My aunt used to make this delicious side dish when I would visit, and I recently discovered just how easy it is to make. A great way to encourage kids to eat their broccoli! Blanching of broccoli or any form of cooking broccoli is not recommended for this recipe; it tastes best with raw, chilled broccoli.

6 slices bacon, cooked crisply and crumbled
2 broccoli heads or 8 cups
1/2 red onion, sliced very thin
2/3 cup sharp cheddar cheese, grated
1/3 cup mayonnaise
1/3 cup sour cream
1/4 teaspoon celery seed
Salt and freshly ground pepper

Steps:

  • Cut the broccoli into florets. Blanch in boiling salted water until barely tender, about 20 seconds. Shock them in a bowl of ice. Drain and reserve.
  • Combine all other ingredients, mixing well. Fold in the broccoli. Season to taste with salt and pepper.

1 pound broccoli crowns
1 medium zucchini, chopped into 1/2-inch pieces
1 pint cherry tomatoes, sliced
One 15-ounce can chickpeas, rinsed and drained
2 medium cobs sweet corn, shucked and kernels shaved off (about 2 cups)
1 cup fresh cilantro leaves
1 cup fresh parsley leaves
1/4 cup rice wine vinegar
1 tablespoon Dijon mustard
1 tablespoon chopped Hatch peppers
1 tablespoon honey
2 cloves garlic
1 medium navel orange, juiced (about 1/4 cup)

Steps:

  • For the broccoli and chickpea salad: Prepare a large pot of boiling salted water and fill a large bowl with ice water. Remove the broccoli stalks and set aside for another use. Trim the broccoli crown into florets. Add the broccoli florets to the pot of boiling water and blanch for 2 to 3 minutes, until bright green and just fork-tender. Remove the broccoli florets with a slotted spoon and plunge them in the bowl of ice water. Drain the broccoli when fully cooled.
  • Place the zucchini in a colander or on paper towels and salt generously. Let stand for 10 minutes, until some water is released.
  • Place the broccoli, zucchini, tomatoes, chickpeas and corn in a large bowl; set aside.
  • For the citrus-herb marinade: Place the cilantro, parsley, rice wine vinegar, Dijon, Hatch peppers, honey, garlic and orange juice in a food processor and pulse a few times until the herbs and garlic are finely chopped. The mixture will be loose.
  • Pour over the vegetables in the bowl and toss to dress. Place in the fridge and chill for 1 hour. Season to taste with salt and pepper before serving.

Nothing is easier than blanching broccoli, and once this delicious dressing-a little sweet, a little savory, a little sour, and a little spicy-is added, the transportable dish becomes super-duper. As Gina always says, "A great dressing is like a great handbag and shoes. It makes the whole outfit look (taste) perfect."

Number Of Ingredients 11

Kosher salt
6 cups broccoli florets
2 tablespoons honey
3 tablespoons red-wine vinegar
1 teaspoon crushed red-pepper flakes
Freshly ground black pepper
1/3 cup extra-virgin olive oil
6 slices bacon, cooked, crumbled
1/2 small red onion, chopped
1/2 cup slivered almonds, toasted
1/2 cup dried cranberries

Steps:

  • Prepare a large pot of boiling salted water and a large bowl of ice water. Blanch the broccoli in the boiling water until tender-crisp and bright green, about 1 minute. Drop the broccoli immediately into the ice water to stop the cooking. Drain, and dry well.
  • Whisk together the honey, vinegar, red-pepper flakes, salt, and pepper in a large bowl. Slowly add the olive oil, whisking to emulsify. Add the broccoli, bacon, red onion, almonds, and cranberries, and toss well to combine. Cover with plastic wrap and let the salad marinate and chill for 2 hours before serving.

2 heads broccoli, broken into flowerettes
1 head cauliflower, broken in flowerettes
1 green pepper
1 red pepper
3 -4 stalks celery
1 onion, finely diced
1/2 cup white wine vinegar
2 tablespoons poppy seeds
1 cup white sugar
2 teaspoons mustard powder
1/2 teaspoon salt
1 1/2 cups olive oil

Steps:

  • Blanch broccoli and cauliflower until just tender.
  • Drain and rinse with cold water.
  • In a large bowl combine cauliflower, broccoli, peppers, celery and onion.
  • In a saucepan, place the vinegar, poppy seeds, sugar, mustard, salt and oil.
  • Boil until the sugar has disslved.
  • Pour the marinade over the vegetables and mix well.
  • Chill overnight before serving.

This salad is made from uncooked broccoli tossed with an assertive garlic, sesame, chile and cumin-seed vinaigrette slicked with good extra-virgin olive oil and red wine vinegar. The acid "cooks" the florets a little as ceviche does fish. After an hour, the broccoli softens as if blanched, turning bright emerald, and soaking up all the intense flavors of the dressing. You'll be making this one again.
