MARS BAR CHEESECAKE
This is being posted for the sweet tooths out there. It comes from a Table Magazine and I have not tried it. It is a no bake cheesecake. Chilling time 3 hrs 30 minutes.

Steps:
- Process biscuits in a food processor until the mixture resembles fine breadcrumbs, then add the melted butter and process until combined.
- Press biscuit mixture firmly over the base and side of a round (20cm) springform cake pan.
- Chill for 30mins or until firm.
- Meanwhile, combine 2 tablespoons cream, brown sugar and extra butter in a small saucepan.
- Stir on low heat for 3-4 minutes, until the sugar dissolves.
- Set aside.
- In a separate saucepan melt the chocolate with 2 tablespoons cream on low heat stirring until smooth.
- Set aside.
- Dissolve gelatin by whisking into water with a fork until dissolved.
- Cool slightly set aside.
- Using an electric mixer, beat the cream cheese and caster sugar together in a bowl until smooth.
- In another bowl whisk remaining cream until soft peaks form.
- Stir gelatin mixture into cheese mixture with Mars bars.
- Fold in cream.
- Pour half of cheese mixture into prepared pan and drizzle with half of the caramel and chocolate sauces.
- Pull a skewer backwards and forwards through the mixture several times to create a marbled effect.
- Repeat process with remaining cheese mixture and sauces.
- Cover and chill for 3 hours until set.
- Slice to serve.
MARS BAR CHOCOLATE CHIP COOKIES

Steps:
- Line a few trays with baking paper and set aside.
- Cream together the butter and sugars until light and fluffy.
- Meanwhile, whisk together the eggs and vanilla in a small bowl.
- Sift together the flour, baking soda and salt in a medium bowl.
- Alternately add the wet and dry ingredients to the creamed butter, beating until just incorporated.
- On a low speed, mix in the chocolate and Mars Bar chunks..
- Use a medium cookie scoop to scoop balls of dough onto the prepared trays, allowing room for spreading. Sprinkle each cookie lightly with sea salt (optional, but super delicious).
- Refrigerate or freeze the dough for at least an hour.
- When you're ready to bake, preheat the oven to 180 C (350 F).
- Bake for 12 - 15 minutes, until golden around the edges.
- Makes 30 cookies.

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 9 inch springform pan. In the top of a double boiler, heat chocolate and butter, stirring occasionally, until chocolate is melted and smooth. Remove from heat and allow to cool to lukewarm.
- Transfer chocolate mixture to a large bowl. Beat in the flour and egg yolks. In a separate large glass or metal mixing bowl, beat egg whites until foamy. Gradually add sugar, continuing to beat until stiff peaks form. Fold 1/3 of the whites into the chocolate mixture, then quickly fold in remaining whites until no streaks remain. Pour batter into prepared pan.
- Bake in the preheated oven for 35 minutes. Turn off oven, crack the door, and allow cake to cool in oven.
- In a saucepan, melt chocolate covered nougat candy bars with the cream. Pour over cooled cake.

MARS BAR CRISPY CAKE
Very simple recipe, fun to make with the kids. Taught by my mother.

- Cut the Mars Bars into small slices and melt with the margarine in a glass bowl over a saucepan of boiling water.
- Take off the heat and mix in the Rice Crispies one cup at a time until the mixture is only slightly gooey.
- Spoon the mixture into a tray and spread out evenly.
- Heat up the milk chocolate in a glass bowl and spoon evenly over the Crispies.
- Leave to cool slightly then place in the fridge for a few hours until set.
