SAUSAGES WITH PEPPERS AND ONIONS



Sausages with Peppers and Onions image

3 tablespoons extra-virgin olive oil
1 1/2 pounds sausages (spicy Italian, mild Italian, plant-based, etc.)
2 orange bell peppers, seeded and sliced
2 red bell peppers, seeded and sliced
2 yellow bell peppers, seeded and sliced
2 white onions, halved and sliced
Kosher salt and freshly ground black pepper
4 cloves garlic, sliced
1 tablespoon apple cider vinegar
2 tablespoons chopped fresh basil

Steps:

  • Heat a large braiser or high-sided skillet over medium-high heat. Add 1 tablespoon olive oil and swirl to coat the skillet. Once the oil is shimmering, add the sausages and brown on all sides until browned but not cooked through, 5 to 7 minutes. Remove them to a plate and let cool until cool enough to handle, then slice them into 1 1/2-inch pieces. Set aside.
  • Turn the heat down to medium-low and add the remaining 2 tablespoons olive oil to the skillet. Add the peppers and onions and season with 1 teaspoon salt and 1/4 teaspoon pepper. Cook the peppers and onions, stirring occasionally, until they begin to soften, about 5 minutes. Add the garlic and stir to incorporate. Continue cooking the vegetables over low heat until they're very soft, beginning to caramelize and have some spots of browning, about 40 minutes. If the vegetables start to look like they're getting too browned too quickly, add a splash of water to deglaze.
  • Add the apple cider vinegar and the sausages to the skillet and stir to incorporate. Continue cooking until the sausages are cooked through, 10 to 15 minutes. Turn the heat off.
  • Garnish with the basil and serve immediately.

1kg lamb shoulder, trimmed of excess fat, then cubed
1½ tbsp olive oil
1 large onion , roughly chopped
1 red pepper , halved, deseeded and sliced
1 yellow pepper , halved, deseeded and sliced
1 green pepper , halved, deseeded and sliced
2 garlic cloves , grated to a purée
½ tsp paprika
250ml medium sherry
250ml lamb stock
generous pinch of saffron threads
1 tbsp sherry vinegar
1½ tbsp honey
1 tbsp finely chopped parsley , or chopped toasted blanched almonds
cooked couscous , to serve

Steps:

  • Make sure your lamb isn't too damp - pat it dry with kitchen paper if you need to, otherwise it won't colour well. Heat 1 tbsp olive oil in a large casserole dish and brown the lamb over a high heat in batches (if you crowd the pan the meat will sweat and not brown). Remove with a slotted spoon as you go. When all the lamb is browned, add the remaining oil and cook the onion and peppers over a medium heat until the onion is golden and the vegetables are softened. Add the garlic and paprika, and cook for a further 1 min, then add the sherry and bring to a simmer.
  • Put all the lamb back in the pan, along with the stock, saffron, sherry vinegar and honey. Season and bring to just under the boil. Turn the heat down, cover the pan and leave to cook very gently for 2 hrs, turning the meat every so often.
  • In the last half hour of cooking time, remove the lid so that the sherry and stock can reduce. You want to end up with completely tender meat in a flavoursome gravy - how long this takes will depend on how wide your pan is so you may need to give it longer than 30 mins. Check the seasoning. You're unlikely to need to adjust the vinegar or honey but you might want to sweeten the dish slightly. Scatter the parsley or almonds on top (or use both). Serve with the couscous.

2 x packets flavoured couscous (or plain)
50g bought or homemade garlic butter
2 tbsp olive oil
4 lamb leg steaks
250g roasted pepper strips from the deli, or 285g jar roasted pepper strips, drained
20 Kalamata olives
handful mint or flatleaf parsley
1 lemon
4 tbsp toasted flaked almonds

Steps:

  • Put the kettle on to boil and tip both packets of couscous into a heatproof bowl. Melt the garlic butter in a frying pan over a medium heat with a tablespoon of the oil. Add the lamb steaks and fry for 4 minutes on each side. Pour 400ml/14fl oz boiling water over the couscous, stir in the remaining oil and set aside to absorb.
  • Tip the peppers and olives into the pan with the lamb. Roughly chop the herbs, add and continue cooking until the lamb is cooked. Squeeze in the lemon juice, season.
  • Toss the almonds into the couscous and spoon on to serving plates. Top with the lamb, peppers, olives and juices, and serve.

1 lb ground lamb
2 large green peppers
2 small onions
1 1/4 ounces onion soup mix
1 egg
2 teaspoons minced garlic cloves
1 1/2 cups tomato sauce (we used Chunky Mushroom Ragu)
1 cup breadcrumbs
2 cups Italian cheese blend
cooking spray

Steps:

  • Preheat oven to 375 degrees Fahrenheit
  • Take ground lamb and add onions, soup mix , bread crumbs and egg and fold in together.
  • Wash and core peppers. Cut them into halves down the middle.
  • Pack the lamb meat into the pepper halves firmly.
  • Bake the peppers uncovered in a glass dish for 30 mins or until meat is browned.
  • Remove peppers from oven and spoon tomato sauce over peppers.
  • Bake for an additional 15 minutes.
  • Take peppers out.
  • Raise oven temp to broil.
  • Cover peppers over with cheese and bake until cheese is golden brown.
  • Remove from oven and serve hot.

This is a traditional preparation from the Abruzzo region of Italy. Subtly yet finely flavored, in my opinion. We like it best served with roasted potatoes. It may look like a long complicated process, but it really isn't!

2 red bell peppers
2 yellow bell peppers
2 lbs lamb, in 1 1nch cubes (lean, I use loin)
1/4 cup olive oil
4 garlic cloves, whole and peeled
1 cup dry white wine
2 cups tomatoes, seeded and chopped
1 teaspoon salt (to taste)
1/2 teaspoon white pepper (to taste)
boiling water, as needed

Steps:

  • Pre-heat oven to 425°F.
  • When the oven has reached temperature, cut peppers in quarters and lay them skin side up on a foil-covered baking sheet; place in the oven and roast until the skins are blackened, about 15-20 minutes (see step 9 for continuing with pepper preparation).
  • Meanwhile, heat the oil in a large heavy-bottomed pot over moderate heat.
  • Add garlic cloves and saute until they turn golden; remove them and discard.
  • Increase the heat slightly, then add the lamb to the pot and saute until all the pieces are well browned (stirring as needed).
  • Add the white wine and continue to cook until the alcohol has cooked off, about 5 minutes (the raw alcohol smell will disappear).
  • Add the tomatoes, salt and pepper and cook for 10 minutes at a strong simmer (adjust heat if need be) and stirring often; your liquid should be cooking down, but not completely disappearing.
  • At this point, add enough boiling water just to cover the mixture; cover the pot, and simmer for 20 minutes, or until the meat becomes tender.
  • Remove peppers from the oven and place in a paper bag, or a bowl covered by a plate and allow to rest 10-15 minutes.
  • After this time, carefully remove the skins from the peppers, as well as seeds and stems.
  • Cut each quarter into three strips, and set aside.
  • When the lamb is cooked, add the pepper strips to the pot and continue to cook (lid off) only just until the peppers are warmed through and the sauce has considerably reduced (you don't want it to completely disappear, but you don't want it too liquid).
  • Check seasoning (salt and pepper) and add more if desired.
  • Serve and enjoy.
