The Best Banana Bread image

The batter for this easy-to-make banana bread is enriched with sour cream, which gives it a subtle tang and super moist texture. In order to avoid this quick bread becoming tough and chewy, don't overmix the batter.

1/2 cup (1 stick) butter, at room temperature, plus more for pan
1 cup sugar
2 large eggs
1 1/2 cups unbleached all-purpose flour
1 teaspoon baking soda
1 teaspoon kosher salt
1 cup mashed very ripe bananas
1/2 cup sour cream
1 teaspoon pure vanilla extract
1/2 cup chopped walnuts or pecans

Steps:

  • Preheat oven to 350 degrees. Butter a 9-by-5-by-3-inch loaf pan; set aside. In an electric mixer fitted with the paddle attachment, cream butter and sugar until light and fluffy. Add eggs and beat to incorporate.
  • In a medium bowl, whisk together flour, baking soda, and salt. Add to the butter mixture and mix until just combined. Add bananas, sour cream, and vanilla; mix to combine. Stir in nuts and pour into prepared pan.
  • Bake until a cake tester inserted into the center of the cake comes out clean, about 1 hour 10 minutes. Let rest in pan for 10 minutes, then turn out onto a rack to cool.

1 cup white sugar
1 egg
3 ripe bananas, mashed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.
  • In a large bowl, cream together butter and sugar. Beat in the egg and mashed bananas. Mix in flour, baking soda and salt just until combined. Pour into prepared loaf pan.
  • Bake in preheated oven for 1 hour. If top begins to brown too quickly, decrease heat slightly. Center should be soft and chewy, while the outside, crisp and crunchy.

Steps:

  • Preheat oven to 350 degrees F. Brush 9 x 5-inch loaf pan with additional I Can't Believe It's Not Butter!® Spread; set aside.
  • Combine mashed banana, I Can't Believe It's Not Butter!® Spread, brown sugar, eggs and vanilla in large bowl with wooden spoon. Stir in remaining ingredients until blended. Spoon into prepared pan.

2 eggs

1/2 teaspoon vanilla extract
1 cup chopped walnuts or 1 cup pecans

Steps:

  • Preheat oven to 350.
  • Cream butter and sugars until fluffy.
  • Add banana chucks and beat until smooth.
  • Beat in eggs one at a time.
  • Add Vanilla.
  • In a seperate bowl combine flour, baking powder, baking soda, and salt. Sift together.
  • Slowly add dry ingredients to banana mixture. Blend throughly.
  • Fold in nuts.
  • Turn into greased 9x5 loaf pan.
  • Bake 55-60 minutes or until wooden toothpick inserted in center comes out clean.
  • Turn out on rack to cool.
  • Wrap in foil or plastic wrap and let stand overnight before slicing.

This one uses a small amount of canola oil instead - which is much better for your heart - and honey, which of course means lots of flavor. Don't use regular whole-wheat flour. It is too heavy for this recipe. Look for whole-wheat pastry flour instead.

1/2 cup honey
3 tablespoons canola oil, plus a little more for oiling the loaf pan

1/2 cup butter
2 eggs
3 bananas, mashed
2 cups flour
1/2 teaspoon salt
3/4 cup sugar

1 -2 teaspoon lemon juice

Steps:

  • Preheat oven to 350°F.
  • Cream butter and sugar together.
  • Add eggs one at a time, beating between each egg.
