MARINATED BAKED CHICKEN TENDERLOINS
Marinated Baked Chicken Tenderloins are super easy to make, so tender and are one of those recipes that kids and adults love. This healthier version is baked in the oven and it's so incredibly delicious. The chicken marinade ingredients are simple with the minimal prep. Serve these with your choice of Rice, Mashed Potatoes, noodles, salad, steamed veggies and more to turn this simple recipe into a fancy meal!

Steps:
- Rinse chicken in cold water and paper towel pat dry. Trim off any excess skin or fat.
- In a medium bowl, combine all of the marinade ingredients: 1/2 cup real mayonnaise, 1/2 tbsp Montreal steak seasoning, 1 tsp coffee rub seasoning and 1/4 tsp fine salt. Stir to combine.
- Transfer chicken into bowl with marinade and toss or give a nice stir to evenly coat the chicken. Cover with plastic food wrap and marinate 4-6 hours or overnight.
- Prep: soak bamboo skewers for 15-20 minutes in cold water to keep them from burning in the oven.
- Preheat the oven to a 400° F and line a baking sheet with parchment paper.
- Thread chicken tenderloins onto wet skewers (1 tenderloin per skewer), then transfer onto prepared baking sheet.
- Bake for 30 minutes in the center of the oven or until chicken is cooked through (at least 165°F) and golden. You don't need to turn these halfway - I don't do it.
TENDER AND JUICY MARINATED CHICKEN
This is great because its easy, and once the chicken is marinated, very quick. I can pop it in the oven and finish other things while it bakes. This is without a doubt my husbands favorite chicken, he likes it even better than my fried chicken, which is wonderful because its sooo much easier.

- Combine italian dressing and soy sauce; mix well.
- Pour marinade into a gallon sized resealable plastic bag; add chicken.
- Marinate for at least 4 hours or overnight, turning several times (can be marinated up to 36 hours).
- Place chicken in a shallow baking dish (I use a cookie sheet covered with foil and sprayed with Pam).
- Sprinkle chicken liberally with onion powder and garlic powder.
- Sprinkle with salt, to taste.
- Bake for 45-60 minutes at 350 degrees, or until juices run clear.
CRISPY BAKED CHICKEN TENDERS
After reviewing several oven-fried, baked chicken recipes, I created this spicy, savory, slightly sweet, crispy baked chicken without any added salt. Using a cooking rack inside the baking dish helps to keep the chicken crispy on all sides and prevent the chicken from getting soggy on the bottom.

- Preheat the oven to 375 degrees F (190 degrees C). Place a cooking rack inside a baking dish and spray both with cooking spray.
- Combine flour, garlic powder, and pepper in a flat dish; stir until evenly combined. Stir mustard, honey, egg substitute, and hot sauce together in a small bowl.
- Combine cornflake crumbs, bread crumbs, Parmesan cheese, onion flakes, garlic powder, pepper, paprika, onion powder, Italian seasoning, and cayenne pepper in another flat dish; stir until ingredients are evenly distributed.
- Dip chicken tenders into the flour mixture until coated evenly, then dip into the egg mixture, shaking off any excess liquid. Drag the chicken through the bread crumb mixture, covering evenly.
- Place chicken on the prepared cooking rack. Spray the chicken with cooking spray.
- Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 25 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

EASY BAKED CHICKEN TENDERS

- Preheat the oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil and spray with cooking spray.
- Place egg in a shallow dish. Place bread crumbs, garlic powder, onion powder, paprika, salt, and pepper into a large zip-top freezer bag and mix well. Dip 2 chicken strips into egg and then place into bread crumb mixture and shake to coat. Place coated chicken pieces onto the prepared baking sheet. Repeat with remaining chicken.
- Spray each chicken tender with cooking spray 2 times.
- Bake tenders in the preheated oven for 7 minutes; flip, continue to bake on opposite side until no longer pink in the centers, about 7 minutes more. Remove from the oven.
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Broil tenders in the preheated oven for extra crunch, about 2 minutes more.

- In a measuring cup, combine salad dressing and soy sauce. Pour 3/4 cup into a large resealable plastic bag; add chicken. Seal the bag and turn to coat; refrigerate for 4 hours or overnight, turning several times. Refrigerate remaining marinade for basting., Drain chicken discarding marinade. - Spray a 9 x 13 inch baking pan with non-stick cooking spray.
- Arrange chicken tenders in single layer in pan.
- In a medium-sized bowl, mix together honey, soy sauce, ginger, garlic, and dried onions. Pour mixture over chicken. Cover pan with plastic wrap and let marinate in fridge for about an hour (I let mine marinate for about 3 hours), turning chicken once, about half way through marinating time.
- Preheat oven to 425 degrees.
