MARINATED TRI-TIP IN RED WINE AND HERBS

- For the marinade: Place the steak in a 2-gallon resealable plastic bag and place the bag in a large bowl. Add the shallots, oil, honey, mustard, cilantro, parsley, thyme, garlic, oregano, wine, 1 tablespoon kosher salt and 2 teaspoons black pepper to the bag. Cut the oranges in half, squeeze the juice into the marinade and then add the halves as well. Seal the bag, squeezing out any excess air, then massage the marinade into the steak, making sure all the ingredients are evenly incorporated. Marinate the steak in the refrigerator for 2 1/2 hours.
- Preheat a grill for cooking over medium-high heat. Remove the steak from the marinade, making sure to pull off any marinade ingredients like herbs or shallots that stick to the steak (reserve the marinade). Generously sprinkle the steak all over with salt and pepper. Grill until dark grill marks form, 3 to 4 minutes per side; then turn the heat down, cover the grill and cook until an instant-read thermometer inserted into the thickest part of the steak registers 130 degrees F for medium-rare, another 25 to 30 minutes. Remove the steak from the grill and let rest for 10 minutes.
- Meanwhile, place the marinade in a medium pot over medium-high heat. Bring the mixture to a boil and cook until thickened and reduced down to 1 1/2 cups, approximately 25 minutes. Remove from the heat and strain the sauce through a fine-mesh strainer.
- To serve: Rub a cutting board with olive oil and garlic, then sprinkle with flaky sea salt. Put the steak on top and slice it against the grain. Garnish with cilantro and parsley leaves, and serve with the red wine herb sauce.

- Sprinkle roast with salt, thyme, garlic powder and ground pepper. Cover and refrigerate at least 8 hours or up to 24 hours. Meanwhile, in a sauce pan, saute onion in 1 tablespoon oil until tender, about 5 minutes. Add wine, thyme, garlic, peppercorns and cloves. Simmer until reduced to ¾ cup. Cool; strain, discarding solids, and refrigerate., Remove roast from the refrigerator 1 hour before grilling. Prepare grill for indirect heat, using a drip pan. Add wood chips according to manufacturer's directions., Pat roast dry with paper towels. Brush with remaining 1 tablespoon oil; place over drip pan. Grill, covered, over medium-low indirect heat, brushing with mop sauce every 20 minutes, until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), 1-1/2 to 2 hours. Let stand 15 minutes before slicing., If desired, in a small bowl, stir together butter, horseradish and thyme. Serve on top of roast.

MARINATED SIRLOIN TIP ROAST WITH HERBS AND RED WINE
This sirloin tip roast is marinated in red wine and then roasted to perfection with an easy herb and spice rub. Includes an easy optional pan gravy.

Steps:
- Gather the ingredients.
- About 2 hours before roasting, combine the roast and red wine in a food storage bag; refrigerate.
- Preheat oven to 350 F.
- Combine remaining ingredients in a small bowl about 10 minutes before roasting time.
- Take the roast out of the wine marinade and place it on a rack in baking pan . Rub all over with the herb and seasoning mixture.
- Roast in preheated oven for about 1 to 1 1/2 hours, or until roast is about 135 F on a meat thermometer for medium-rare.
- Put 2 tablespoons of pan drippings (or use butter) in a saucepan and place it over medium heat.
- In a cup or small bowl, combine 3 tablespoons of cornstarch with 3 tablespoons of water and mix until smooth.
- Add to the drippings and whisk to blend.
- Add 2 cups of low-sodium beef broth or unsalted stock.
- Cook, stirring until thickened.
- Taste and adjust seasonings.
- Serve with the roast beef.
- Enjoy.

- In a small bowl, mix the paprika, kosher salt, garlic powder, black pepper, onion powder, cayenne pepper, oregano, and thyme. Stir in the olive oil, and allow the mixture to sit about 15 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
