing.

Number Of Ingredients 9

4 sprigs thyme, divided
4 cups low-sodium vegetable broth, divided
Kosher salt
1 cup wild rice
1 cup farro
4 tangerines or 2 oranges
1/4 cup vegetable oil
Freshly ground black pepper
4 scallions, green parts only, thinly sliced

Steps:

  • Bring 2 thyme sprigs, 2 cups broth, and 1 cup water to a boil in a medium saucepan. Add a pinch of salt, then rice; reduce heat to medium-low and cover. Cook until liquid is absorbed and rice is tender, 40-45 minutes. Remove thyme and let cool. Drain, if needed.
  • Meanwhile, cook farro in another medium saucepan, using remaining 2 thyme sprigs, 2 cups broth, and 1 1/2 cups water and cooking 35-40 minutes.
  • Using a sharp knife, cut all peel and white pith from tangerines; discard. Working over a large bowl, cut between membranes to release segments, placing segments in a small bowl. Squeeze juice from membranes into large bowl (you should have about 1/2 cup juice); discard membranes.
  • Whisk oil into tangerine juice in large bowl; season with salt and pepper. Add tangerine segments, wild rice, farro, and scallions and toss gently to coat; season with more tangerine juice, if desired.

Steps:

  • Cook rice according to package directions. Remove from heat and set aside to cool.
  • In a medium bowl, whisk together the mayonnaise, vinegar, sugar, salt and pepper. Stir in rice, turkey, onion and grapes until evenly coated with dressing. Cover and refrigerate for 1 to 2 hours.
  • Before serving, sprinkle slivered almonds over the top of the salad.

1-1/4 pounds boneless pork loin chops, cut into strips
1/4 teaspoon pepper
1/8 teaspoon salt
1 tablespoon canola oil
1 can (11 ounces) mandarin oranges
1-1/2 cups water
1 package (6.2 ounces) fast-cooking long grain and wild rice mix
1/4 cup thinly sliced green onions

Steps:

  • Sprinkle pork with pepper and salt. In a large skillet, brown pork in oil. Meanwhile, drain oranges, reserving juice; set oranges aside. , Add the water, rice mix with contents of seasoning packet, onions and reserved juice to the skillet. Bring to a boil. Reduce heat; cover and simmer for 10-12 minutes or until meat is no longer pink and liquid is absorbed. Stir in oranges; heat through.
