Mantecadas - Sweet bread has a culture of its own in Mexico and is a tradition that has been embraced and deeply loved for generations. We have primarily Spain and France to thank for that, as their influence is why we have such a passion for sweet pastry.

Number Of Ingredients 11

2 large eggs
125 grams of sugar (½ cup + 1 tbs*)
½ cup milk
½ cup vegetable oil
1 tsp vanilla or orange essence**
1 tsp orange zest (optional)
125 grams of All Purpose flour (1 cup minus 1 tbs)
1 teaspoon baking powder
1 teaspoon instant yeast
1 pinch of salt
Bowls (whisk, measuring cups and spoons, muffin paper liners, muffin pan, pitcher or a ladle to pour the batter.)

Steps:

  • Preheat oven to 400F. Place muffin paper liners in muffin pan.
  • Sift together flour, baking powder and yeast in one medium size bowl, and set aside. Place egg and sugar in a large bowl and whisk until sugar has dissolved.
  • Add milk and the flavoring of your choice (vanilla, orange essence plus orange zest) and mix.
  • Incorporate the oil in a gentle stream and whisk again to form a homogenous mixture.
  • Slowly stir in the dry ingredients plus the pinch of salt, mixing gently until you have a very uniform batter. Do not over mix. Let the batter rest for 15 minutes.
  • With the help of a pitcher or a ladle, pour the batter into the already prepared muffin pan. Fill it up just a little bit bellow the edge. See picture above.
  • Carefully place in the preheated oven and bake for 20 minutes. Remove from oven and cool for about 5 minutes on a cooling rack. They keep well for 2 to 3 days when stored in an airtight container.

These traditional Spanish crumble cakes, or mantecados, crumble in your hand-but the anise-flavored cookie also melts in your mouth.

2 1/4 cups vegetable shortening
1 cup vegetable oil
1 2/3 cups granulated sugar
4 large egg yolks
2 shots of anisette (or other anise-flavored liqueur)
1 lemon peel ( grated )
2 tablespoons fresh lemon juice
1/2 teaspoon cinnamon
7 cups unbleached white flour (plus 1/4 to 1/2 cup more, if needed)
1/2 teaspoon baking soda
1 large egg white (beaten for glaze)
Optional: Sugar and cinnamon for sprinkling

Steps:

  • Gather the ingredients.
  • Preheat the oven to 325 F.
  • In a large mixing bowl, use a hand mixer to whip the vegetable shortening with the oil. Add the sugar and mix until smooth. Add the egg yolks, anisette, lemon peel, lemon juice, and cinnamon , and mix together.
  • Add 7 of the cups flour, 1 cup at a time to the mixture, then add baking soda. Be sure to mix well. The dough should be smooth and soft.
  • Using a teaspoon, scoop out a dollop of dough. Form balls about the size of walnuts using your hands. If the dough is too sticky to roll into balls, mix in additional flour (from 1/4 to 1/2 cup).
  • Place balls onto an ungreased cookie sheet . Lightly press down on each ball to flatten slightly. Brush the beaten egg white on the top of each cookie. Bake cookies until they begin to turn light brown on the bottom edges, about 15 to 20 minutes.
  • Let the cookies cool 5 minutes before removing from the cookie sheet, as they are very delicate. Sprinkle with sugar and cinnamon if desired.
  • Enjoy.

These are the Platonic ideal of our packaged cheese puffs, with the texture of macaroons and the flavors of fresh cheese and fragrant spices. Serve as a snack or stand-up food. You can prepare the dough ahead of time and refrigerate it until you are ready to bake or make the biscuits themselves ahead of time and store them in an airtight container for up to a day.

Yield makes 4 servings

Number Of Ingredients 8

8 tablespoons (1 stick) cold butter, cubed
2 cups grated Emmental (Swiss), Gruyère, Cantal, or good-quality Cheddar cheese
1 1/2 cups flour
1 egg, lightly beaten
1/2 teaspoon salt
1/2 teaspoon cayenne
3 teaspoons cumin seeds, lightly toasted in a dry skillet until fragrant
1 tablespoon paprika, optional

Steps:

  • Preheat the oven to 400°F. Put the butter, cheese, flour, egg, salt, cayenne, and cumin into the bowl of a food processor and pulse, just until the mixture resembles coarse meal; do not over process. (You can also use a pastry cutter or a fork to cut the mixture to the same consistency.)
  • Form the mixture into 1-inch balls. Line the balls on a nonstick or lightly greased baking sheet, leaving 2 inches between them. Slightly flatten each ball with your fingers.
  • Bake until the pastries puff and become golden brown, about 10 minutes. Cool completely on a wire rack, then garnish with paprika if you like and serve within a few hours.
  • Omit the cumin and paprika; increase the cayenne to 1 teaspoon, or to taste.

One 1 1/2-pound flank steak, pounded thin
2 teaspoons dried oregano
Salt and freshly ground black pepper
4 cups chicken stock
2 Idaho potatoes, diced
1 small jar jalapenos
1 large onion, chopped
1 can whole chopped tomatoes
Flour tortillas, for serving

Steps:

  • Preheat the broiler.
  • Sprinkle the steak with the oregano, salt and pepper and place on a baking sheet. Broil the steak until well done, about 6 minutes per side. Remove from the oven and let cool before slicing. Slice or shred the steak into thin pieces and set aside.
  • In a large pot, combine the chicken stock, potatoes, jalapenos, onions and tomatoes, and bring to a boil over medium-high heat. Reduce the heat and add the shredded steak. Simmer the mixture for 2 hours until thickened.
  • Serve the Manchaca with warm flour tortillas to wrap.

10 tablespoons butter
2 cups cheddar cheese, coarsely grated
2 cups flour
1 egg yolk
1/2 teaspoon salt
2 teaspoons cumin seeds
1 pinch cayenne pepper
2 -3 pinches paprika

Steps:

  • Preheat the oven to 350F and line a baking sheet with wax or parchment paper.
  • Place all the ingredients except the paprika in a food processor.
  • Pulse the mixture in quick, short spurts until it resembles coarse breadcrumbs, being careful not to overwork the mixture.
  • Roll a little of the mixture into a ball, place it on the baking sheet and flatten slightly with your fingers.
  • Repeat with the remaining mixture.
  • Bake for 10-12 minutes or until light golden and slightly puffed.
  • Sprinkle the crackers with paprika and allow them to cool completely on the baking sheet before serving.

1 tablespoon shortening
1 ½ pounds ground beef
2 cups sliced onion
1 clove garlic, minced
1 tablespoon all-purpose flour
1 ½ teaspoons salt
¼ teaspoon ground black pepper
1 teaspoon sugar
1 teaspoon dried basil
½ teaspoon ground cinnamon
½ teaspoon dried oregano
1 (4 ounce) can mushrooms, drained
1 (15 ounce) can tomato sauce
4 potatoes, thinly sliced
1 cup shredded Swiss cheese

Steps:

  • Melt the shortening in a large skillet over medium-high heat. Add the ground beef, and cook, stirring to crumble, until evenly browned. Mix in the onion and garlic; cook until tender. Drain excess grease, and sprinkle in the flour, salt, pepper, sugar, basil, cinnamon and oregano. Stir in the mushrooms and tomato sauce, and simmer for 15 minutes over low heat.
  • Meanwhile, place the potatoes in a microwave-safe bowl or dish, and cook for 5 to 6 minutes, stirring occasionally, or until about halfway done.
  • Preheat the oven to 350 degrees F (175 degrees C). In the bottom of a 9x13 inch baking dish, or shallow casserole dish of similar size, layer half of the potatoes. Spread half of the meat sauce over them, then sprinkle with half of the cheese. Repeat the layers ending with cheese on top.
  • Bake for 35 minutes in the preheated oven, until potatoes are tender and cheese is browned.

This is my cross-cultural take on a frequently served Swedish snack. If you're making the North African mantecaos specifically for this dish, you might omit the cumin, but I think they're more interesting with it. You can also make these with standard biscuits, in which case they're pretty simple.

Yield makes 4 servings

Number Of Ingredients 8

2 tablespoons butter or neutral oil, like corn or grapeseed
5 shallots, sliced
2 cups diced cooked ham, pork, or slab bacon
1/2 cup sour cream
1 egg
1/4 cup chopped fresh parsley or dill leaves
Black pepper to taste
Cheese Mantecaos (page 35), cooled and sliced in half horizontally

Steps:

  • Melt the butter in a skillet over medium heat. Add the shallots and cook until soft and golden, about 3 minutes. Lower the heat and add the meat; cook, stirring occasionally, until hot, about 5 minutes.
  • Meanwhile, whisk together the sour cream, egg, and herbs. Add to the meat mixture and cook until just heated through. Season with pepper and spoon into the Cheese Mantecaos, making little sandwiches. Serve immediately.
