ORANGE MARMALADE

1 3/4 pounds oranges, 4 to 5 medium
1 lemon, zest finely grated and juiced
6 cups water
3 pounds plus 12 ounces sugar

Steps:

  • Wash the oranges and lemon thoroughly. Cut the oranges into 1/8-inch slices using a mandoline, removing the seeds as you go. Stack the orange slices and cut them into quarters. Place the oranges into an 8-quart stainless steel pot. Add the lemon zest and juice and the water to the pot, set over high heat and bring to a boil, approximately 10 minutes. Once boiling, reduce the heat to maintain a rapid simmer and cook, stirring frequently, for 40 minutes or until the fruit is very soft.
  • While the fruit is cooking, fill a large pot (at least 12-quart) 3/4 full with water, set over high heat and bring to a boil. Place 10 (8-ounce) jars and rings, canning funnel, ladle, and tongs into the boiling water and make sure the water covers the jars by at least an inch. Boil for 10 minutes. Turn off the heat, add the lids and leave everything in the pot until the marmalade is ready.
  • Meanwhile, place a small plate in the freezer. Increase the heat under the orange mixture to return to full boil. Add the sugar and stir the mixture continually, until it reaches 222 to 223 degrees F on a deep-fry or candy thermometer, and darkens in color, approximately 15 to 20 minutes. You may need to adjust the heat in order to prevent boil over. Test the readiness of the marmalade by placing a teaspoon of the mixture onto the chilled plate and allowing it to sit for 30 seconds. Tilt the plate. The mixture should be a soft gel that moves slightly. If mixture is thin and runs easily, it is not ready.
  • Remove jars from the water and drain on a clean towel. Place a canning funnel onto the top of 1 of the jars and ladle in the marmalade just to below the bottom of the threads of the jar. Repeat until all of the mixture has been used. The amount of marmalade may vary by 1 to 2 jars. Wipe the rims and threads of the jars with a moist paper towel and top each with a lid. Place a ring on each jar and tighten.
  • Return the jars to the pot with boiling water, being certain that they don't touch the bottom of the pot or each other. (If you don't have a jar rack, try a round cake rack, or metal mesh basket. Even a folded kitchen towel on the pot bottom will do in a pinch.) Add additional water if necessary to cover the jars by at least an inch. Boil for 10 minutes. Using canning tongs, carefully remove the jars from the water, place in a cool dry place and allow to sit at room temperature for at least 24 hours before opening. Once open, store in the refrigerator. Unopened marmalade will last for up to 6 months.

This recipe was printed in the Jerusalem Post last week, and it's from Lynette Levius of Netanya, Israel. I haven't tried it yet, but plan to make a batch this weekend. February 2010: Since posting this recipe I've made it several times each winter (winter is citrus seaon here). It's a wonderful recipe, totally fail-proof as the title says. It's great on toast and makes a wonderful gift. I especially love a 50/50 orange/clementine mix, a rich citrus flavor with an intense orange color.

6 grapefruits (or any combination) or 6 lemons (or any combination)
1 kg sugar

Steps:

  • Take the 6 citrus fruits and wash well, removing any blemishes.
  • Cut into quarters, and place in a food processor.
  • Chop until finely ground, skin and all.
  • For an optional extra add some crystallized ginger.
  • Boil with the 1 kilo of sugar, stirring occasionally with a wooden spoon, for 20 minutes.
  • It splatters, so be careful.
  • This quantity fills about 5 x 340 gram jars.
  • Do not double the ingredients, rather make two batches.
  • It never goes dark and lasts for up to 6 months in the refrigerator without the need to sterilize the bottles.

GREEN TOMATO PIE TURNOVERS

5 green tomatoes
1 cup honey
1/2 cup sugar
1/2 teaspoon grated ginger
1 teaspoon vanilla extract
4 ounces butter
9 ounces flour
2 tablespoons water
1 3/4 ounces sugar
1 dash salt
1 egg yolk
3/4 cup toasted sliced almonds
2 eggs, beaten
1 tablespoon powdered sugar

Steps:

  • For the green tomato marmalade: Cut 4 tomatoes in small dice, and cut the last one in 5 slices. In a small pan, boil the honey, sugar, until sugar is dissolved and has nice golden color. Add ginger, and the vanilla. Then, add all the tomatoes. Try to keep the sliced ones separated. Cook for 20 to 30 minutes very slowly.
  • For the sugar dough: Cut the butter in small pieces on top of the flour. Mix with your fingers, then, put in the middle, the water, the sugar, salt and the egg yolks. Mix everything together but do NOT work the dough too long.
  • Let sit in a cool place for 2 hours.
  • Add the toasted almonds, roll it down, and cut 12 circles of 5 inches each. In the middle of 6 of them, put 1 full spoon of marmalade. Brush the side of the dough with egg, and cover with the other 6. (Or you could fold them over to make half moon baked pies.)
  • Cut the dough if you have to for them to look alike.
  • Brush some more egg on top, then, bake for 18 minutes in a preheated 400 degree oven. Let them cool down, and sprinkle with powdered sugar and the sliced tomatoes on top.

1 teaspoon ground cumin
1/2 teaspoon ground ginger
1/4 teaspoon ground turmeric
1/2 teaspoon cinnamon
1 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 tablespoon olive oil
1/2 cup onion, chopped
2 garlic cloves, minced
1 lb ground lamb
1/3 cup white wine
1 tablespoon tomato paste
2 tablespoons golden raisins
2 tablespoons pine nuts, toasted
2 tablespoons chopped fresh cilantro
1 egg
1 tablespoon heavy cream
1 (17 1/2 ounce) package puff pastry (thawed in the refrigerator)

Steps:

  • Mix together the cumin, ginger, turmeric, cinnamon, salt, and pepper in a small bowl. Set aside.
  • Heat the olive oil in a large skillet over medium heat. Saute the onion until tender, about 2 minutes. Add the garlic and the spice mixture and continue to cook for another minute. Add the lamb and cook, breaking up any lumps with the back of a wooden spoon, until no longer pink, about 5 minutes. Add the wine and tomato paste and cook until most of the liquid has evaporated, about 4 minutes. Remove from the heat and add the raisins, pine nuts, and cilantro. Taste for seasoning. Let cool and set aside.
  • In a small bowl, beat together the egg and cream with a fork. Set aside.
  • Preheat the oven to 375ºF. Line 2 large baking sheets with parchment paper. Divide the puff pastry in half. Work with half of the dough at a time, while keeping the other half chilled. On a lightly floured surface, roll half of the dough into a 12-by-15-inch rectangle. Cut into twenty 3-inch squares. Place a scant tablespoon of the filling in the center of each square. Brush the edges lightly with the egg wash. Fold each pastry into a triangle, enclosing the filling, and crimp the edges with a fork. Cut a small steam vent in the top of each turnover. Brush the tops lightly with more egg wash. Set on the prepared baking sheets. Repeat with the remaining dough and filling.
  • Bake the turnovers until golden brown, 15 to 20 minutes. Serve warm.
  • Make ahead: These can be frozen in a single layer on a baking sheet until solid, transferred to a freezer bag, and stored in the freezer for 1 month. They can be baked right from the freezer, adding 3 to 4 minutes to the baking time.

⅓ cup marmalade

Steps:

  • In a bowl, combine butter and cheese. Add flour; stir until mixture forms a ball. Cover and refrigerate for 1 hour. On a lightly floured surface, roll dough to 1/8-in. thickness; cut into 2-3/4-in. circles. Place 1/2 teaspoon marmalade on each circle. Fold pastry over and seal edges with a fork. Cut slits in top of pastry. Place 2 in. apart on ungreased baking sheets. Bake at 350 degrees F for 5-9 minutes or until lightly browned. Remove to wire racks to cool.

2 sheets frozen puff pastry, thawed (approx 1 lb)
3/4 cup cream cheese
3/4 cup jam (apricot,cherry,orange marmalade,any!)
1 large egg
1 teaspoon water
1 1/2 tablespoons sugar, to sprinkle

Steps:

  • Preheat oven to 425°.
  • On lightly floured surface, roll out each sheet of pastry into a 12-inch square.
  • Cut each into four 6-inch squares; place 1 1/2 tbsp cream cheese in center of each square, then place 1 1/2 tbsp of jam.
  • Brush edges of each square with water. Fold the squares in half diagonally to form triangles, pressing edges together firmly. Press edges with tines of a fork to seal well.
  • Arrange turnovers on a dampened baking sheet; brush with egg wash.
  • With sharp knife, cut several slits in the top of each turnover.
  • Sprinkle with the sugar, bake them in the upper third for 12-15 minutes or until puffed& golden.
  • Serve warm!

2 sheets (about 1 pound) frozen puff pastry, thawed
3/4 cup (about 6 ounces) cream cheese
3/4 cup jam, such as apricot or cherry, or orange marmalade
an egg wash made by beating together 1 large egg and 1 teaspoon water
about 1 1/2 tablespoons sugar for sprinkling the turnovers

Steps:

  • On a lightly floured surface roll out each sheet of pastry into a 12-inch square and cut each square into four 6-inch squares. Put 1 1/2 tablespoons of the cream cheese in the center of each square, top it with 1 1/2 tablespoons of jam, and brush the edges of each square with water. Fold the squares in half diagonally to form triangles, pressing the edges together firmly, and press the edges with the tines of a fork to seal them well. Arrange the turnovers on a dampened baking sheet, brush them with the egg wash, and with a sharp knife cut several slits (for steam vents) in the top of each turnover. Sprinkle the turnovers with the sugar, bake them in the upper third of a preheated 425°F. oven for 12 to 15 minutes, or until they are puffed and golden, and serve them warm.
