Mexican Shrimp Cocktail. This shrimp cocktail is perfectly tart, spicy, and fresh! Cold and refreshing this is a perfect dish for a hot day!

Ingredients

1 lb shrimp ((medium) peeled and deveined)
1 cucumber (peeled and diced)
1 jalapeno (seeds & membranes removed, diced)
2 roma tomatoes (diced)
½ cup red onion (diced)
1½ cup clamato juice
2 tbsp lime juice (freshly squeezed)
1 tsp salt
½ tsp black pepper
½-1 tsp sugar
hot sauce (as desired)

Steps:

Bring a medium size pot of water to boil (can add any aromatics as desired: onion, garlic, cilantro, lemon juice, etc). Add the shrimp and cook for 2-3 minutes until the shrimp is pink in color. Remove the shrimp from the water and place in an ice bath or rinse with cold water.
In a large glass bowl combine the diced cucumber, jalapeno, tomatoes, red onion, and cilantro. Stir together. Add in the shrimp.
Pour the clamato juice and lime juice over the ingredients in the bowl. Add the salt and pepper. Taste and adjust if needed. Add sugar if desired to cut the acidity. Add hot sauce as desired.

I first tried something similar to this in San Antonio and could never find a recipe that really recaptured what I had there. I experimented and finally came up with this. Anyone who has tried it has begged for the recipe. Try it with tortilla chips!

2 pounds cooked shrimp, peeled and deveined
1 tablespoon crushed garlic
½ cup finely chopped red onion
¼ cup fresh cilantro, chopped
1 ½ cups tomato and clam juice cocktail
¼ cup ketchup
¼ cup fresh lime juice
1 teaspoon hot pepper sauce, or to taste
¼ cup prepared horseradish
salt to taste
1 ripe avocado - peeled, pitted and chopped

Steps:

Place the shrimp in a large bowl. Stir garlic, red onion, and cilantro. Mix in tomato and clam juice cocktail, ketchup, lime juice, hot pepper sauce, and horseradish. Season with salt. Gently stir in avocado. Cover, and refrigerate 2 to 3 hours. Serve in one large bowl or ladle into individual bowls.

Costco has a shrimp marinated with cilantro that make this recipe super EASY. This is super for a party you can put all the ingredients in and hand them out. (to serve immediately you should use pre marinated shrimp)

Ingredients

1 1/2 lbs medium shrimp, to large
1/2 cup ketchup, prefer organic
2 avocados, diced
1 medium red onion, diced
1/2 bunch fresh cilantro (pull out the stems and chop up the leaves)
3 limes
1 cucumber, diced
sea salt and pepper
12 ounces orange juice

Steps:

Take 4 Pint size beer glasses or mugs.
Load each with Shrimp to cover just under 1/2 the mug.
Add catchup to each.
add 1/2 avocado to each cup.
add 1/4 of the onion, cilantro, cucumber,.
Squeeze the juice of a half of each lime into each glass.
I like to cut a little bit of the lime pulp to put in each.
shake of salt and pepper into each glass.
add some OJ to each glass to get them to about 1/2 inch from the top. Gently stir until mixed.
Take remaining lime and quarter to put on the top of each glass.
BEST option refrigerate for 1 hour and serve. (note to spice up add one shake of tobasco to each.).

Season with salt.
