TOASTED MARSHMALLOW MILKSHAKE

5 large scoops high-quality vanilla ice cream
2 tablespoons whole milk
10 normal-sized marshmallows
Whipped cream, for topping
Graham crackers, crushed, for garnish

Steps:

On a foil-lined baking sheet, toast marshmallows under a broiler, turning as necessary, until all sides are golden brown. Keep a close eye on them as they can burn rather quickly.
Just as the marshmallows are finishing up, put ice cream and milk in the blender. Combine briefly, then add toasted marshmallows and blend until incorporated. Don't overblend or it will be too melty. If this happens, adding an extra scoop of ice cream will thicken it up a bit.
Pour shake into a glass and top with some whipped cream and some crushed graham crackers. If you have some leftover marshmallows, you can toast those up and use that as a garnish as well.
This is a pretty rich shake, so a small glass for each person will be plenty. Double recipe and repeat as necessary (you should get about 12-16 ounces per batch).

Whisk 1/2 cup heavy cream (ideally extra-cold), 1/4 cup marshmallow fluff and 1/8 teaspoon vanilla extract until stiff peaks form; set aside. Combine 1 cup cold whole milk and 1/4 cup chocolate sauce in a blender. Add 3 cups chocolate ice cream; blend until smooth. Fill 4 glasses one-quarter of the way with the shake; add some marshmallow cream, then more milkshake, then cream, then milkshake. Finish with a dollop of marshmallow cream and garnish with grated bittersweet chocolate.

9 large marshmallows

11 ounces premium vanilla ice cream (about 1 3/4 packed cups)
Toasted marshmallows, for garnish (optional)

Steps:

Preheat the broiler. Line a rimmed baking sheet with parchment paper and spray with nonstick cooking spray.
Arrange the marshmallows flat on the baking sheet and place under the broiler until the tops are a deep golden brown color, about 40 seconds. Remove from the oven, carefully turn the marshmallows over, and broil until they are deep golden brown. Remove from the oven and let cool slightly.
Combine the marshmallows and milk in a blender and blend for 5 seconds. Add the ice cream and blend until smooth, about 10 seconds. Serve immediately.

9 marshmallows
1 1/2 cups chocolate ice cream
1/3 to 1/2 cup whole milk
Martha's Hot Fudge Sauce
1 scoop vanilla ice cream
1 graham cracker, plus more pieces for topping
Lightly sweetened whipped cream

Steps:

Toast 6 marshmallows over a gas flame or in a broiler for about 30 seconds on each side. Thread the remaining 3 marshmallows on a skewer.
Blend chocolate ice cream and milk until smooth and just pourable. Add toasted marshmallows and pulse to combine. Spread some hot fudge sauce on the sides of a tall glass. Add 1 scoop vanilla ice cream. Crumble in the graham cracker. Top with some hot fudge. Top with milkshake; do not fill to the top of the glass or it will overflow when toppings are added. Pipe on whipped cream, as desired.
Dip a few pieces of graham cracker in hot fudge and arrange in the whipped cream. Toast the skewered marshmallows, then arrange the skewer in the milkshake. Serve with a straw, bowl, and spoon.
