3 egg yolks
1/4 cup water
3 tablespoons white wine or chicken broth
2 tablespoons tarragon vinegar
2 teaspoons minced shallot
2-1/2 teaspoons minced fresh tarragon, divided
8 whole peppercorns, crushed
1/2 cup cold butter

Steps:

  • In a small heavy saucepan, whisk the egg yolks and water. Cook and stir over low heat or simmering water until mixture bubbles around edges and reaches 160°, about 20 minutes. , Meanwhile, in a small saucepan, combine the wine or broth, vinegar, shallot, 1-1/2 teaspoons tarragon and peppercorns. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes or until reduced to 2 tablespoons. Strain and set liquid aside., Cut cold butter into eight pieces; add to egg yolk mixture, one piece at a time, stirring after each addition until melted. Stir reserved liquid and remaining tarragon into prepared sauce. Serve immediately.

  • Peel and cut flesh from mangoes, discarding pits. In a blender or food processor purée mango with remaining ingredients until smooth. Force purée through a fine sieve into a bowl. Sauce may be made 2 days ahead and chilled, covered.

Béarnaise sauce is a piquant child of hollandaise, one of the so-called mother sauces of French cuisine. It is simply an emulsification - egg yolks and butter cut through with vinegar flavored with tarragon and shallots, with a bite of black pepper. Think of it as a loose mayonnaise, requiring only plenty of whisking and a careful hand with the heat to master. You don't need the clarified butter many recipes call for - a good unsalted butter, melted, works just fine. Apply the sauce to steaks or burgers, asparagus or salmon. The sauce's richness improves virtually everything it touches.

1/4 cup white-wine vinegar
1 small shallot, peeled and minced
1/2 teaspoon freshly cracked black pepper
1 tablespoon plus 1 teaspoon chopped tarragon leaves
2 egg yolks
12 tablespoons unsalted butter, melted
Kosher salt, to taste
Splash of lemon juice, optional

Steps:

  • Put the vinegar, shallots, black pepper and 1 tablespoon of tarragon leaves into a small saucepan, and set over a medium flame. Bring just to a boil, and then reduce heat to a simmer until there are only a few tablespoons of liquid left, approximately 5 minutes. Remove from heat, and set aside to cool.
  • Fill a small saucepan with an inch or two of water, and set over medium-high heat to boil.
  • Put the cooled shallot-and-tarragon mixture into a metal mixing bowl along with a tablespoon of water and the egg yolks, then whisk to combine.
  • Turn the heat under the saucepan of water down to its lowest setting, and put the bowl on top of the pan, making sure that it does not touch the water directly. Continue to whisk the yolks until they thicken, approximately 5 to 7 minutes. You should just about double the volume of the yolks.
  • Slowly beat in the butter, a tablespoon or two at a time, whisking slowly to combine and emulsify. Remove the bowl from the pan occasionally, so as not to overcook the eggs, and taste the sauce. Season with salt. If the flavor is not sharp enough, add a splash of lemon juice. If the sauce is too thick, stir in a splash of hot water. Add the remaining teaspoon of tarragon leaves, and serve.

  • Scrape egg mixture back into skillet, and place it over very low heat. Stir egg yolks with a wire whisk until they slowly thicken, about 1 to 2 minutes. Beat in remaining tablespoon of cold butter, then beat in melted butter in a slow, steady stream until sauce thickens; consistency should be like mayonnaise. Taste and correct seasoning, and beat in parsley. Serve the sauce warm, not hot. It will keep for up to 5 days in the fridge.

1 cup fresh tarragon leaves, coarsely chopped
½ cup thinly sliced shallots
1 teaspoon whole black peppercorns
½ cup white wine vinegar
½ cup white wine
⅓ cup water
¼ cup chopped fresh tarragon
1 teaspoon drained capers
1 tablespoon cold unsalted butter
2 large egg yolks
3 tablespoons tarragon-vinegar reduction
8 tablespoons cold unsalted butter
1 tablespoon caper-tarragon compound butter
salt and cayenne pepper to taste
1 pinch freshly ground black pepper

Steps:

  • Place 1 cup tarragon, shallots, and peppercorns in a saucepan. Pour in white wine vinegar, white wine, and water. Place over medium-high heat and bring to a simmer; stir. Reduce heat to medium-low to maintain a gentle simmer and reduce liquid to about 3 tablespoons, 20 to 30 minutes. Remove from heat. Strain into a bowl through a fine mesh strainer, pressing vegetable/herb mixture to extract as much liquid as possible.
  • Place 1/4 cup chopped tarragon and capers in a mortar. Mash with a pestle about 1 minute. Add 1 tablespoon cold butter. Mash and pound with pestle until ingredients are thoroughly combined in a solid mass. Transfer to a piece of plastic wrap; wrap and chill.
  • Place egg yolks in a stainless steel (flameproof) mixing bowl; add 3 tablespoons tarragon/shallot reduction; whisk together. Add cold butter cubes. Place bowl over low to medium heat whisking constantly until sauce thickens, as you hold the bowl with a kitchen towel. After butter melts continue whisking; mixture will turn a lighter yellow color after 8 to 10 minutes. When mixture is nice and thick, reduce heat to low and stir in compound butter broken into chunks. Continue whisking. Remove from heat. Season with salt, cayenne pepper, and black pepper.

white wine vinegar - 3 tablespoons
black peppercorns - 6
mint leaves - 2 tablespoons, stems reserved
egg yolks - 2
butter - 10 tablespoons (150g), soft, almost melted

Steps:

  • Peel and finely chop the shallot, then put it in a small saucepan with the vinegar, peppercorns, and the stems from the mint leaves. Bring to a boil and watch it while it reduces to a tablespoon or so. Put the egg yolks into a heatproof bowl and place it over a pan of very lightly boiling water. The bowl should sit snugly in the top of the pan. Whisk the reduced vinegar into the egg yolks, holding back the debris in the pan, then slowly add the butter a little at a time, whisking almost constantly until it is thick and velvety.
  • Coarsely chop the mint leaves and stir them in, then taste for salt and pepper. Check that the sauce doesn't get too hot. It will keep warm until the lamb is cooked, with the occasional whisk, over the pan of water with the heat off.

1 tablespoon canola oil
12 tablespoons butter
2 shallots, finely chopped
2 sprigs fresh tarragon, chopped (2 or 3 springs)
2 sprigs fresh parsley, chopped
1/2 cup mango, diced
2/3 cup vinegar
3 egg yolks, at room temperature
2 tablespoons cold water
salt and pepper

Steps:

  • In a sauce pan, heat the oil and 1 tablespoon of butter. Add shallots, half the tarragon, half the parsley, 1/4 cup of the mangoes and the vinegar. Cook over gentle heat for 20 minutes or until only 1 tablespoon of liquid remains. Strain through a fine mesh sieve.
  • To clarify butter, melt the remaining 11 tablespoons of butter in a double boiler over hot heat. After several minutes, milk solids will settle at the bottom. Pour the clear butter into a bowl, leaving the milky residue behind.
  • To finish the Bearnaise, combine the egg yolks and the vinegar mixture in a double boiler over hot water. Whisk well. Gradually incorporate cold water, salt and pepper, continuing to whisk vigorously until the mixture becomes creamy. Remove the double boiler from the heat and continue whisking while adding the clarified butter in a thin stream.
  • Stir the remaining tarragon, parsley and mango into the mixture. Use Bearnaise immediately or reserve in a double boiler over hot but not boiling water.
