- Flatten chicken to 1/2-in. thickness. Sprinkle with salt and pepper. In a large skillet, cook chicken in oil for 5-6 minutes on each side or until no longer pink. Remove and keep warm. , Meanwhile, in a small bowl, combine cornstarch and cider until smooth. Stir in syrup and onion powder; add to skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Add chicken and turn to coat.

- Whisk maple syrup, Dijon mustard, and balsamic vinegar together in a bowl. Pour over chicken thighs in a bowl and marinate for 30 minutes.
- Preheat the oven to 350 degrees F (175 degrees C). Spray a casserole dish with cooking spray.
- Place chicken in the prepared casserole dish and pour remaining marinade on top.
- Bake in the preheated oven for 25 minutes. Flip chicken and continue baking until juices run clear and sauce is thick, about 25 minutes more. Serve with sauce over chicken.

- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a baking dish with olive oil.
- Combine maple syrup, soy sauce, garlic oil, ginger powder, sesame seeds, pepper, and cayenne in a bowl.
- Neatly arrange chicken thighs in the baking dish. Pour maple sauce over the chicken thighs. Use tongs or gloved hands to turn thighs over in sauce until fully coated. Cover with aluminum foil.
- Bake in the preheated oven for 40 minutes. Uncover baking dish and turn thighs over. Continue baking until an instant-read thermometer inserted into the center reads 200 degrees F (93 degrees C), about 15 minutes. Turn over once more and sprinkle with parsley. Let rest for 10 minutes before serving.

MAPLE ROASTED CHICKEN
This sweet, well-seasoned dish is great for Sunday dinner. You only have to marinate for an hour, but you could do it up to overnight. Set it up the night before, then simply roast the chicken just before serving. The sticky glaze adds color, but its sweetness is not overpowering, getting some good balance from the vinegar and the smoky paprika. Pair the roasted chicken with sweet potatoes and brussels sprouts or bitter greens, like collard greens and kale, and use any leftovers in a salad or rice bowl the next day.

- Using paper towels, pat the chicken dry and trim off any excess fat. Place in a large resealable plastic bag or medium bowl with a lid.
- In a medium bowl, stir together the maple syrup, apple cider vinegar, garlic powder, onion powder, smoked paprika and 2 tablespoons salt. Pour into the bag with the chicken, seal and refrigerate overnight or for at least 1 hour.
- Heat oven to 400 degrees. Pull the brined chicken out of the fridge, drain off the brine and pat the chicken dry. On a rimmed sheet pan, rub the chicken with the olive oil, 1 teaspoon salt and the pepper.
- Set it skin side up and roast for 25 to 35 minutes, or until the juices run clear when pierced and the internal temperature reaches 165 degrees.
- As the chicken roasts, make the glaze: Add the maple syrup, cinnamon, salt, fennel, paprika and ½ cup water to a small saucepan. Bring to a simmer over medium heat and cook for 10 to 15 minutes, or until the mixture has reduced and thickened enough to coat the back of a wooden spoon.
- Brush the cooked thighs with the glaze and set under the broiler for 30 seconds to 1 minute, keeping an eye on the glaze as it is quick to burn. Serve hot.

- With a sharp knife, cut leg quarters at the joints. Sprinkle chicken with 3/4 teaspoon salt and pepper. , In a large bowl, combine the flour, rosemary, thyme, sage, marjoram and parsley. In a shallow bowl, combine the egg, milk and lemon juice. Add chicken pieces, 1 at a time, to flour mixture. Toss to coat. Dip chicken in egg mixture and coat again with flour mixture., In a 12-in. cast-iron or other ovenproof skillet, heat 1/2 cup oil. This dish was made for my family by the daughter of family friends who stayed with us while her parents traveled back to Poland for a few weeks, we were in junior high at the time. It's so simple but SO good, I still make it to this day. It is very garlic-y so beware!

- Preheat oven to 400 degrees F.
- In a large roasting pan or dish, melt the butter in the oven.
- Peel and cube the potatoes.
- Place the chicken pieces, potatoes and garlic cloves in the buttery pan, turning to coat. Arrange chicken so skin sides are facing up.
- Sprinkle lightly with salt.
- Bake 40 - 45 minutes basting with pan juices every 20 minutes.

- In a bowl, mix together all the ingredients for the marinade, give it a taste, adjust to your preference, score the top of the chicken in a few places with a sharp knife, place the chicken in a large resealable bag, pour over the marinade, seal the bag and shake it around to make sure the chicken is well coated in the marinade. Pop it in the fridge for a minimum of 6 hours or overnight making sure to flip it around a few times.
- Line a large baking sheet with parchment paper, drizzle a little oil on it and set aside. Also line a 9x13 inch baking pan with parchment paper and set that aside as well. Preheat your oven to 425 degrees (400 if you feel like your oven gets really hot)
- Boil the sweet potatoes until tender (but not soft and mushy) allow them to cool a bit, then cut them into thick rounds, place them on the prepared pan, smash them lightly with a fork or your hand, top them with a dot of butter. Meanwhile in a bowl, toss together the Brussels sprouts with the oil, salt and Parm, scatter them on the other side of the baking sheet along side the potatoes.
- Add the chicken to the prepared roasting pan (along with the marinade, and place it skin side up) drizzle some of the marinade on the sweet potatoes, pop both baking pans in the oven, roast for about 30 minutes (the veggies might get done sooner so keep your eye out for them) and let the chicken continue roasting until deeply caramelized (glazing it with the marinade every 10 minutes).
