MOSAIC JELL-O
Put JELL-O back on the menu with the Mosaic JELL-O recipe from My Food and Family! This Mosaic JELL-O is made with strawberry, lemon and orange-flavored gelatin and evaporated milk to create a delicious creamy sweetened fruit flavor.

Steps:
- Bring 4-1/2 cups water to boil. Dissolve strawberry, orange and 1 pkg. lemon gelatin mix each in 1-1/2 cups boiling water in separate bowls. Pour each flavor gelatin into separate 8-inch square pan. Refrigerate 40 min. or until firm. Cut into 1/2-inch cubes; refrigerate until ready to use.
- Bring remaining water to boil. Add to remaining lemon gelatin mixes; stir until dissolved. Stir in evaporated milk. Pour into 12-cup fluted tube pan or gelatin mold sprayed with cooking spray. Refrigerate 30 min.
- Add gelatin cubes to gelatin in pan; stir gently. Refrigerate 2 hours or until firm. Unmold before serving.

MAPLE JELL-O STYLE GELATIN
From a recipe booklet out out by the Quebec Federation of Maple Producers. I haven't tried it yet but it sounds delicious and different. I'm translating from French so if something is unclear please ask me.

Steps:
- Place gelatin in a small bowl, add 60 ml (1/4 cup) fruit juice.
- Let sit fore 5 minutes.
- Meanwhile, heat maple syrup in a pot.
- Add the gelatin to the warm syrup and stir until completely dissolved.
- Add the rest of the fruit juice and pour into a mold.
- Refrigerate until the jello sets.
- To serve, cut into cubes and place in a dessert coupe.
- garnish with the fruit salad or berries.

Bright cubes of different colors and flavors of Jell-o glitter in a creamy, lemony base with peaches and pecans.

- Stir 1 cup of the boiling water into each flavor dry gelatin mix in separate bowls 2 min. until dissolved. Pour each flavor into separate 8-inch square pan. Refrigerate 1 hour or until set.
- Meanwhile, mix evaporated milk, condensed milk, peaches and lemon zest; refrigerate until ready to use.
- Cut gelatin into 1/2-inch cubes; place in large bowl. Add milk mixture and pecans; mix gently. Store leftovers in refrigerator.
