Terry Conlan, of Lake Austin Spa Resort in Austin, Texas, stuffs a salad between slices of bread.

Yield Makes 4 servings

Number Of Ingredients 12

1/2 cup white vinegar
1 cup thinly sliced red onion
1 cup canned black beans, rinsed and drained
1/2 teaspoon ground cumin
1/4 cup fat-free mayonnaise
1 teaspoon finely chopped canned chipotle chile with sauce
1 tablespoon fresh lime juice
8 slices whole-grain bread
2⁄3 cup crumbled reduced-fat feta
1 medium avocado, thinly sliced
2 tablespoons fresh cilantro, chopped
1 tomato, cut into 8 slices

Steps:

  • Boil 1 cup water with vinegar in a small stainless steel saucepan. Add onion; turn off heat; let sit 30 minutes; drain. Puree beans and cumin in a blender. Mix mayonnaise, chipotle and lime juice in a bowl; spread on 4 slices of bread. Top remaining slices with bean puree, onion, cheese, avocado, cilantro and tomato. Close sandwiches; serve.

1/2 teaspoon poppy seeds
1/4 teaspoon curry powder
10 croissants, split
1-1/4 pounds thinly sliced deli ham
10 slices Swiss cheese

Steps:

  • Preheat oven to 325°. In a small bowl, combine butter, mustard, onions, poppy seeds and curry powder. Spread over cut sides of croissants. Place ham and cheese on croissants; replace tops. Wrap individually in foil., Bake 15-20 minutes or until heated through. Serve immediately.

1 pound ground pork
1 shallot, minced
1 stalk lemongrass (outer husk removed), sliced paper thin
1 tablespoon fish sauce
A dash Asian five-spice powder
Salt and freshly ground black pepper
French bread, for serving
Lettuce, for serving
Pickled Vegetables, for serving, recipe follows
Cilantro Mayonnaise, for serving, recipe follows
10 radishes, thinly slices
5 to 7 carrots, julienned
1 cup rice wine vinegar
1 tablespoon hot sauce (recommended: Sriracha)
Dash sugar
Salt
1 bunch cilantro leaves, roughly chopped
1 cup mayonnaise

Steps:

  • Add all ingredients into a large bowl and mix to thoroughly combine. Form 4 ounce patties and grill until well done. Place 2 patties into lightly toasted soft French bread cut with a hinge along with lettuce, a generous helping of Pickled Vegetables, and Cilantro Mayonnaise.
  • Place the sliced vegetables into 1 cup rice wine vinegar mixed with hot sauce, a dash of sugar, and a dash of salt. 15 minutes in the vinegar should leave the vegetables with a nice crunch. They can be left in the vinegar for an indefinite amount of time, however. The vinegar can be saved and used again later.
  • Simply mix the chopped cilantro with the mayonnaise.

1 cup butter, room temp
1/4 cup prepared mustard
1/2 teaspoon poppy seed
2 tablespoons finely minced onions or 2 tablespoons shallots
2 lbs shaved ham
12 slices swiss cheese, cut to shape

Steps:

  • Slice croissants in half horizontally.
  • Mix butter, mustard, poppy seeds and onion together.
  • Spread on half of each croissant.
  • Top with 2 1/2 oz ham and a slice of cheese.
  • Put halves together.
  • Wrap each sandwich in foil and warm in 325*F oven for 15 minutes.
  • These sandwiches may also be frozen in foil and warmed, unwrapped, at 325*F for 25 to 30 minutes.
