You need only 3 ingredients for these delicious vegan truffles and they are 100% natural. You can sweeten them with agave syrup if you like but I think they are sweet enough as is.

- Place mango in a bowl and cover with cold water. Soak until mango has softened, about 2 hours. Drain well.
- Combine mango, 2 1/2 cups of coconut, and coconut oil in a blender; blend until well combined and smooth. Add agave syrup if mixture is not sweet enough. Place in a bowl, cover, and refrigerate until mixture has hardened, about 2 hours.
- Roll into small balls and dredge in remaining 1 cup coconut flakes. Refrigerate until serving.

- Combine mango, 1/2 cup sugar, lemon juice, and salt in a food processor; puree until smooth. Add egg yolks; process for 15 seconds.
- Pour mango mixture through a sieve set over a large metal bowl, pressing on solids with the back of a spatula to release as much puree as possible. Discard solids in sieve.
- Fill a large saucepan with 2 inches of water; bring to a simmer. Set metal bowl on top; whisk puree until thickened and an instant-read thermometer inserted into the center registers 170 degrees F (77 degrees C), about 10 minutes.
- Place metal bowl on a towel on a flat work surface. Whisk in butter 1 piece at a time until blended. Cover with plastic wrap and refrigerate, 8 hours to overnight.
- Combine milk and coconut pudding mix in a saucepan. Bring to boil, stirring constantly until thickened. Remove from heat; fold in grated coconut and vanilla extract. Refrigerate until set, about 1 hour.
- Beat heavy cream in a chilled glass or metal bowl with an electric mixer until soft peaks form. Add 1/4 cup sugar gradually, continuing to beat until stiff peaks form.
- Place 1/2 of the pound cake cubes in the bottom of a large trifle bowl. Layer some of the bananas, pineapple, and strawberries on top. Spoon 1/2 of the mango puree and coconut pudding on top. Repeat layers with remaining pound cake, bananas, pineapple, strawberries, mango puree, and coconut pudding.
- Spoon whipped cream on top in big, fluffy swirls. Chill until serving.

- Put the gelatine in a bowl, cover with cold water and leave to soak for 10 mins. Meanwhile, warm the orange juice in a small pan over a low heat. Squeeze the water from the gelatine, then whisk into the juice over the heat until the gelatine has dissolved. Don't let the mixture bubble, or the jelly won't set. Stir in the mango pulp until combined.
- Divide the sponge fingers between four dessert glasses, breaking to fit if needed, and press into the bases. Pour over the rum, then add a few mango slices and four raspberries each. Spoon the jelly mixture into the glasses so the fruit and sponges are covered. Chill for 2 hrs until set.
- Meanwhile, heat the coconut milk in a saucepan over a medium heat, stirring continuously until reduced by about a third. Whisk in half the cream and all the vanilla, then bring everything to a simmer.
- Mix the egg yolks with 50g sugar, the cornflour and milk in a large heatproof bowl until smooth. Slowly pour in the hot coconut cream while whisking to incorporate. Return to the saucepan over a medium-low heat, stirring for 5-7 mins until you have a thick but pourable custard. Remove from the heat, pour into a bowl and cover the surface with baking parchment. Leave to cool completely, then chill for at least 1 hr, or up to 24 hrs.
- Pour the custard over the set jellies and chill for another 2 hrs.
- Heat the oven to 160C/140C fan/gas 5. Sprinkle the coconut flakes over a baking sheet and bake for 4 mins, or until just toasted.
- Whip the remaining cream with the rest of the sugar to soft peaks using an electric whisk and spoon over the custard layer. Sprinkle over the lime zest and toasted coconut. Will keep chilled for up to 24 hrs.

- Prepare the coconut chia pudding one day ahead. Combine the chia seeds, coconut milk, maple syrup and vanilla extract in a jar or bowl. Stir well to combine and then cover with lid or plastic wrap. Place in the fridge to chill overnight. The next day, stir well before using.
- Combine the mango, lime zest, juice, grated ginger and brown sugar. Stir to combine well and allow to marinate for 10 minutes, or up to 2 hours.
- Heat a medium-sized frypan on medium heat. Add the coconut and toast, tossing constantly, until the coconut is aromatic and golden. Remove from the pan immediately to prevent further browning.
- You'll need 6 glasses or jars for this trifle. Place a thick layer of gingernut biscuits at the bottom of every glass (use about ¾ of your biscuits), top with half of the mangoes, a few coconut flakes and then divide the coconut chia pudding among the glasses. Top with the remaining gingernut biscuits, the remaining mangoes and finish with coconut flakes. Refrigerate for 1-4 hours before serving.

- For rice pudding, stir 800ml coconut cream, milk, rice, sugars, vanilla seeds, pandan leaf and a pinch of salt in a saucepan over medium heat until sugar dissolves. Bring to a simmer and cook until rice is tender and most of the liquid is absorbed, stirring occasionally at first, then continuously as rice starts to thicken (30-35 minutes). Discard pandan, cool rice to room temperature, then stir in remaining coconut cream, transfer to a 2.5-litre serving bowl and refrigerate until chilled (2-3 hours).
- For jelly, stir mango, sugar and 750ml water in a large saucepan over medium-high heat until sugar dissolves, then simmer until mango is pulpy (5-6 minutes). Remove from heat, pulse with a handheld blender until puréed, stir in lime juice, then strain through a sieve (don't press on solids). Return 1 cup of mango liquid to pan, squeeze excess water from gelatine, add to pan and stir to dissolve. Add gelatine mixture to remaining mango liquid, stir to combine, cool to room temperature, then pour jelly over rice pudding about 1cm-2cm deep and refrigerate to set (3-4 hours). Can be refrigerated for up to a day covered loosely with plastic wrap.
- For coconut cake, preheat oven to 180C and line a 22cm cake tin with baking paper. Sieve flour and baking powder into a bowl, then stir in coconut, lime rind and a good pinch of salt. Whisk eggwhites and sugar in an electric mixer to soft peaks (6-7 minutes), then whisk in butter a little at a time until incorporated. Fold in flour mixture, then fold in coconut cream, transfer to prepared cake tin, smooth top and bake until golden brown and centre springs back when lightly pressed (20-25 minutes). Turn out onto a wire rack to cool. Cake will keep stored in an airtight container for up to 2 days.
- Coarsely crumble coconut cake and scatter over mango jelly, then drizzle with lime juice and rum to taste. Whisk cream and coconut cream to soft peaks, spoon onto cake, top with mango, lime rind and shaved coconut and serve with lime cheeks.

- Rinse raspberries, and set aside 8-10 berries, (or about 1/4 cup) on a paper towel to dry. Add the remaining berries to a bowl and sprinkle about a teaspoon of white sugar over the berries. Stir, then move to the fridge. This will help bring out the juices in the berries.
- In the bowl of an electric mixer, add cream cheese and blend until smooth. While blending, add a couple tablespoons (estimate) of heavy cream and whip until well incorporated with the cream cheese. - To make the jelly, bring 200ml of juice to the boil. Stir in the gelatine, whisking with a fork until dissolved. Add the remaining juice, and stir until well combined. Pour the jelly liwuif in a serving glass dish or individual glasses and set in the fridge for at least 3-4 hours. Wrap with some cling wrap.
- Scoop out the coconut cream (minus the watery liquid) into a large bowl. Whip it together with vanilla and lemon juice for 1-2 minutes using an electric whisk or by hand (if you’re strong).
- Arrange the layers: mango sliced on top of jelly, followed by diced cake, then sliced banana, some nuts, some coconut cream or double cream, berries, nuts and more mango on top. Sprinkle some pomegranate or other berries for extra colour. That’s it! Keep in the fridge until service if making ahead of time, but ideally prepare all ingredients and keep them in the fridge and layer the dish just before service.
