3 tablespoons olive oil
1 teaspoon chopped fresh rosemary leaves
1 teaspoon chopped fresh thyme leaves
1 teaspoon chopped fresh Italian parsley leaves
Salt and freshly ground black pepper
Eight 3-ounce chicken cutlets
1 1/2 cups Simple Tomato Sauce, recipe follows, or purchased marinara sauce
1/2 cup shredded mozzarella
16 teaspoons grated Parmesan
2 tablespoons unsalted butter, cut into pieces
1/2 cup extra-virgin olive oil
1 small onion, chopped
2 cloves garlic, chopped
1 stalk celery, chopped
1 carrot, chopped
Sea salt and freshly ground black pepper
Two 32-ounce cans crushed tomatoes
4 to 6 fresh basil leaves
2 dried bay leaves
4 tablespoons unsalted butter, optional

Steps:

  • Preheat the oven to 500 degrees F.
  • Stir the oil and herbs in a small bowl to blend. Season with salt and pepper. Brush both sides of the cutlets with the herb oil. Heat a large heavy oven-proof skillet over high heat. Add the cutlets and cook just until brown, about 2 minutes per side. Remove the skillet from the heat.
  • Spoon the marinara sauce over and around the cutlets. Sprinkle 1 teaspoon of the mozzarella over each cutlet, then sprinkle 2 teaspoons of the Parmesan over each. Sprinkle the butter pieces atop the cutlets. Bake until the cheese melts and the chicken is cooked through, about 3 to 5 minutes.;
  • In a large casserole pot, heat the oil over medium high heat. Add the onion and garlic and saute until soft and translucent, about 2 minutes. Add the celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes. Add the tomatoes, basil, and bay leaves and simmer covered on low heat for 1 hour or until thick. Remove the bay leaves and check for seasoning. If the sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors. Add half the tomato sauce into the bowl of a food processor. Process until smooth. Continue with the remaining tomato sauce.
  • If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into freezer plastic bags. This will freeze up to 6 months.

4 boneless, skinless chicken breast halves (1 1/2 to 2 pounds total), tendons removed
1 teaspoon coarse salt
1/2 teaspoon freshly ground black pepper
1/2 cup all-purpose flour
3 matzos, finely crushed
3 large eggs
1/2 cup freshly grated Parmigiano-Reggiano cheese
1 cup soy or grapeseed oil
2 cups Spicy Tomato Sauce
8 ounces fresh mozzarella cheese, thinly sliced and torn into pieces

Steps:

  • Preheat oven to 350 degrees.
  • Place each chicken breast half between two sheets of plastic wrap on a cutting board. Using the flat side of a meat mallet or the back of a skillet, pound chicken breasts until they are 3/8 inch thick.
  • Remove chicken from plastic wrap and set on a large plate; season with salt and pepper. Place flour and matzo each in separate large, shallow dishes. Beat together eggs and Parmigiano-Reggiano in another large shallow dish. Coat each chicken breast half evenly with flour, shaking off any excess. Then dip in egg and cheese mixture, followed by matzo to coat.
  • Heat oil in a deep large skillet over medium-high heat. When oil is very hot, reduce heat to medium and, working in batches, add chicken. Cook chicken, turning once, until golden brown, about 3 minutes per side. Transfer to a paper towel-lined plate. Repeat process with remaining chicken, allowing oil to reheat between batches.
  • Transfer chicken to a rimmed baking sheet. Top each breast with 1/2 cup tomato sauce and cover with mozzarella. Transfer baking sheet to oven and cook until cheese is melted and sizzling, about 10 minutes.
  • Meanwhile, preheat broiler. Transfer chicken to broiler and broil until cheese is bubbling, about 1 minute. Serve immediately.

1 jar(s) any commercial marinara sauce, your own homemade or mine: not quite your wise guy spaghetti sauce
1 - chicken breast, skinned, split, pounded and cut into pieces
- salt and pepper to taste
1 teaspoon(s) oregano, dried
- flour for dredging
1 - egg, scrambled with 1 tbsp water
2/3 cup(s) parmesan cheese, grated
1 1/2 cup(s) panko crumbs, or other breadcrumbs
2 tablespoon(s) olive oil
1/2 pound(s) fresh mozzarella
1 pound(s) pasta, cooked (linguini, spaghetti, etc

Steps:

  • Either make my sauce located here or at my website, or make your own or buy a jar. About 2 cups or so. Heat through.
  • Pound the breasts until about 1/4 inch thick, trying to keep it even, cut each half into either 2 or 3 pieces. Pat dry.
  • Sprinkle with seasonings. Then dredge in flour. When all are done, then piece by piece, coat in the egg and, lay in the parmesan and turn once, then drop into the crumbs, cover the top with crumbs, press down, and turn over, press again. Place on a wire rack until all have been done.
  • Heat oil in the saute pan and add the chicken, not crowding. Brown and turn over, and brown the other side. Remove to the wire rack, until all are done.
  • Place the wire rack in a parchment covered jelly roll pan, and place in a 420 oven for about 20 minutes, or until done. Chicken will remain nice and crispy this way.
  • When chicken is done, shut off oven. Remove the chicken to top of oven, and place a slice of fresh mozzarella on each. Return to oven to let melt.
  • Cook pasta. (Add some chopped fresh parsley if you wish, and drizzle some olive oil on the dished pasta to prevent it sticking together.
  • At the table, fork some pasta to a dish, place a chicken piece on top, and ladle some sauce over. Grate fresh parmesan over all.
