- # ingredients 2 medium Eggplants cubed 1 tablespoons Extra Virgin Olive Oil more if needed Dash of salt 1 bunch Celery diced 4 Yellow Onions sliced instructions Cube 2 medium-sized eggplants into 1/2-inch cubes and place in colander. Sprinkle with salt and toss to coat. Add a tablespoon of olive oil to a saute pan and add eggplant. Saute until browned, about 3-4 minutes. When the eggplant is cooked, remove from pan and transfer to a plate. Add the celery and onions to the saute pan and cook until onions are slightly translucent. # step 2 ingredients 1 cup Spanish Green Olives chopped 1/3 cup Red Wine Vinegar 3 tablspoons Capers 4 tablspoons Pine Nuts 2-2 1/2 cups Tomato Sauce 1 tablespoons Extra Virgin Olive Oil more if needed instructions Once onions and celery are cooked, add the red wine vinegar to deglaze the pan. When liquid is almost evaporated, return the eggplant to the pan, and add the olives, capers, pine nuts and tomato sauce. Let cook for 5 minutes. It may be slightly dry when ready, if so, stir in a tablespoon of olive oil. # step 3 instructions Serve with toasted or crusty bread of your choice. Mario tip: this is best when it has sit for a day and it should be served at room temperature.

- In a large skillet over medium heat, add the oil and then crumble the sausage into the pan and cook until fat begins to render and sausage begin to crisp. Add the onion, fennel, chestnuts, apples, and cook, stirring occasionally, until sausage is and cooked through. In a large bowl, place the cubed bread and pour the cooked sausage mixture over top. Sprinkle with parsley, and pour the stock and butter over the top and toss to combine. Spoon mixture into a 9x13 baking dish and cover with foil. Bake for 30 minutes, uncover, and bake until top is golden and crisp. Serve garnished with the fennel fronds.
MARIO BATALI'S PAELLA
Found this on Oprah.com. Mario was talking about a PBS show he did where he drove through Spain (with Gwyneth Paltrow). This is a recipe he cooked on the show. What Mario says: "It's difficult to duplicate the experience of cooking paella with Manuelo outdoors in Valencia over burning embers of wood from orange trees, but you could do it on a grill on high heat. Most important, buy a proper pan (available at www.latienda.com), cook it a little longer than you think, and don't stir! If you are cooking it indoors on the stove, be generous with the supersmoky pimentón since it will provide the requisite almost-but-not-quite-burned flavor. Remember, paella is a blank canvas. You can add any fish, meat or vegetables into your paella according to your preferences. Add meats like sausage, chicken and chorizo; fish like prawns, calamari, clams, mussels and scampi; and vegetables like peppers, onions, carrots, peas, celery and zucchini."

- Preheat an oven to 400°. Place the drumsticks on a baking sheet and season all over with salt and extra-virgin olive oil. Bake for 20 to 22 minutes and set aside.
- In the meantime, heat a 14- to 18-inch paella pan over medium-high heat. Add the oil and heat until smoking. Add the shrimp and cook until golden brown on both sides, about 3 minutes per side. Transfer to a plate and set aside. Add the onion to the pan and cook until soft, about 8 minutes. Push the onions into the center of the pan and sprinkle 2 tablespoons of the salt around the edges of the pan.
- Add the tomato puree, stirring it into the onions, and cook for 3 minutes. Add the remaining salt, the saffron, pimentón and cook, stirring, for 5 minutes. Add chicken stock, bring to a boil, and cook for 5 minutes. Add the rice and stir well to distribute it evenly. Add clams, drumsticks, arranging them nicely throughout the pan. Then add the peas and asparagus and bring the stock back to a boil, and cook, without stirring, for 10 minutes. Taste for salt and add it if needed, then cook, again without stirring, for 10 more minutes, or until the liquid is almost completely absorbed and the pan starts to make a crackling noise (don't worry, this is what you want).
- Remove from the heat and let rest for 10 minutes before serving.

- In a Dutch oven, saute eggplant in 1/4 cup oil until tender. Remove from the pan and set aside. In the same pan, saute onion and celery in remaining oil until tender. Stir in tomatoes and eggplant. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes., Add the olives, vinegar, sugar, capers, salt and pepper. Return to a boil. Reduce heat; simmer, uncovered, for 20 minutes or until thickened. Serve warm or at room temperature with baguettes.

MARIO BATALI'S NEAPOLITAN LASAGNA
Like most lasagna dishes, this one can be a bit tricky, especially if you've never made one before. But if you follow the recipe step by step you should be able to come out with one of the best lasagnas you've ever tasted.

- To assemble the lasagna:.
- Divide the pasta dough into 3 portions. Roll each one out through the thinnest setting on a pasta machine and lay the sheets on a lightly floured work surface to dry for 10 minutes. cut the pasta into 10" x 5" strips and cover with a damp kitchen towel.
- Bring 6 quarts of water to a boil in a large pot, and add 2 tablespoons salt. Set up an ice bath next to the stovetop, and add the oil. Cook the noodles, 6 to 7 at a time, in the boiling water until tender, about 1 minute. Transfer to the ice bath to cool, then lay out on clean kitchen towels to drain.
- Preheat the oven to 350°F.
- Assemble the lasagna in a 10" x 20" lasagna pan (or use two 9" x 12" pans): spread 1/2 cup ragu over the bottom of the dish, then top with a layer of pasta, a layer of ricotta, a layer of polpette and sausage, and a layer of Parmigiano and mozzarella.
- Continue until you have at least 3 layers, finishing with cheese.
- Bake for 1 hour and 15 minutes, or until the edges are bubbling. Let rest for 15 minutes before serving.
- To make the pasta:.
- Mound the flour in the center of a large wooden board. Make a well in the center of the flour and add the eggs. Using a fork, beat the eggs together and then begin to incorporate the flour, starting with the inner rim of the well.
- As you expand the well, keep pushing the flour up to retain the well shape (don't worry if it looks messy). When half of the flour is incorporated, the dough will begin to come together. Start kneading the dough, using primarily the palms of your hands.
- Once the dough is a cohesive mass, set the dough aside and scrape up and discard any dried bits of dough.
- Lightly flour the board and continue kneading for 10 minutes, dusting the board with additional flour as necessary. The dough should be elastic and a little sticky. Wrap the dough in plastic wrap and allow to rest for 30 minutes at room temperature before using.
- To make the ragu:.
- In a large Dutch oven, heat the olive oil over medium heat until smoking. Season the veal and beef with salt and pepper to taste, and sear, in batches to avoid overcrowding the pot, until dark golden brown. Transfer to a plate.
- Add the onion to the pot and sauté, scraping the bottom of the pot with a wooden spoon to loosen any brown bits, until golden brown and very soft, about 10 minutes. add the wine, browned meat chunks, tomatoes, sausages and red pepper flakes and bring just to a boil. Reduce the heat to a simmer and cook, stirring occasionally and skimming off the fat as necessary, for 2 1/2 to 3 hours.
- Remove from the heat, remove the meat and sausages, and set aside. Adjust the seasoning with salt and pepper.
- To make the polpette (meatballs):.
- In a shallow bowl, soak the bread cubes in water to cover for 20 minutes. drain the bread cubes and squeeze out the excess moisture.
- In a large bowl, combine the bread, beef, eggs, garlic, pecorino, parsley, pine nuts, salt and pepper and mix with your hands just until blended. With wet hands, form the mixture into 12 to 15 large meatballs.
- In a heavy-bottomed skillet, heat the olive oil over high heat until almost smoking. Add the meatballs, working in batches if necessary to avoid overcrowding the pan, and cook, turning occasionally, until deep golden brown on all sides, about 10 minutes per batch. Remove from the heat.
