MARSHMALLOW ICE CREAM CONES
These amazing Marshmallow Ice Cream Cones are perfect for children's birthday parties, bake sales, baby showers and other special events. Homemade marshmallow is whipped up and spooned into ice cream cones, then decorated with sprinkles, 100's and 1000's, edible glitter or sweets of your choice.

Steps:
- In a medium-size pan, add Granulated Sugar (1 cup), Gelatin Powder (1 tablespoon), and Water (3/4 cup). Stir until combined.
- Raise the temperature to medium heat, and continue gently stirring. You should feel the gelatin in the mixture starting to thicken. As the sugar can be quite hot, use a long spoon and stir carefully to prevent splashing yourself.
- Once it starts to boil, stop stirring. Bring the heat down to a simmer, and simmer for 10 minutes.
- After 10 minutes, the mixture should be clear instead of cloudy. Remove off the heat and allow to cool for 10 minutes.
- Transfer to a bowl. Add the Vanilla Extract (1 teaspoon) then Food Coloring (to taste), if desired, and then beat for 10 minutes or until the mixture becomes thick and voluminous.
- Spoon the mixture onto the Ice Cream Cone (to taste), and decorate with Sprinkles (to taste).
- Set aside for an hour or two to allow the marshmallows to firm up. If it's hot out, you can place them in the fridge to set instead. Enjoy!

- Divide 1 1/2 cups of the sugar among zip seal baggies, 1 bag for each colour you plan to use. Add a drop or two of food colouring to each bag, press most of the air out of the bag, and seal with the zipper. Gently massage the sugar around to distribute the food colouring evenly throughout the sugar, taking care to break down any clumps.
- Once the colour is evenly distributed with no clumping, transfer the sugars to individual little bowls, for dipping
- In medium saucepan, combine remaining cup of sugar, with remaining 1/4 cup of water and salt. Cook over medium heat, stirring constantly, until sugar is dissolved. Bring to a boil and continue to cook – without stirring – until mixture reaches 240°F on a candy thermometer. Remove from heat and add gelatin mixture, stirring until dissolved and completely combined, with no lumps of gelatin.

- Before beginning I recommend getting your piping bag ready and the cones ready. I found it was easiest to insert the cones into a container (baking pan) filled with rice. This kept them upright to make drying easy. You can color the marshmallow mixture but then you're restricted to only one color. Instead I used Wilton Color Mist. I treated the mist like it was spray paint and made a spray box. That just means I used a box to color the cones. It helped with containing the spray from getting all over the kitchen counter.
- Whisk together in a small bowl the gelatin and cold water. Let stand 5 minutes or until the gelatin has absorbed the liquid.
- In a medium saucepan combine sugar 1/4 cup corn syrup, water and salt. Insert a candy thermometer. Over medium high heat bring to a boil. Meanwhile, pour the remaining 1/4 cup corn syrup in a large mixing bowl of a standing mixer fitted with the whisk attachment. Heat the gelatin in the microwave until melted (about 30 seconds). Pour into the mixing bowl with the corn syrup. Turn mixer on low and keep it stirring until the sugar syrup is ready.
- When the syrup reaches 240° (soft ball stage), slowly pour the syrup into the mixer bowl, Increase the speed to medium and beat 5 minutes, then increase to medium high and beat 5 more minutes, Finally, increase to the highest speed and beat 1-2 minutes, add vanilla then beat again to 1-2 minutes. The mixture should be opaque and tripled in volume.
