Salmon With Maple-Chipotle Sauce image

Rachael Ray's recipe for Chipotle Cashew Chicken inspired me to create this dish. It's an interesting combination of flavors--sweet, smoky, spicy and nutty. I'm sure the marinade could be used on chicken or pork as well (of course keeping in mind varying cooking times of different meats). I oven-roasted my salmon, but it would also be excellent grilled.

4 salmon fillets, skinless
1 cup maple syrup, real
1/3 cup soy sauce
2 tablespoons lemon juice
1 chipotle chile, chopped (canned chipotle en adobo)
2 teaspoons adobo sauce
1/2 teaspoon garlic powder
1/8 teaspoon black pepper
1/4 cup cashews, crushed, toasted (optional)

Steps:

  • Preheat oven to 375 degrees.
  • Whisk together maple syrup, soy sauce, lemon juice, chipotle chili, garlic powder and black pepper in a shallow baking dish.
  • Lay salmon in baking dish, coating both sides evenly. Marinate for 30 minutes at room temperature or refrigerated for 1 hour.
  • Carefully pour off marinade into a saucepan. Bring to a boil, cooking for 5 minutes or until slightly thickened.
  • Roast salmon in the same baking dish in which it was marinated for 12-15 minutes or until fish flakes easily when forked.
  • Serve salmon with warm maple-chipotle sauce drizzled atop or on the side. If desired, sprinkle top of salmon with toasted cashews.

24 ounces salmon fillets, skin removed

Steps:

  • Whisk syrup, soy sauce and adobo in a pie dish to blend.
  • Add the salmon, turning to coat well.
  • Marinate 30 minutes, turning occasionally.
  • Drain marinade into a small saucepan.
  • Boil marinade until reduced to 1/2 cup glaze, about 5 minutes.
  • Heat a heavy nonstick skillet over medium heat.
  • Add salmon and cook until slightly charred outside and just opaque in center, about 3 minutes on each side.
  • Place 1 salmon fillet on each of 4 plates and drizzle with glaze.

Kosher salt and freshly ground black pepper
Four 6-ounce salmon fillets, skin off

Steps:

  • Preheat the oven to 400 degrees F.
  • In a small bowl, combine the brown sugar, maple syrup, olive oil, teriyaki sauce and some salt and pepper. Whisk until fully combined.
  • Arrange the salmon in a single layer in a baking dish. Brush the glaze over the fish, coating evenly. Bake until the fish is cooked through, about 15 minutes.

4 tablespoons maple syrup, divided
1 tablespoon low-sodium soy sauce (such as Bragg®)
1 tablespoon fresh lemon juice
1 teaspoon freshly grated ginger
2 (6 ounce) skin-on center-cut salmon fillets
¼ teaspoon Cajun seasoning
1 serving cooking spray
2 slices fresh pineapple, halved
2 wedges lemon

Steps:

¼ cup maple syrup
2 tablespoons orange juice
2 tablespoons soy sauce
1 teaspoon ground ginger
1 clove garlic, minced
pepper, to taste
salt, to taste
4 oz salmon fillet, 2 fillets
fresh parsley, for garnish
1 lb broccoli floret
salt, to taste
2 tablespoons butter
1 tablespoon soy sauce
1 clove garlic, minced
1 teaspoon lemon zest
1 teaspoon red pepper flakes

Steps:

  • For the salmon, heat vegetable oil on medium-high in a cast-iron skillet.
  • For the broccoli, fill a medium pot halfway with water. Add a dash of salt and start boiling water.
  • In the meantime, whisk together maple syrup, orange juice, soy sauce, garlic, salt, and pepper in a medium bowl.
  • Set aside 2 tablespoons for topping later.
  • Place salmon fillets inside the bowl and make sure each side is covered with sauce.
  • Sear the salmon 2-3 minutes on each side.
  • Brush the tops with the sauce set aside.
  • With the pot of water boiling, add the broccoli and cover lid. Blanch for 2 minutes.
  • Drain under cold water to stop the cooking.
  • In the drained pot of broccoli, stir in butter, soy sauce, red pepper flakes, some lemon zest, and garlic on low heat. Mix until broccoli is well-coated.
  • On each plate, serve a filet of salmon and scoop of broccoli.
  • Top with reserved marinade and sprinkle parsley for garnish.
  • Enjoy!

1 tablespoon brown sugar
1 tablespoon cider vinegar

1 salmon fillet (2 pounds)

Steps:
