This recipe comes to us from of Mina Kerr of Wheaton, Illinois. In this no-cook relish, tart cranberries borrow a bit of sweetness from apples and oranges, while walnuts give it a sweet pesto-like consistency.

Number Of Ingredients 5

1 large apple, unpeeled, halved, and cored
1/2 navel orange, unpeeled and seeded
2 cups cranberries (thawed if frozen)
1/2 cup walnuts
1/4 cup sugar

Steps:

  • In a food processor, working with each ingredient separately, pulse apple, orange, cranberries, and walnuts until finely chopped. Transfer to a large bowl and stir in sugar.

Number Of Ingredients 5

24 ounces fresh or frozen cranberries (6 cups)
1 1/4 cups sugar
4 wide strips orange zest, plus 1 cup fresh juice
1/2 teaspoon ground cinnamon
Kosher salt

Steps:

  • In a saucepan, combine cranberries, sugar, orange zest and juice, cinnamon, 1/4 teaspoon salt, and 1/4 cup water. Bring to a boil, then reduce heat to medium and simmer, stirring occasionally, until cranberries burst and mixture thickens slightly, 12 to 15 minutes. (Sauce will thicken more as it cools.) Remove from heat; let cool completely. Refrigerate in an airtight container up to 1 week.

Some prefer the traditional approach of combining cranberries and citrus. While the more adverturous prefer less conventional accents. For best results, use fresh cranberries, - never frozen - and the best oranges you can find. Presented with the individual tastes of guests in mind, Cranberry relish served two ways can be a thoughtful addition to this year's Thanksgiving table.

Number Of Ingredients 7

1 lb fresh cranberries
1 cup sugar
1/2 cup freshly squeezed orange juice
1 orange, zest of
4 oranges, segmented pith and membranes removed
1 cup seven-pepper jelly
1 tablespoon fresh herb, such as rosemary and thyme

Steps:

  • In a medium saucepan, bring 1 cup water to a simmer. Add the cranberries, sugar, orange juice and zest. Stir until sugar is dissolved and the cranberries begin to pop, about 25 minutes.
  • Remove form heat. divide relish in half, reserving half. Add orange segments to half of the cranberries. Stir to combine.
  • Add pepper jelly and fresh herbs to the remaining half. Stir to combine. Serve in sepaate dishes.

1 bag Ocean Spray fresh cranberries (12 ounces)
1/2 navel orange, unpeeled and finely chopped
6 kumquats, finely chopped
1/2 cup chopped pecans
1/2 cup sugar
1/2 cup pomegranate seeds
3 tablespoons finely chopped candied orange peel

Steps:

  • Place cranberries in the bowl of a food processor and pulse until coarsely chopped and well combined. Transfer to a bowl and fold in orange, kumquats, pecans, sugar, pomegranate seeds, and orange peel.

1 package (12 ounces) fresh or frozen cranberries
1 cup dried cherries
1 cup sugar
2 cups water

Steps:

  • In a large saucepan, combine cranberries (no need to thaw if frozen), cherries, sugar, and water.
  • Bring to a boil; reduce heat to medium-low. Simmer until most berries have burst and liquid is syrupy, 20 to 25 minutes. Transfer to a bowl. Cover, pressing plastic wrap directly on surface of relish; refrigerate.

1 cup pomegranate juice
1/2 cup packed dark-brown sugar
Coarse salt and ground pepper
1/2 cup pomegranate seeds (optional)

Steps:

  • In a medium saucepan, heat oil over medium-high. Add shallot; cook, stirring constantly, until softened, 3 minutes. Add cranberries, pomegranate juice, and brown sugar; season with salt and pepper. Bring to a boil, then reduce to a simmer and cook, stirring occasionally, until cranberries have burst and sauce is slightly thickened, 10 minutes. Remove from heat. Stir in pomegranate seeds (if using). Let cool to room temperature before serving.
