¼ cup all-purpose flour for coating
½ teaspoon salt
¼ teaspoon ground black pepper
½ teaspoon dried oregano
4 skinless, boneless chicken breast halves - pounded 1/4 inch thick
4 tablespoons butter
4 tablespoons olive oil
1 cup sliced mushrooms
½ cup Marsala wine
¼ cup cooking sherry

Steps:

  • In a shallow dish or bowl, mix together the flour, salt, pepper and oregano. Coat chicken pieces in flour mixture.
  • In a large skillet, melt butter in oil over medium heat. Place chicken in the pan, and lightly brown. Turn over chicken pieces, and add mushrooms. Pour in wine and sherry. Cover skillet; simmer chicken 10 minutes, turning once, until no longer pink and juices run clear.

1 cup sliced fresh mushrooms
1 slice onion, minced
1 tablespoon chopped garlic
2 cups Marsala wine
1 ½ cups chicken stock
5 tablespoons brown sugar
1 tablespoon lemon juice
1 tablespoon molasses
1 tablespoon corn syrup
3 tablespoons cornstarch
1 tablespoon cold water
2 tablespoons olive oil
1 tablespoon butter
4 skinless, boneless chicken breast halves - pounded flat
2 tablespoons chopped green onion, or to taste

Steps:

  • Melt 2 tablespoons butter in a large pot over medium heat. Stir mushrooms, onion, and garlic into the melted butter, increase heat to medium-high, and cook and stir the mixture until the mushrooms are golden brown, 3 to 5 minutes.
  • Stir Marsala wine, chicken stock, brown sugar, lemon juice, molasses, and corn syrup into the mushroom mixture; bring to a boil and cook, stirring frequently, until the liquid reduces by about half, 10 to 15 minutes.
  • Whisk cornstarch into cold water in a small bowl. Stream the cornstarch slurry into the Marsala sauce, stirring continually; cook and stir until the sauce thickens, another 10 to 15 minutes.
  • Heat olive oil with 1 tablespoon butter in a large skillet over medium heat; cook chicken until golden brown until no longer pink in the center and the juices run clear, 3 to 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Arrange each chicken breast into the center of a plate. Drizzle Marsala sauce over each chicken breast; garnish with green onion to serve.

2 teaspoons coarse salt
1/2 teaspoon freshly ground pepper
4 boneless, skinless chicken breast halves (about 5 ounces), butterflied and pounded 3/8-inch thick, scored
5 tablespoons extra-virgin olive oil, divided
10 ounces cremini mushrooms, sliced
1 cup dry Marsala wine
1 clove garlic, minced
3 tablespoons freshly squeezed lemon juice (from 1 lemon)
2 tablespoons unsalted butter
2 tablespoons finely chopped parsley leaves, plus more for serving

Steps:

  • Combine flour, salt, and pepper in a large, shallow dish; set aside. Heat a large skillet over medium-high heat until very hot. Dredge chicken in seasoned flour, tapping off excess; set aside. Add 3 tablespoons oil to skillet. When oil is shimmering, add chicken, and cook until lightly browned, about 3 minutes. Turn over, and cook 3 minutes more. Remove chicken to a plate; set aside and keep warm. Wipe skillet clean, if necessary.
  • Heat remaining 2 tablespoons oil in same skillet. Add mushrooms and cook, stirring occasionally, until mushrooms are dark golden brown and all the released liquid has evaporated, 5 to 7 minutes.
  • Remove skillet from heat, and add wine. Return skillet to heat, scraping up any brown bits with a wooden spoon. Add garlic, lemon juice, butter, and parsley. Cook for 10 minutes until reduced and slightly thickened. Taste and adjust for seasoning. Pour sauce over chicken and sprinkle with parsley. Serve immediately.

1/4 teaspoon salt, divided (to taste)

1 lb mushroom, sliced
3 medium onions, chopped
3 tablespoons all-purpose flour
2 garlic cloves, minced
1/2 cup marsala
1 1/2 cups chicken broth
1 tablespoon balsamic vinegar

Steps:

  • Heat 1 ½ teaspoons oil in a Dutch oven over med-high heat.
  • Decrease heat to medium.
  • Add half the chicken and season with half the salt and pepper.
  • Cook, stirring occasionally, until the chicken is browned on all sides and no longer pink in the center, 5-8 minutes.
  • Transfer to a plate.
  • Repeat with another 1 ½ teaspoons oil, remaining chicken and salt and pepper; transfer to plate and set aside.
  • Add another 1 ½ teaspoons oil to the pot.
  • Add mushrooms and cook, stirring until they begin to soften and give off liquid, 3-5 minutes.
  • Add the remaining 1 ½ teaspoon oil and onions.
  • Cook, stirring and reducing heat as necessary to keep them from burning, until the onions soften and start to turn golden, 10-15 minutes.
  • Add flour and garlic to the pot and cook, stirring for 1 minute.
  • Pour in Marsala and cook, stirring for 1 minute more.
  • Add broth and bring to a simmer.

1 teaspoon dried oregano

2 cups sliced fresh mushrooms
2 cans (10-3/4 ounces each) condensed golden mushroom soup, undiluted
1 package (8 ounces) reduced-fat cream cheese, cubed
3/4 cup Marsala wine
Hot cooked noodles, optional

Steps:

  • In a greased 4- or 5-qt. slow cooker, combine the water, butter, garlic salt, basil and oregano. Add chicken and mushrooms. In a large bowl, combine the soup, cream cheese and wine; pour over chicken. Cover and cook on low for 5-6 hours or until chicken is tender. Serve with noodles if desired.

1/2 pound sliced baby portobello mushrooms
2 shallots, finely chopped
3 garlic cloves, minced
1 tablespoon all-purpose flour
1/4 cup beef broth
2/3 cup Marsala wine
4 boneless skinless chicken breast halves (5 ounces each)
1 tablespoon large egg
1 tablespoon water
1 sheet frozen puff pastry, thawed
1/2 teaspoon salt
1/4 teaspoon pepper
Fresh thyme, optional

Steps:

  • In a large skillet, heat butter over medium-high heat; saute mushrooms and shallots until tender, 3-4 minutes. Add garlic; cook and stir 1 minute longer. Stir in flour until blended. Gradually stir in broth and wine; bring to a boil, stirring constantly. Reduce heat; simmer, uncovered, until slightly thickened, 2-3 minutes, stirring occasionally. Remove to a bowl; cool slightly. Refrigerate, covered, until cold., Preheat oven to 425°. Pound chicken breasts with a meat mallet to even thickness. Whisk together egg and water. On a lightly floured surface, roll pastry sheet into a 14-in. square. Cut into four 7-in. squares. Place 1 chicken breast on center of each square.
