1 (3/4 lb) sweet potato, peeled
1 tablespoon philadelphia light cream cheese spread
2 tablespoons maple syrup
1/8 teaspoon salt
16 ritz entertaining selections buttercrisp crackers
16 pecan halves, toasted
16 dried cranberries

Steps:

  • Pierce potato with fork; place in small microwaveable bowl. Microwave on HIGH 5 minutes or until tender. Mash potato with potato masher or fork until smooth.
  • Add cream cheese spread, syrup and salt; mix well. Spoon evenly onto crackers.
  • Top each with a pecan half and cranberry. Serve warm.

6 large sweet potatoes
4 cups packed brown sugar
2 cups butter
1 cup pure maple syrup
¼ cup pure vanilla extract
1 teaspoon salt

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Place sweet potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain. Peel sweet potatoes once they are cool enough to handle. Slice sweet potatoes into 1-inch thick rounds; arrange in a 9x13-inch casserole dish.
  • Mix brown sugar, butter, maple syrup, vanilla extract, and salt together in a saucepan; bring to a boil, stirring often, until sugar has dissolved and butter has melted, 5 to 10 minutes. Pour sauce over sliced sweet potatoes.
  • Bake in the preheated oven until heated through and sauce has slightly reduced, about 1 hour. Serve hot.

These sweet potatoes are a Thanksgiving favorite at my house.

4 large sweet potatoes
½ cup softened butter
1 cup heavy cream
2 tablespoons vanilla extract
½ cup packed light brown sugar
1 teaspoon salt
½ cup maple syrup
1 cup chopped pecans
2 eggs, beaten
2 tablespoons maple syrup
¼ cup chopped pecans

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil.
  • Place sweet potatoes onto the prepared baking sheet, and bake in preheated oven until soft, 45 minutes to 1 hour. Remove from the oven and allow to cool slightly before peeling and placing into a large bowl.
  • Preheat oven to 350 degrees F (175 degrees C). Butter a 2 quart casserole dish.
  • Mash the warm potatoes along with butter, cream, vanilla extract, brown sugar, salt, 1/2 cup maple syrup, 1 cup chopped pecans, and eggs. Spread mashed sweet potato into the prepared baking dish, and sprinkle with the remaining 2 tablespoons of maple syrup, and 1/4 cup of pecans.
  • Bake sweet potatoes in preheated oven until thoroughly hot, 30 to 35 minutes.

Maple Glazed Sweet Potatoes with Bacon and Caramelized Onions image

I made this for Thanksgiving dinner and my family went crazy over it. It is simple, looks great on the table and has already been requested for Christmas dinner! This recipe can be adjusted as you like by adding more or less bacon and onions.

4 pounds sweet potatoes, peeled and cut in 1-inch chunks
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon ground black pepper
5 slices smoked bacon, chopped
1 pound onions, thinly sliced
1 cup pure maple syrup
2 teaspoons fresh thyme

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Toss the sweet potato chunks, olive oil, salt, and black pepper in a large bowl, and spread the sweet potatoes out onto a large rimmed baking sheet.
  • Roast in the preheated oven until browned and tender, about 40 minutes; stir after the first 20 minutes.
  • Cook the bacon until crisp and brown in a large skillet over medium heat, about 10 minutes; transfer bacon to a bowl, but leave the grease in the skillet. Cook the onions in the bacon grease until browned, about 10 minutes, stirring frequently. Reduce heat to low, and cook the onions until very soft, brown, and sweet, another 10 to 15 minutes. Stir often. Mix the onions with the bacon in the bowl, and set aside.
  • Pour the maple syrup into the hot skillet with the thyme, and bring to a rolling boil. Boil the syrup until reduced by half, 3 to 4 minutes. Place the roasted sweet potatoes and onion-bacon mixture into the skillet, and stir to coat the vegetables with maple glaze. Transfer to a serving dish.

I created these candied sweet potatoes with maple syrup to entice my young children to eat sweet potatoes. They didn't like them plain and none of us liked recipes using marshmallows, pineapple, etc. This slightly-sweet version fit the bill. The kids are grown-up now, but still request this be served every Thanksgiving.

2 ½ pounds sweet potatoes, peeled and cubed
butter-flavored nonstick cooking spray
2 teaspoons ground cinnamon
1 teaspoon salt
1 teaspoon ground black pepper
½ teaspoon ground nutmeg
½ teaspoon ground allspice
¼ cup pure maple syrup
3 tablespoons salted butter, melted

Steps:

  • Bring a pot of water to a boil; add sweet potatoes. Continue to boil until they are easily pierced with a knife, 15 to 20 minutes. Drain.
  • While potatoes boil, preheat the oven to 350 degrees F (175 degrees C). Spray an 8x8-inch baking pan with cooking spray.
  • Mash the potatoes thoroughly in a bowl. Mix cinnamon, salt, pepper, nutmeg, and allspice together and stir into the potatoes. Transfer to the prepared baking pan. Mix maple syrup and butter together and drizzle over top.
  • Bake in the preheated oven until heated through, 5 to 10 minutes.

Often the most favorite holiday side dishes are the simplest. This recipe combines roasted sweet potatoes with butter and maple syrup in the food processor with very little effort.

4 pounds sweet potatoes (about 7 medium)
4 tablespoons unsalted butter, melted
1/4 cup pure maple syrup
Coarse salt and ground pepper

Steps:

  • Preheat oven to 400 degrees. Prick sweet potatoes all over with a fork. Place on a rimmed baking sheet. Bake until very tender when pierced with a knife, 1 hour. When cool enough to handle, halve sweet potatoes. With a spoon, scoop out flesh (discard skins); transfer to a food processor. Add butter and syrup; process until smooth. Season with salt and pepper. Serve warm.
